Steps:
- For Corned Beef:
- Put the carrots and onions on the bottom of slow cooker, and put the corned beef on top. Arrange the chopped cabbage around the beef. Add the apple juice and 1 cup of water along with the contents of the spice packet. Cook on low 6 to 8 hours until the beef is tender. Remove the beef and vegetables to a platter and keep warm.
- For potatoes:
- Bring a large pot of salted water to a boil and add the potatoes. Cook until the potatoes are tender, about 12 to 15 minutes. Drain and return them to the pot.
- Add the butter, garlic, parsley, and salt, and pepper, to taste. Gently combine so that all the potatoes are evenly coated. Transfer to a serving bowl and serve with corn beef and vegetables from the slow cooker.

Equipment needed: a 1-gallon or 4-liter glass, enameled or clay jar which will be your fermentation jar a small plate that fits into the fermentation jar a small glass jar, filled with water

Steps:
- Combine all the vegetables and put them into the fermentation jar.
- The amount of vegetables should not go beyond the half way mark on the jar.
- Fill up the rest of the jar with filtered water, whey and add salt.
- Float the small plate on top and submerge it with the small jar (filled with water to keep it down).
- This way the vegetables will be kept down as we don't want them to float and get moldy.
- Leave to ferment for 1-2 weeks at room temperature.
- You will know the medley is ready when the vegetables are soft and tangy.
- To stop the fermentation process, transfer the medley to smaller jars and keep them in the fridge; they keep well for weeks.

- Combine the cabbage, carrots, garlic, butter and vegetable stock in a large pot. Season generously with salt, pepper and seasoned salt. Cover, bring to a simmer, and steam over medium-low heat until the cabbage is wilted and the carrots are cooked through, about 20 minutes.

- Heat the grill to medium and lightly oil the grates.
- Rinse the celery, remove the strings and cut into 3-4 cm (approximately 1 1/4-1 3/4-inch) long sticks. Peel, the carrots, leaving some greens attached. Blanch the celery, carrots and the beans in a pot of boiling salted water for 2-3 minutes. Rinse under cold water and drain.
- Rinse the chops and pat dry. Mix 2 tablespoons of herbs with 4-5 tablespoons of oil and rub the mixture all over the chops. Season with salt and pepper and cook on the grill on each side for 2-3 minutes.
- Heat 2 tablespoons of oil in a skillet and saute the vegetables along with the remaining herbs until tender, Season with lemon juice, salt and pepper. Sprinkle with crumbled cheese and serve with the chops.
- Garnish with fresh herbs.
