1 cup (2 sticks) butter
1 cup light brown sugar
1 cup white sugar
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 (10-ounce) bag toffee candy bits
1 cup oatmeal
1 cup sweetened flake coconut
1 cup chopped whole, skinned almonds

Steps:

  • Preheat oven to 350 degrees F.
  • Cream together the butter, sugar and vanilla. Beat the eggs slightly; then add to the butter mixture and mix well. Sift flour, salt and baking soda; then add slowly to the moist ingredients and mix thoroughly. Mix in the toffee bits, oatmeal, coconut and nuts.
  • Drop dough by the teaspoonful onto an ungreased baking sheet and bake for 15 minutes.

2 cups sifted cake flour
½ teaspoon cream of tartar
½ teaspoon baking soda
½ teaspoon salt
1 cup packed brown sugar
½ cup vegetable oil
1 egg, beaten
1 teaspoon vanilla extract
¼ cup water
1 cup chopped walnuts

Steps:

  • Sift together the flour, cream of tartar, baking soda and salt; set aside.
  • In a large bowl, cream together the sugar and oil. stir in the egg, vanilla and water; blend well. Gradually blend in the sifted ingredients. Stir in the chopped nuts last. Roll dough into 2 logs, wrap in waxed paper and chill for several hours or overnight.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Cut the dough into thin slices and place 1 to 2 inches apart onto the prepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Fast and easy when you don't have enough time to prepare cookies from scratch. If you mix them by hand, they will be flatter and more like a cookie. If you use a mixer, they will be puffier and more like cake. The cake-like version is good with a simple confectioner sugar & milk (or juice if you used an orange or lemon cake mix) glaze.

  • Drop by teaspoonfuls on an ungreased baking sheet about 2-inches apart.
  • Bake at 350°F for 8-10 minutes.

1 cup granulated sugar
1 large egg, separated
2 cups all-purpose flour
1 cup pecan halves or 1 cup walnut halves

Steps:

  • In a bowl with a mixer, beat butter with sugar until smoothly blended.
  • Beat in egg yolk.
  • Add flour to butter mixture.
  • Beat until well mixed.
  • Evenly press dough into buttered and floured 10- by 15-inch pan.
  • In a bowl with a fork, beat egg white to blend.
  • Spread over dough with pastry brush.
  • Sprinkle chopped nuts over dough, then press them in.
  • Bake in a 275° F oven until golden brown, about 45 minutes.
  • Cut while hot into 1 1/2-inch squares.
  • Use a small spatula to lift from pan.
  • Let cool.
  • Serve or store airtight up to 4 days, or freeze to store longer.

2-1/2 cups powdered orange flavored breakfast drink
1-3/4 cups powdered instant tea, unsweetened
2 to 2-1/2 cups sugar or to taste
1 package of lemonade mix (that makes 2 quarts)
1-1/2 teaspoons ground clove
1-1/2 teaspoons ground cinnamon
you can pump up the flavor by adding a little more of the spices you like. I like cinnamon,of so I add a pinch or so more and sometimes a pinch of nutmeg as well.

Steps:

  • 1. Mix the ingredients together 2. Put the mixture in a tin or jar 3. To serve - use 1 to 2 teaspoons of mix for 6 to 8 ounces of hot water. you can pump up the flavor by adding a little more of the spices you like.   • Preheat the oven to 375°F.
  • In a large bowl, mix together the flour, sugar, kosher salt, and baking powder.
