HEAVENLY MEATLOAF WITH BLUE CHEESE, MUSHROOMS, AND SPINACH

Heavenly Meatloaf with Blue Cheese, Mushrooms, and Spinach image

A slightly different recipe using a combination of ingredients, this meatloaf tastes absolutely divine! Instead of the usual ketchup, tomato paste, and brown sugar, this meatloaf is more of an 'upscale' version of the traditional. Best served with mashed potatoes and asparagus. This is my own personal creation! I substitute ground deer meat occasionally instead of beef, only because I have a freezer full, and it's organic!

2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup

Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.

VEGGIE MEATLOAF WITH MUSHROOMS AND SUN-DRIED TOMATOES

Veggie Meatloaf with Mushrooms and Sun-Dried Tomatoes image

This meatloaf is full of deep, warming flavors, including mushrooms, caramelized onions, cheese, and pungent sun-dried tomatoes. Served over a bed of baby spinach, it's a perfectly satisfying meal that includes plenty of nutritious vegetables.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h30m

Yield 4 servings

Number Of Ingredients 12

2 tablespoons butter, at room temperature
1 cup breadcrumbs, plus more for coating ramekins
4 ounces sun-dried tomatoes
1 cup warm water
2 eggs
3 tablespoons olive oil
1 yellow onion, diced
2 cloves garlic, minced
1 pound mix of portobello and cremini mushrooms, trimmed and finely chopped in a food processor
Kosher salt and freshly ground pepper
4 ounces Cheddar, grated
8 ounces baby spinach leaves, for serving

Steps:

  • 1. Preheat the oven to 350 degrees F. Butter 4 (8-ounce) ramekins and lightly coat with breadcrumbs.
  • 2. Soak the sun-dried tomatoes in the water until soft. Remove the tomatoes and coarsely chop. In a large bowl, whisk together the eggs and soaking water, and add the breadcrumbs. Set aside.
  • 3. Heat a large skillet over medium-high heat, add the olive oil, followed by the onions. Cook until brown, stirring frequently, about 10 minutes. Add the garlic, mushrooms, and sun-dried tomatoes and cook until the liquid from the mushrooms has evaporated, about 15 minutes. Stir in 1 1/2 teaspoons salt and 1 teaspoon pepper. Transfer the vegetables to a large bowl to cool.
  • 4. Add the breadcrumb mixture and the grated cheese to the vegetables and mix well with your hands. Evenly distribute the mixture among the coated ramekins. Place on a baking sheet and bake for 30 minutes. Let cool slightly, then run a knife around the edges of the ramekins.
  • 5. Toss the spinach in a hot skillet just until wilted and divide among 4 serving plates. Invert the meatloaf onto the spinach. Serve immediately.

CHEESE & SPINACH STUFFED MEATLOAF

Cheese & Spinach Stuffed Meatloaf image

This is one of the best meatloaf I have ever had and it is simple to make! A little note - You can use any mixture you like for the meatloaf itself.

Provided by Little Italian Prin

Categories     Cheese

Time 55m

Yield 4-6 serving(s)

Number Of Ingredients 12

1 lb ground beef (or any meatloaf mix you like!)
2 eggs
1/2 cup breadcrumbs
2 tablespoons italian seasoning
1/4 cup chili sauce
2 teaspoons salt
2 teaspoons pepper
2 teaspoons garlic (powder or salt)
1/4 cup chopped onion
8 -12 ounces cooper sharp cheese (I like the sharp cheeses, alter depending on your own taste)
1 frozen chopped spinach
1 (8 ounce) can tomato paste

Steps:

  • Preheat Oven to 350 degrees.
  • Mix meatloaf ingredients in a large bowl.
  • Flatten meatloaf mix on a piece of wax paper, mix should be in a rectangle shape about 1/2 thick in wax paper.
  • Cut cheese in thin slices and place on top of meatloaf mix (being sure to leave about a 1/2 inch without cheese around perimeter).
  • Microwave frozen spinach according to package information, then drain.
  • Place spinach on top of cheese making sure to leave perimeter empty.
  • Take on side of wax paper and roll meatloaf carefully, being sure not to let meatloaf crack while rolling.
  • After you have rolled the meatloaf pinch the edges to ensure that the cheese/spinach does not leak out while cooking.
  • Cover entire meatloaf with the can of tomato paste. (You may want to add some italian seasoning to the tomato paste as it is slightly bland).
  • Bake covered for about 35 - 45 minutes or until desired temperature.

CHEESE AND MUSHROOM-STUFFED MEATLOAF

Cheese and Mushroom-Stuffed Meatloaf image

My family's favourite meatloaf (OK, sometimes my little one picks out the mushrooms). This one is really good.

Provided by evelynathens

Categories     Cheese

Time 1h35m

Yield 6 serving(s)

Number Of Ingredients 14

2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
10 ounces sliced mushrooms
1 1/2 lbs ground beef
2/3 cup fresh breadcrumb
1/2 cup minced parsley
1/4 cup ketchup
1 egg, beaten to blend
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon dried sage, crumbled
1 1/2 cups grated cheddar cheese

Steps:

  • Heat oil in skillet over medium heat.
  • Add onion and sauté until translucent, about 4 minutes.
  • Add garlic and mushrooms.
  • Cook until mushrooms are golden-brown and liquid evaporates, about 8-9 minutes.
  • Cool.
  • Preheat oven to 350 degrees F (175C).
  • Mix beef and everything else but cheese.
  • Turn out onto large square of plastic wrap.
  • Pat into 9 x 12 inch rectangle.
  • Spread mushroom filling over rectangle, leaving a ½ inch border on all sides.
  • Cover mushrooms with cheese.
  • Starting at one short end, roll up jelly roll fashion. Take time and lovingly pat it into a compact shape to fit into your loaf pan - this will ensure that it doesn't crack as it bakes.
  • Arrange seam side down in 9 x 5 inch loaf pan.
  • (Can be prepared up to 6 hours ahead. Cover and refrigerate) Bake until loaf shrinks from sides of pan and browns, about 1 hour.
  • Pour off any drippings.
  • Gently turn out loaf and let stand 10 minutes before slicing.

BLUE CHEESE, SPINACH MEAT LOAF MUFFINS

Blue Cheese, Spinach Meat Loaf Muffins image

Moist, flavorful and absolutely one of the best meat loaf recipes yet! Using a large muffin pan allows the mini meat muffins to cook faster and makes portion sizing easier. I like to serve this with sweet potatoes or butternut squash. I think the mini meat loaves taste great the next day as they are easy to put away and re-heat. Try making a meat loaf sandwich out of them too.
