AUNT JUNE'S OLD FASHIONED FUDGE
How to make fudge the old fashioned way: just minutes of your time plus a few dollars of pantry ingredients gives you a candy shop quality homemade chocolate fudge perfect for gifting (or keeping!)

Steps:
- Combine all ingredients except butter and vanilla. In a 2 quart saucepan, combine the sugar, half and half, cocoa, salt, and corn syrup. Mix well with a whisk and bring to a boil over medium-low heat. While the fudge is cooking, butter a plate or baking dish for pouring the mixture into later.
- Heat until the mixture reaches 240 degrees. Let the fudge cook until it reaches 240 degrees, checked with a candy thermometer or instant-read thermometer. Don't stir during the cooking process. Once the temperature is reached, immediately remove the pan from the heat.
- Place butter and vanilla on top and allow to cool. Place the butter and vanilla on top of the fudge and allow it to cool. Do not mix or disturb the pan. Let it cool about. 20 minutes until the side of the pan is warm but not hot to the touch.
- Mix with a hand mixer until fudge begins to firm up. Using a hand mixer on medium-low, beat the fudge for 1-3 minutes until it just begins to firm up and lose its shine.
- Quickly pour into a buttered dish, cool, and cut. Once the fudge changes texture, immediately pour it into a dish to set. Work quickly. It if is not pourable, just scoop it out and flatten in the best you can. Allow it to cool for 20 minutes and cut into one-inch squares.

Steps:
- In large heavy pan on medium heat mix 5 cups granulated sugar, salt and evaporated milk.
- Stir and cook till soft ball stage. (I kept a glass of water by the pan and dropped the syrup occasionally into the glass until it formed a ball)
- Remove from burner and add the stick of butter.
- Scant tablespoon vanilla.
- And an 18 ounce jar peanut butter.
- Stir till fully mixed.
- Pour into 2 greased 8x8x2 pan or one 13 x 9 inch casserole dish lined with parchment.
- Cover casserole and set in fridge until thoroughly chilled and set.
- Cut into one inch sections

Steps:
- Line an 8-inch square pan with foil, allowing foil to hang over edges.
- In the top of a double boiler set over simmering, not boiling, water, heat chocolate, stirring frequently, until melted.
- Remove from heat; cool slightly.
- In a large mixing bowl, using an electric mixer set on medium speed, beat cream cheese until smooth.
- Add vanilla and salt.
- Gradually add confectioners' sugar, beating until smooth.
- Add the melted chocolate to the cream cheese mixture, beating until combined.
- Spread mixture in prepared pan; smooth top.
- Chill until firm, about 1 hour.
- To remove fudge from pan, lift up edges of foil and invert fudge onto a cutting board; carefully peel off foil.
- Cut fudge into squares; store in refrigerator until ready to use.
- Note: This fudge can be wrapped tightly in plastic wrap and frozen for up to 1 year.

HEAVENLY TOFFEE CHIP FUDGE
From Land O'Lakes. ***Edited 12/22/2006 - I had not made this recipe and after the one reviewer said it was dry, decided to make it tonight. I decreased the powdered sugar to 2 2/3 cups and it turned out wonderful. My husband and children loved it. It is not dry or crumbly at all --as you can see from my pictures. I refrigerated the fudge for 1 1/2 hours and then cut it. I don't know if using less powdered sugar was the key. It might be that if you refrigerate it for too long, it is harder to cut. Please give it a try--it is very creamy and the toffee pieces give it a nice crunch!

- In a large microwave-safe mixer bowl, combine the butter, milk and chocolate chips.
- Microwave on HIGH for 1-1/2 to 2 minutes or until butter and chocolate chips are melted.
- Stir in confectioners' sugar and vanilla; beat at medium speed, scraping bowl often, until smooth (2 to 3 minutes).
- By hand, stir in 1/2 cup toffee chips. Spread in a buttered 8-inch square baking pan.
- Sprinkle 2 tablespoons toffee chips over top; gently press into fudge.
- Cover; refrigerate until firm (1 to 1-1/2 hours).
- Cut into squares.
- Store refrigerated in airtight container.
