- In a large bowl, combine the refried beans, chilies, 1 teaspoon chili powder and 1 teaspoon cumin. Spread over a 14-in. platter. In another bowl, mash the avocados; add 1/4 cup onion, lemon juice, sugar, celery salt and cayenne. Spread over the bean layer., Combine 1 cup salsa, sour cream, mayonnaise, paprika, garlic powder, pepper sauce, oregano and remaining onion, cumin and chili powder. Spread over avocado layer; sprinkle with Monterey Jack and cheddar cheese., In a large bowl, beat the cream cheese until smooth. Add the remaining salsa. Spread over cheeses. Sprinkle with the green onions and tomatoes. Cover and refrigerate until serving. Serve with chips or vegetables.

HEARTY TACO CHILI
Steps:
- In a large skillet, cook and crumble beef over medium-high heat until no longer pink, 8-10 minutes. Using a slotted spoon, transfer beef to a 5-qt. slow cooker., Rinse and drain beans and hominy. Add to beef, along with canned tomatoes and green chilies, tomato sauce, onion, the dressing and seasoning mixes and pepper. Puree green chilies and remaining diced tomatoes in a covered blender until smooth; stir into beef mixture., Cook, covered, on low until flavors are blended, 6-8 hours. Serve with toppings as desired., Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

HEARTY TACO DIP
This is my version of a wonderful rich and dip that is really like a meal. Served with tortilla chips, it really satisfies!

Steps:
- 1. Cook instant rice according to package directions, set aside.
- 2. Brown ground beef until fully cooked; drain fat from meat. Add tomatoes, sour cream, taco seasoning mix, and cheese. Stir to combine. Add rice and stir. You can also add 1/2-1 can re-fried beans. If it is a bit too dry, you can add another can of tomatoes or some water to your liking.
- 3. Heat thoroughly and serve warm with tortilla chips. You can play with the ingredient amounts and make it just they way your family likes it. It's very good and hearty.Enjoy!

- First, you want to cook the onion and the beef. Heat the olive oil in a skillet over medium heat. Once hot, add the onion saute for 2 minutes, then add the ground beef and half of the taco seasoning. (Save the rest of the taco seasoning, you will need it). Stir the meat to break it up and to evenly distribute the taco seasoning. Once the beef has browned, set it aside.
- Pour the refried beans into an 8 inch square baking dish (or similar). Spread into an even layer.
- In a small bowl, mix the cream cheese and the remaining taco seasoning together. Then spread over the refried beans.
