This healthy bread is moist and bursting with fresh blueberries. Wonderful for breakfast or an anytime of the day snack.

2 cups all-purpose flour
1 cup quick-cooking rolled oats
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups skim milk
1/3 cup oil
2 teaspoons vanilla
1 teaspoon grated lemon, rind of
2 eggs, slightly beaten
1 cup blueberries

Steps:

  • Heat oven to 350 degrees. Grease bottom only of 9x5 inch loaf pan.
  • Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, rolled oats, sugar, baking powder, baking soda and salt; mix well.
  • In small bowl, combine milk, oil, vanilla, lemon peel and eggs; blend well. Add to dry ingredients; stir just until dry ingredients are moistened.
  • Gently fold in blueberries. Pour into greased pan.
  • Bake at 350 for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely. Wrap tightly and store in refrigerator.

1 cup (150g) blueberries and raspberries (washed and pat dried)
1 3/4 cups (220g) all-purpose flour
1/2 cup (45g) old fashioned oats
a pinch of sea salt
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla extract
3/4 cup (180ml) raw honey
1/4 cup (60g) coconut butter
2 eggs
1/3 cup (80ml) buttermilk
honey, fresh blueberries, Greek yogurt, fresh mint

Steps:

  • Heat the oven to 160C/320°F. Line a loaf pan with parchment paper.
  • Toss the berries with 2 Tbsp flour. This will prevent them from setting on the bottom of the pan and keep them scattered throughout the batter.
  • In a large bowl, mix together the remaining flour, oats, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, whisk together the eggs, buttermilk, coconut butter, honey, and vanilla.
  • Add the egg mixture to the flour and oats mixture, and whisk until there's no more dry flour.
  • Gently fold the berries into the batter.
  • Pour the batter into your prepared loaf pan and bake for 45-50 minutes. The loaf is done when the top is raised and dry, and when a toothpick inserted into the center of the cake comes out clean.
  • Let it cool on a rack for at least 20 minutes before slicing.

3/4 cup milk
1/2 cup vegetable oil
2 eggs
2 1/4 cups Gold Medal™ all-purpose flour
1 cup quick-cooking or old-fashioned oats
3 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup fresh or Cascadian Farm® organic frozen blueberries (thawed and drained)

Steps:

  • Heat oven to 350°F. Grease bottom only of 8- or 9-inch loaf pan.
  • In large bowl, mix brown sugar, milk, oil and eggs with spoon. Stir in remaining ingredients except blueberries; beat 30 seconds. Fold in blueberries. Pour into pan. Sprinkle with additional oats if desired.
  • Bake 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan to wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

1 cup blueberries

Steps:

  • Preheat oven to 350 degrees. Grease and flour a loaf pan.
  • In a large bowl mix flour, sugar, salt, baking powder, and oats.
  • In a medium bowl, mash the bananas. Beat in the eggs and oil. Add to dry ingredients and mix to combine. Fold in nuts and blueberries.
