This tangy, honey-sweetened lemon blueberry frozen yogurt is a delightful summer treat. Use full fat yogurt for the best texture, and buy organic berries and lemon if you can.

1 pint (2 1/2 cups) blueberries, fresh or frozen
2/3 cup honey
1 small lemon, to be zested and juiced
1/4 teaspoon salt
2 cups full fat yogurt, chilled

Steps:

  • Pick through your blueberries and discard any bad berries, stems or debris. In a medium saucepan, combine the blueberries, honey, 1/2 teaspoon lemon zest, 2 tablespoons lemon juice and salt. Bring the mixture to a simmer over medium heat. Reduce the heat to a gentle simmer, then cook, stirring occasionally, for 15 minutes.
  • Optional step: For a smooth consistency, strain the mixture through a fine mesh colander into a bowl. Mash the blueberries with the back of a large spoon in order to extract as much liquid as possible, then discard the mashed blueberries.
  • Refrigerate the blueberry mixture until it is totally and completely chilled. You can speed up this process by placing it in the freezer, stirring every 10 minutes or so, for about 45 minutes.
  • Mix together your chilled blueberry mixture and chilled yogurt, then freeze the mixture in your ice cream maker according to your manufacturer's instructions. Serve immediately for a soft serve texture, or transfer the frozen yogurt to a freezer-safe container and freeze for several hours for a scoopable consistency.

1/2 cup old-fashioned or quick-cooking oats
1/2 cup chopped pecans
1/4 cup packed brown sugar
1/2 cup butter, melted
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
3/4 cup granulated sugar
2 cups strawberry low-fat Greek-style yogurt
1 cup thawed COOL WHIP Whipped Topping
1-1/2 cups mixed fresh berries (blueberries, raspberries, sliced strawberries)

Steps:

  • Heat oven to 350ºF.
  • Combine first 5 ingredients; spread onto rimmed baking sheet. Bake 20 min. or until crisp. Cool completely.
  • Mix cream cheese and granulated sugar in medium bowl until blended; stir in yogurt.
  • Line 9x5-inch loaf pan with parchment, with ends of parchment extending over sides. Crumble oat mixture. Reserve 1/2 cup; sprinkle remaining onto bottom of prepared pan. Top with cream cheese mixture. Freeze 1 hour. Cover with COOL WHIP.
  • Freeze 3 hours or until firm. Use parchment handles to remove dessert from pan. Top with berries and reserved oat mixture.

3/4 cup whole milk (or you can use 2%or 1%, etc. for even lighter ice cream)
1/3 cup granulated sugar
4 cups low-fat vanilla yogurt (or non-fat)
2 cups frozen unsweetened mixed berries, thawed and pureed (if you want HUGE pieces of strawberries in your ice cream, don't puree it!)
1 teaspoon vanilla extract

Steps:

  • In a medium bowl, mix the milk and sugar until the sugar is dissolved (about 1 to 2 minutes on low speed).
  • Stir in the yogurt, berry puree and extract.
  • Freeze according to manufacturers instructions.
  • NOTE: the ice cream gets really hard if its put into a container in the freezer. I put it in a plastic bowl. I had to defrost it in the microwave for a little while before I could dig into it. Anyone know a better container I could put it in? I was thinking an empty ice cream container that I'd already used all the ice cream from?

100g gingernut biscuits
405g can light condensed milk
250g red berries (we used strawberries, raspberries and redcurrants)
500g pot 0% fat natural Greek yogurt
250g purple berries (we used blueberries, blackberries and blackcurrants)
8 paper cups
8 wooden lolly sticks

Steps:

  • Place the biscuits in a food processor and blitz into crumbs. Add 2 tbsp condensed milk and blend again until the crumbs start to clump together. Divide the biscuit crumbs between 8 paper cups, pressing down with the back of a spoon. Make sure you scrape out every last crumb, then you won't have to wash the processor before the next step.
  • Roughly chop any large berries. Put half the red berries, half the remaining condensed milk, and half the yogurt in the food processor and blend until smooth. Remove the blade from the processor and stir through the remaining chopped red berries. Divide the mixture between 4 of the paper cups. Repeat with the purple berries and remaining ingredients.
  • Place a lolly stick into each cup, pushing down into the biscuit base to help it stand up straight. Freeze for at least 4 hrs before serving. To remove the lollies from the cups, tip upside down, and gentle squeeze the cup until the lolly slips out.
