Quick Homemade Applesauce - No Sugar Added image

A quick, easy homemade applesauce recipe that I served with potato latkes this year. It has no added sugar, which makes it a better option for diabetics and low-carb people and others who avoid cane sugar. But if you prefer a sweeter sauce, add 1/2 cup of sugar. I recommend using 1/2 sweet apples (I like Braeburn) and 1/2 tart apples (Granny Smith, for example). Don't leave out the salt, it's a necessary ingredient for a good applesauce!

3 lbs apples
1 teaspoon cinnamon
1 pinch nutmeg
1 1/2 cups water
2 thin lemon slices
1/4 teaspoon salt

Steps:

  • Peel and core apples (I prefer to leave the skin on a few of them because I like the taste and texture). Cut apples into approximately 1 inch cubes.
  • Add all ingredients to pot, and turn heat on high. Bring to a boil, then cover and reduce heat to low. Simmer for 20 minutes or until the apples have softened significantly.
  • Stir frequently, making sure that the apples are not sticking to the bottom of the pot. Add more water if necessary. Remove lemon slices.
  • Mash with a potato masher or use a food mill for a smoother consistency. Serve warm or at room temperature.

Steps:

  • In a bowl, mix together all the dry ingredients.
  • Add milk, applesauce, and vanilla.
  • Use griddle or skillet, spraying with non-stick spray to help prevent sticking.
  • Heat pan over medium heat.
  • Pour 1/8 cup of pancake mix onto the pan for each pancake.
  • Heat until the pancakes start to bubble. Flip the pancake and continue to heat until both sides are golden brown.
  • They can be served with fresh fruit on top, butter and syrup or can be eaten plain.

Steps:

  • Whisk eggs lightly in a large bowl. Add applesauce and vanilla extract; mix to combine.
  • Combine almond flour, tapioca flour, cinnamon, baking soda, and salt in a separate bowl. Add to egg mixture; mix until just combined. Add water until batter is desired thickness. Set batter aside to rest for 15 minutes.
  • Melt coconut oil on a griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

1 cup organic unsweetened applesauce
2 tablespoons organic dark agave nectar
1 teaspoon cinnamon (optional)
1 1/2 cups frozen unsweetened strawberries (or other berries)
3 tablespoons agave nectar
1/2 cup applesauce
1 teaspoon earth balance vegan margarine (or other non-hydrogenated margarine)

Steps:

  • Pancakes: Mix all ingredients in large mixing bowl. Heat pan on medium-high and spray with organic, low-calorie non-stick spray. Use 2 heaping tablespoons of batter to make each pancake. While first side of pancakes are cooking, add desired items (optional, such as vegan chocolate chips, fruit, nuts, etc; [will change calorie count]). Flip pancakes when firm to cook other side.   • Add all of the ingredients to a blender and blend on high until completely smooth, about 30 seconds to 1 minute. Let the batter sit in your blender while you heat your pan up. If batter is WAY too thick, you may need to add a few extra tablespoons of milk to the blender.
  • Lightly coat a griddle with coconut oil, vegan butter or olive oil and place over a medium heat. Once the pan is hot, add about 1/3 cup of the batter to the griddle for each pancake and cook for 2-4 minutes until pancakes slightly puff up and you see a few bubbles along the edges.
  • Flip cakes and cook until golden brown on underside. If you find that pancakes are browning too quickly, then you need to lower the heat. I normally start on medium heat, then reduce to medium low later so that my pancakes don't burn. If at any point your griddle starts smoking, it means your pan is too hot. Wipe skillet clean and repeat with more oil and remaining batter. Makes 6 pancakes total. Serves 3, 2 pancakes each.
