Healthy Broccoli Cheese Soup image

The most amazing lightened up broccoli cheese soup made with lots of veggies and a creamy cheddar cheese broth. Easy to make and freezer friendly.

2 tsp. olive oil
1 onion, chopped
1 carrot, peeled and chopped
1 celery rib, chopped
4 cloves garlic, minced
20 oz. frozen broccoli florets
5 cups vegetable broth
1/2 cup canned evaporated nonfat milk
1 cup sharp cheddar cheese, shredded
Salt and pepper

Steps:

  • Heat the olive oil over medium heat. Add the onion, carrot, celery, and garlic. Cook for 5 minutes until tender. Add the broccoli and broth. Bring to a simmer and cook for 10 minutes until broccoli is tender.
  • Turn off the heat and stir in the milk and cheese. Stir continuously until cheese melts.
  • Blend half of the soup and add it back to the pot. This creates a creamier consistency.
  • Taste and season with salt and pepper. Serve immediately. If storing in the freezer, let cool completely before freezing.

2 tablespoons butter
1 onion, chopped
2 tablespoons all-purpose flour
1 1/2 cups chicken stock
1 (750 g) package frozen chopped broccoli or 3 cups fresh broccoli
1/4 teaspoon pepper
1 1/2 cups milk
1 1/2 cups grated cheddar cheese
1/4 teaspoon Tabasco sauce
2 tablespoons fresh parsley or 2 tablespoons chives
1 red pepper, chopped (optional)

Steps:

  • Melt butter. Cook onion until soft but not brown.
  • Stir in flour and cook 3 minutes.
  • Whisk in stock and broccoli.
  • Bring to boil.
  • Reduce heat and simmer 5 to 10 minutes.
  • Puree mixture (in food processor or blender).
  • Return to heat, add pepper, milk, cheese, and Tabasco sauce.
  • Heat thoroughly but do not boil.
  • Taste and adjust seasoning if necessary.
  • If you are using fresh broccoli, trim off tough stems, chop and cook 15 minutes before putting in blender.

This is my standard broccoli cheese soup. My kids and friends love it. Healthy and delicious. I haven't had better out. I'm not saying I wouldn't like the taste with cream, but this is delicious and good for you.The amount of corn starch is approximate. Make the soup as thick as you like. Use flour if you are out of corn starch. I have done both. If you want to simmer some boneless, skinless chicken breasts with your vegetables, I have done that before when I was out of broth. Simmer them about 20 minutes after it has come to a boil. You don't have to puree the veggies. Dice the cooked chicken and add it in. It's delicious.You could also use chicken boullion. If you like a sharper cheese flavor, I have added a few cups of grated sharp cheese. We like it both ways.

3 (16 ounce) bags frozen broccoli florets, alternately
3 bunches broccoli, heads only
1 quart chicken broth
8 cups 2% low-fat milk
2 lbs Velveeta reduced fat cheese product, diced
1 onion, diced
2 carrots, sliced
3 stalks celery, sliced
8 tablespoons cornstarch
salt

Steps:

  • Simmer onion, carrots, and celery in broth for 15 minutes or until tender. Puree.
  • Add broccoli heads or frozen broccoli, cover and cook 5 minutes or until broccoli is tender.
  • Add 7 cups milk and return to boil and reduce to simmer. Dissolve cornstarch in 1/2 cup milk or so, and, while stirring, return to simmer.
  • Repeat with extra corn starch if you want soup thicker.
  • Add velveeta. Stir until melted.
  • Add salt to taste.
  • Serve with crusty, homeade bread!

Also works well with cauliflower same prep and ingredients just with cauliflower.The main idea is tastes good and is easy to make.

colby-monterey jack cheese, 1 cup
milk, 1/2 cup

  • 1. steam broccoli/cauliflower about 1/2 hour.
  • 2. while broccoli/cauliflower is steaming mix milk and cheese and heat in a saucepan for about 20 min keep warm while broccoli/cauliflower is steaming.
  • 3 combine ingredients add a little salt and serve.

1 (1 pound) loaf processed cheese food, cubed

⅔ cup cornstarch
1 cup water

Steps:

  • In a stockpot, melt butter over medium heat. Cook onion in butter until softened. Stir in broccoli, and cover with chicken broth. Simmer until broccoli is tender, 10 to 15 minutes.
  • Reduce heat, and stir in cheese cubes until melted. Mix in milk and garlic powder.
  • In a small bowl, stir cornstarch into water until dissolved. Stir into soup; cook, stirring frequently, until thick.
