HCG Diet Phase 2 Recipe: BBQ Chicken Salad image

This recipe is safe for Phase 2 of the HCG Diet and counts as 1 meat serving, 1 vegetable serving, and 1 'carb' serving. This recipe requires the Simple Girl Carolina Kick BBQ Sauce. This sauce is sugar-free, oil-free, sweetened with stevia and was specifically formulated for all phases of the HCG Diet. This sauce is amazing and really 'makes' this recipe!

100 grams (3.5 ounces) boneless, skinless chicken breast
1 tsp sea salt
2 cups lettuce
2 tbsp Simple Girl Carolina Kick BBQ Sauce
1 grissini breadstick

Steps:

  • Trim any visible fat from the chicken meat.
  • Place the chicken in a large pot of boiling, salted water and boil until completely cooked (internal temperature of 165 degrees F).
  • Remove chicken from water, set aside to cool.
  • Cut the lettuce into bite-sized pieces (about ¼-inch). You may use any type of lettuce. We used romaine lettuce and it turned out amazing. Wash and dry your lettuce before use, especially if you do not buy organic.
  • Once the chicken is cooled, put on gloves and shred the chicken using your hands to pull the chicken apart.
  • Place the chicken in a small bowl with the Simple Girl Carolina Kick BBQ Sauce. Toss until fully coated. Set aside.
  • Add the lettuce to the chicken mixture, toss once more until the lettuce is covered in the sauce.
  • Transfer to a serving dish and top with more sauce (if desired).
  • Serve with any flavor of grissini breadstick (original, garlic, or multi-grain). Click here to see what brand we recommend.

I found this recipe online and tried it. It was really good!! My family even loved it!! =) You don't have to be on HCG to enjoy this!! =) The ingredients can also be thrown into a slow cooker on low in the morning, for a great meal at dinnertime. =)

Number Of Ingredients 11

21 ounces chicken breasts (6 pieces, 3.5 oz each)
3 tablespoons chicken broth, for sauteing the chicken in
2 teaspoons salt, plus more to taste
1 teaspoon black pepper, freshly ground, plus more to taste
1 onion, chopped
3 garlic cloves, finely chopped
1 1/2 cups chicken broth
1 (28 ounce) can tomatoes, Diced, with juice
3 tablespoons capers, drained
1 1/2 teaspoons oregano leaves, dried
1/8-1/4 cup basil leaves, coarsely chopped

Steps:

  • In a large heavy saute pan, heat the 3 tablespoons of Chicken broth over a medium-high flame. Add the chicken pieces (if doing the HCG diet, be sure there are 6 pieces weighing only 3.5 oz each) to the pan and saute just until brown, about 5 minutes per side. Add more broth as it evaporates, if needed. If all the chicken does not fit in the pan, saute in 2 batches or more.
  • Transfer the chicken to a plate and set aside. Add the onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes.
  • Season with salt and pepper. Add the remaining broth and simmer until reduced by half, about 3 minutes.
  • Add the tomatoes with their juice, capers, oregano and about half of the basil. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over low-medium heat until the chicken is just cooked through.
  • Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slightly, about 3 minutes. Spoon off any excess fat from atop the sauce.
  • Spoon the sauce over the chicken, then sprinkle with the remaining basil and serve.

A great way to use celery in a HCG friendly recipe. I use this recipe ALOT, its almost addicting. You won't even miss the mayo! And you can save the other half of your apple for dessert.

3 1/2 ounces cooked chicken, diced
3 -4 stalks celery, diced
1/2 apple, diced
1/2 lemon, juiced
1 tablespoon apple cider vinegar
0.5 (1 g) packet stevia
salt & pepper, to taste
1 dash cinnamon
1 dash nutmeg

Steps:

  • Make the dressing is a medium bowl and mix well.
  • Add the diced chicken, celery and apple. Mix well.
  • Eat now or marinate overnight and eat for lunch or dinner the next day.

MUSTARD CHICKEN AND CABBAGE - HCG PHASE 2

Came up with this for something different for dinner during phase 2 of the diet. Technically soy sauce isnt in the protocol because it does contain a very small amount of sugar. I didnt mind adding such a small amount, but if you are stricly following the protocol you can substitute Bragg's Amino's for the soy sauce. (I just didnt want to drive to the nearest big city to find a health food store that sells Bragg's) This site lists total sugar in this recipe as 4.5 grams, however the soy is the only thing that has even a trace of sugar in it, and my bottle of Kikkoman Low Sodium says 1gram total carb for a full tbsp of soy sauce, so this site is incorrect (as it does average for national brands)

2 cups cabbage, shredded (approx 1/8th of a small head)
1 teaspoon brown mustard
1 teaspoon low sodium soy sauce
garlic powder
salt
pepper

Steps:

  • Cube the chicken into bite sized pieces, add to a hot pan. Cook for 2 mins and add a 1/4 cup water to loose from bottom of pan. Turn and immediately add the cabbage. Stir frequently until cabbage starts to wilt and chicken is cooked through.
  • Add mustard, soy sauce, garlic powder, salt and pepper.
  • Pour all into a bowl and enjoy.

1/4 teaspoon garlic powder

2 tablespoons fresh lemon juice

Steps:

  • Preheat oven to 350.
  • Combine Melba crumbs with spices. Set aside.
  • Mix broth and lemon juice in small bowl, dip chicken in this mixture and coat chicken with herb mixture.
  • Bake for 20 minutes, until chicken is cooked through.
  • Add remaining liquid, a little at a time, if chicken dries out while baking.
