SKINNY DIVINITY LATTE
A sugar-free tasty coffee drink. From Torani. I use a microwave milk frother instead of heating milk in pan. Can be made with espresso or brewed coffee. Instructions included for both.

- In a small saucepan, heat milk and syrups together, whisking until frothy.
- Pour into a tall glass (reserving some foam) and add brewed espresso.
- Spoon a layer of foamed milk over top.
- To make with brewed coffee: Use 1/2 to 1 cup hot brewed coffee (I use a French Press Pot) and adjust milk amount to taste.

- Cook the vinegar, sugar, syrup, and water to a thread stage.
- Beat the egg whites.
- Pour the cooked mixture over the egg whites.
- Beat it.
- Add nuts.
- Drop by spoonfuls on waxed paper.
- NOTES: Humidity will affect your divinity so don't cook if it's raining outside.

Steps:
- Place sugar,corn syrup, and water in a heavy saucepan. Cook and stir over medium heat to hard ball stage (248F on candy therm.). Remove from heat and let stand until temp drops to 220F, do not stir.
- Place eggs whites in mixer bowl. Attach bowl and wire whip to mixer. Turn to speed 8 and whip until soft peaks form, about 1 minute. Gradually add syrup in a fine stream and whip about 2 1/2 minutes longer.
- Turn to speed 4. Add almond extract and whip until mixture starts to become dry, 20-25 minutes. Turn to Stir Speed and add walnuts, mix just until blended.
- Drop mixture from tablespoo onto waxed paper or greased baking sheet to form patties.Let harden.

Steps:
- In a 2 quart saucepan combine sugar, corn syrup, water, and salt.
- Cook to hardball stage, (260 degrees), stirring only until sugar dissolves.
- Meanwhile, as temperature of syrup reaches 250 degrees, beat egg white till stiff peaks form.
- When syrup reaches 260 degrees, very gradually add the syrup to egg whites, beating at high speed with electric mixer.
- Add vanilla and beat until candy holds its shape, 4-5 minutes.
- Stir in the chopped nuts or cherries, if desired.
- Quickly drop candy from a teaspoon onto waxed paper, swirling the top of each piece.
- Let cool.
