1 tablespoon butter
3/4 cup frozen shredded potatoes
Kosher salt and freshly ground black pepper

Steps:

  • Heat the oil and butter on a griddle over medium-high heat until the butter is melted. Add the shredded potatoes and pack them down tightly into a patty. Cover and cook just until the perimeters start to get golden, about 5 minutes. Use a spatula to press the top down. Season with salt and pepper and flip. Cook, uncovered, until the bottom is golden and crispy, another 3 to 5 minutes.

4 large boneless skinless chicken breasts
7 ounces frozen mixed vegetables, thawed (antioxidant blend of carrots, broccoli, bell peppers, with garlic oil)
20 ounces Simply Potatoes® Shredded Hash Browns, thawed
2 cups shredded triple cheddar cheese, divided use
1 1/2 tablespoons seasoning salt

Steps:

  • Preheat oven to 375 degrees F. Rinse chicken breasts and pat dry. Remove any excess fat.
  • Using a sharp knife, cut a large pocket into the chicken breasts, cutting horizontally and lengthwise into the chicken, but not cutting through the back or sides.
  • Place the vegetables into a small bowl, add 1/2 cup of cheese and toss to mix. Divide mixture into 4 equal portions and put into the chicken pockets.
  • Use seasoned salt to sprinkle evenly over both sides of the chicken pieces.
  • In a small bowl, mix the Simply Potatoes® Shredded Hash Browns with 1 cup cheese. Use half of the mix to cover the bottom of a baking dish large enough to accommodate the 4 chicken breasts with no excess space between or around them. Lay the chicken breasts on top of the hash browns, then, using the remaining hash brown mixture, patting equal amounts onto the tops of each piece of chicken.
  • Bake 45 minutes, covering loosely with foil tent during the last 10-12 minutes, or when nicely browned. Turn oven to broil, remove foil, sprinkle remaining 1/2 cup cheese over the top and broil until cheese is melted, about 3-4 minutes. Serve either 1 piece each to 4 people, or cut in half and serve to 8.

3 cups Kraft Shredded Sharp Cheddar Cheese, divided (reserve 1 cup for topping)
1 lb breakfast sausage (I prefer hot)
8 ounces sour cream
1 teaspoon cajun seasoning

Steps:

  • Brown the sauage and drain. Mix allingredients together, except for the reserved cheese). Pour all into a 9 x 9 baking dish and cook @ 350 for 45 mins or until nice and bubbly. This can be made the night before and refrigerated, covered, then let come to room temp and bake.

We make this for dinner quite often, along with a slice of toast with butter and garlic.

8 slices bacon, cooked and crumbled
1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
1 -1 1/2 cup shredded cheddar cheese
pepper or garlic salt
sour cream or salsa

Steps:

  • Fry your bacon until crisp. Remove from pan (leave a teaspoon of bacon grease in the pan to fry your hash browns in), let cool, then crumble.
  • Fry hash browns in same skillet that bacon was fried in - cook until done, flipping when browned on the first side. Once browned on the second side, flip again and put your crumbled bacon on top, then top that with shredded cheddar cheese. Cover pan, cook until cheese is melted. Remove from pan, top with sour cream or salsa. Enjoy!

1/2 cup olive oil or 1/2 cup melted butter
1 ounce green onion dip mix
10 large eggs
3 cups whole ricotta cheese

Steps:

  • Place oven rack in the center and preheat to 350 degrees.
  • Mix potatoes, one half onion dip and olive oil in a large bowl. Press it in bottom and sides of a 2 quart baking dish. Bake 15 minutes in preheated oven.
  • In a lg. bowl mix ricotta, eggs and second half onion dip well.

  • Spray a 11/7 baking dish with cooking spray. Spread hash browns evenly on bottom of dish. Place previously cooked and drained sausage on top of potatoes. Sprinkle cheddar cheese on top of sausage. In a mixing bowl whisk the eggs and heavy cream together. Pour over dish. Bake in a pre-heated 425 degree oven for 15 minutes.
