- In a nonstick skillet, heat oil over medium heat; saute onion and green pepper until tender. Stir in beans; heat through. , Spoon about 1/2 cup of vegetable mixture off center on each tortilla. Sprinkle with the cheese, tomato and lettuce. Fold sides and ends over filling and roll up. Serve with optional toppings as desired.

A phenomenal amount of flavor and healthy to boot! Ease up on (or omit entirely) the jalapeno and cayenne if you're a lightweight like me. In fact, I just use one 4-oz can of mild diced green chilies instead.

- Saute onion in oil until soft. Add chilies and corn. Stir for 1-2 minutes.
- Add taco seasoning and black beans. Add a salsa and heat through.
- I like to mash slightly before serving.

BLACK BEAN BREAKFAST BURRITOS
Wow. All I can say is this is the most flavorful and delicious breakfast burrito I've ever had. I didn't have any cheese or sour cream in the house, and even without it I absolutely loved this. I used small corn tortillas in place of flour tortillas, and I chopped up the potato instead of grating and left the skin on. This is a definite make-again recipe, and that doesn't happen very often for me. If you want to make these for dinner try adding chopped red pepper and/or corn and some crumbled chorizo sausauge with the onion. - If you like, wrap your tortillas in foil and put them in a 300 degree oven to warm as you make the filling.
- In a heavy skillet, heat a drizzle of oil over medium-high heat.
- Saute the onion and potato for about 5 minutes, until soft and starting to turn golden.
- Add the beans, salsa, chili powder, salt, and pepper and cook for a few more minutes, slightly smushing some of the beans with the back of your spoon, until heated through.
- Transfer the mixture to a bowl or push it aside in the skillet, add a little more oil, and crack in the eggs.
- Stir the eggs around with a spoon or spatula to scramble them.
- Divide the bean mixture among the warmed tortillas, spreading it down the middle and leaving space on the sides and at both ends.
- Top with scrambled egg, cheese, avocado or guacamole, and some fresh cilantro.
- Fold over one long side to cover, fold over both short ends, then roll the whole thing over to close up into a package.
- Serve warm, with extra salsa and/or sour cream.

- In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add beans and salsa; mix well. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Warm the tortillas; spoon 1/4 cup of the beef mixture off-center on each. Sprinkle with cheese. Top with sour cream and olives if desired. Fold the sides and ends over filling and roll up. This is my burrito filling recipe. I am bad about measuring and even worse about writing it down and changing it as I go. Feel free to taste test this and add stuff that your family enjoys! Please let me know your ideas! This uses my seasoning recipe #166030 166030. If you are using another, use the amounts specified for that particular one. The amount here would equal two, 1.25 store bought packets.

- Saute onion in a large skillet adding garlic and cilantro during the last minute or two.
- Add meat and seasonings and stir well. Allow to saute for a minute or two, letting the meat absorb some of the flavors.
- When it seems that it is really dry and the mixture is starting to stick add the tomatoes and liquid and scrape all the browned bits from the bottom. TONS of flavor there. Add sugar if using. ( The sugar makes the tomatoes taste more like home grown and home canned or even organic).
- Reduce heat to simmer and cook for 20 minutes or so. When you are ready to use the mixture return heat to high and cook off almost all the liquid so that your filling is not runny or wet.
- Use to fill tortillas or in a casserole.

- mix meat and spices together and refrigerate for 24 to 48 hours.
- cook meat and drain off fat.
- while meat is cooking cook eggs and egg whites together in another pan.
- When meat and eggs are done cooking place in large mixing bowl with the shredded cheese and mix till well blended.
- Warm tortillas and then scoop approximately 1/2 cup of filling into tortilla and roll.
- The burritos can then be placed in separate baggies and frozen for future use.
