Steps:
- Cook the potato in a large saucepan of salted boiling water for 7-8 minutes or until tender. Drain.
- Heat a 22cm-diameter (base measurement) non-stick frying pan over medium-high heat. Add the chorizo and cook, turning occasionally, for 3-4 minutes or until golden. Transfer to a plate.
- Add potato to pan and cook, turning occasionally, for 3-4 minutes or until golden brown. Return the chorizo to pan along with the ham and spinach and cook, tossing, for 1-2 minutes or until spinach wilts.
- Preheat grill on high. Whisk together the eggs and shallot in a small bowl. Season with salt and pepper. Pour the egg mixture into the pan. Reduce heat to low and tilt the pan slightly to evenly distribute the egg. Cook for 4-5 minutes or until the frittata is set around the edge but still runny in the centre. Place the pan under the grill and cook for 3-4 minutes or until golden brown and just set.
- Combine rocket, chives and parmesan in a bowl. Cut frittata into wedges. Serve with rocket salad.

ONION, HAM, AND CHEESE FRITTATA

Steps:
- Position a rack about 8 inches from the broiler and preheat.
- Melt the butter in a medium non-stick skillet over medium heat. Add the onions and season with 1/2 teaspoon salt and some pepper. Cook, stirring occasionally, until the onions get very soft, about 15 minutes. Meanwhile, whisk the eggs and milk in a medium bowl with the remaining 1/4 teaspoon salt and some pepper until smooth. Transfer onions to a bowl to cool. Reserve the skillet.
- Stir the onions, ham, herbs and cheese into the eggs.
- Heat the non-stick skillet. Pour the frittata mixture into the pan and stir to make sure the fillings are evenly arranged. Cook, stirring gently a couple times in the first minutes of cooking. Then let the mixture cook undisturbed until the bottom sets, about 5 minutes. Transfer the skillet to the oven and broil until the eggs are just set and brown, about 5 minutes. Take care not to overcook or the eggs will be dry. Remove from the oven, cover, and set aside for 5 minutes.
- Invert the frittata onto a large plate or platter. Cut into wedges and serve warm or at room temperature.
SPINACH AND POTATO FRITTATA
Steps:
- Preheat oven to 450 degrees F. Put a baking sheet into the oven to preheat.
- In a large bowl combine 1 tablespoon of the canola oil with 1 teaspoon of salt and 1/4 teaspoon pepper. Add the sliced potatoes to the bowl and toss to coat. Remove the baking sheet from the oven, and add the potato slices, making sure they are all in a single layer. Transfer to the oven and bake for 8 minutes.
- In a skillet, heat the remaining 2 tablespoons of the oil over medium heat. Add the onion and saute for 2 minutes. Stir in the garlic and spinach and saute for another 2 minutes.
- In a large bowl whisk together the eggs, milk and remaining salt and pepper. Mix in the cheese and the onion and spinach mixture and set aside.
- Spray an oven-proof skillet with nonstick cooking spray. Turn the oven down to 350 degrees F. Remove the potatoes from the oven and add them to the skillet. Pour in the egg mixture and transfer the skillet to the oven. Bake until the eggs have set, about 30 to 35 minutes.
- Remove from oven and let cool for 5 minutes. Serve warm or at room temperature, directly from the skillet.

- Heat the grill to its highest setting. Heat the oil in an ovenproof frying pan over a medium-high heat. Tip in the mushrooms and fry for 2 mins until mostly softened. - In a 10-in. cast-iron or other ovenproof skillet, brown potatoes in 2 tablespoons butter over medium-high heat; remove and set aside., In the same skillet, saute the mushrooms, onion, red pepper and ham in remaining butter until vegetables are tender. - Heat the olive oil, add the onion and garlic and cook until softened.
- Add the diced potato and cook until browned.
- I put the skillet lid on now and allow the potatoes to cook completely through-about 10 minutes.
- Add the ham, capsicum and tomatoes, and cook uncovered for a further 2 minutes.
- Mix the egg, parsley, parmesan cheese, salt and pepper to taste, together in a bowl, then pour over the ham and vegetables in the pan.

- In large bowl, whisk eggs, milk, Parmesan & Gruyere cheeses, salt & pepper until well combined. Set aside. Preheat broiler. On stove, heat oil in 8" nonstick, oven proof skillet over med heat. Add potatoes & cook 8-10 min. until almost tender, stirring occasionally. Add onions & garlic; cook until onions are translucent. Add ham & spinach. Stir until spinach is wilted.
