1 (16 ounce) package medium-wide egg noodles
1 cup butter, divided
2 large onions, chopped
2 small heads cabbage, cored and cut into 1-inch pieces
salt and ground black pepper to taste
1 tablespoon water, or as needed

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in egg noodles and return to a boil. Cook noodles uncovered, stirring occasionally, until tender but still slightly firm, about 5 minutes. Drain well.
  • Melt 1/2 cup butter in a large skillet over medium-low heat; cook and stir onions until translucent, 5 to 10 minutes.
  • Cook and stir remaining butter and cabbage into onions until cabbage is softened but not browned, 5 to 8 more minutes. Season with salt and black pepper.
  • Place cooked noodles and cabbage mixture in a large roasting pan and stir gently to combine. Sprinkle with more salt and black pepper if desired.
  • Bake in the preheated oven until golden brown on top, 30 to 40 minutes.

This has been in my family for generations coming from Czechoslovakia. Traditionally, it is mixed with goat cheese from Czechoslovakia but since it's not available here in the States, we use brick cheese or feta. We eat this as a main meal but can be served as a side. Serve as is or add kielbasa on the side or slice up kielbasa and mix it in with haluski! Serve with warm crusty bread.

1 pound bacon
4 small potatoes, peeled and coarsely chopped
1 cup all-purpose flour
2 eggs, beaten
½ teaspoon baking powder
1 pinch salt
2 cups shredded Wisconsin brick cheese

Steps:

  • Cook bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. When bacon is cool, crumble and set aside.
  • Place potatoes into a food processor and process until pureed, 2 to 3 minutes. Transfer to a bowl and stir in flour, eggs, baking powder, and salt to make a sticky dough. Set dough aside.
  • Fill a large pot about half full of lightly salted water and bring to a boil. Ladle large spoonfuls of the sticky dough to a small cutting board and use a knife to chop the dough into tablespoon-size pieces; as you cut off a piece, drop it into the boiling water. Let the dumplings boil over medium heat until they float, 2 to 3 minutes. Remove dumplings with a slotted spoon to a large serving bowl.
  • Sprinkle bacon crumbles and a handful of shredded brick cheese over each batch of dumplings; continue to make, boil, and transfer dumplings to the bowl, sprinkling each batch with bacon and brick cheese. When all dumplings are made, gently stir the haluski to mix all ingredients.

1/2-1 lb bacon, thick cut or pancetta
1 medium head cabbage, cut in half and sliced thin
2 large yellow onions, cut in half and sliced
2 c carrots, sliced 1/4 inch
4 clove garlic, minced
1- 12 oz package egg noodles or gluten free tangliatelle noodles
1/2 c butter
1 tsp fresh cracked sea salt
fresh cracked black pepper to taste

Steps:

  • 1. In a large cast iron skillet, or a non stick skillet will work great too. Melt two tablespoons of butter over medium high heat, add optional bacon (or Kielbasi if using) and cook until crisp. Remove from skillet and place on paper towels to drain off excess fat.
  • 2. Meanwhile, In a separate pan, prepare egg noodles or gluten free tangliatelle noodles as per package directions. Cook al-dente, do not over-cook. Drain and rinse with cold water. Set aside. ** For GF, I bring water to a boil, add noodles and boil 3-4 minutes. Then turn off heat and cover. Stir every minute or so. They cook fast and tend to over-cook quickly. When they reach al-dente, drain, and rinse with cold water quickly to stop the cooking process. This method works very well to prevent soggy GF noodles.
  • 3. In the skillet you prepared the bacon in, drain all but 3-4 tablespoons of bacon grease. (If you didn't use bacon or kielbasi, just use the full amount of butter to begin this step.) Add remaining butter & Heat again over medium heat. Add the cabbage, onions, & carrots to the pan & season with fresh grated sea salt and pepper to taste. Cook over medium heat, stirring frequently to cook down cabbage. When cabbage has softened and cooked down, increase heat to high and cook until cabbage, onions, and carrots are slightly browned or golden. Add garlic, & cooked egg noodles or GF noodles and continue to cook until noodles are heated through and slightly golden, stirring constantly. Add crisp bacon last and toss with cabbage/noodle mixture to mix thoroughly. Add additional fresh cracked sea salt and pepper to taste. 8 ounces wide egg noodles
1 large sweet onion
3/4 cup butter (divided)
1 teaspoon minced garlic
1 large head cabbage
1 teaspoon salt

Steps:

  • Preheat oven to 300 degrees.
  • Bring a large pot of salted water to a boil and cook egg noodles according to package directions until al dente. Drain noodles and set aside.
  • Add 1/2 cup of butter to a large dutch oven or deep pot over medium heat and cook until melted. Slice the onion and add to the butter. Cook, stirring occasionally, until onions are translucent, about 5-10 minutes.
  • Add the remaining 1/4 cup of butter to the pot and melt.
  • Chop the cabbage into bite-sized pieces and add to the pot.
  • Cook, stirring often, for 5-10 minutes or until cabbage has softened. Add the garlic and cook for 30 seconds more.
  • Stir the cooked egg noodles into the cabbage mixture. Season well with salt and pepper.
  • Transfer to a 9x13 buttered baking dish and bake at 300 degrees for 30 minutes or until the top is golden brown.

Potato kneidlach are light, fluffy potato dumplings for Passover that are a wonderful gluten-free substitute for matzo balls. I have loved these ever since I first made them for a gluten-free friend in 2005. I based this recipe off of one from The Passover Gourmet by Nira Rousso. My dad e-mailed me Rousso's recipe for potato dumplings a few years ago and I used that as the basis for these. Leftover batter can also be fried into chewy potato pancakes, as well.

2 medium russet potatoes, peeled
2 tablespoons vegetable oil
2 eggs, beaten
1/3 cup potato starch, plus
1 tablespoon potato starch
1/2 teaspoon salt

Steps:

  • Cut potatoes into large chunks and boil in water until soft. Drain and allow to cool. Once cool, mash with oil, eggs, salt, pepper and dill.
  • Stir in potato starch until thoroughly combined, and refrigerate the mixture for 1 hour.
  • Bring soup or a pot of lightly salted water to a boil. Use your hands to gently form rough ball shapes from one tablespoon of batter at a time, and submerge dumplings in the soup or water - If you prefer, you may use a soup spoon or ice cream scoop to move free-form spoonfuls of batter into the pot. Boil for approximately 5-6 minutes - The dumplings will float up to the surface quickly but will need several additional minutes to cook all the way through.
  • Serve in soup, or as a side dish with butter or margarine and fried onions.

2 tablespoons olive oil
1 yellow onion (thinly sliced)
4 cloves garlic (minced)
1 teaspoon fresh oregano (chopped)
1/2 teaspoon dried thyme
8 oz. fusilli pasta
2 cup water
1/2 head cabbage (about 4-5 cups - sliced thinly)
¼ cup Green Peas
2 tablespoons butter
Salt and pepper (to taste)

Steps:

  • Hit SAUTE on the instant pot, and when it reads Hot pour the oil, add the onion and sauté until soft, about 5 minutes.
  • Add garlic, oregano, thyme salt and pepper, stir and cook for 30 seconds.
  • Hit CANCEL, and use some of the water to deglaze pot, if necessary
  • Add the cabbage and the pasta and then, the water. The water won't cover the noodles, but this is fine. Add butter over the pasta
  • Place the lid on the pressure cooker, make sure vent is on Sealing position, then hit PRESSURE COOK for 5 minutes. If using EGG noodles, the cook time changes to 2 minutes.
  • When done, do a quick release. When pin drops, remove lid.
  • Add the green peas and give it a quick stir.
  • Serve warm garnished with chopped parsley and oregano and serve with sour cream or cottage cheese, if desired

2 tablespoons olive oil, (divided, plus more during saute')
2 tablespoons butter, (divided)
4-6 ounces mushrooms, (white or cremini, sliced)
1 large onion, (diced or sliced thin)
2 cloves garlic, (smashed and rough chopped)
½ head green cabbage, (sliced into 1/2" slices (more if desired))
½ teaspoon garlic powder
½ teaspoon onion powder
8 ounces egg noodles, (I used homemade style. Gluten free linguine is excellent too)
1 teaspoon salt, (plus more during serving if needed)
¼ teaspoon black pepper, (more if desired)
½ cup peas, frozen or fresh
2 tablespoons flat leaf parsley, (minced)

Steps:

  • Heat water in a large pot and cook the pasta according to directions. See recipe note #1 regarding different pasta choices. The pasta should cook while you prepare the other ingredients in next step. But watch the timing on the pasta if using gluten-free noodles as they'll be done before you're ready to add them into the cabbage mixture. NOTE: Save about one cup of your pasta water when you drain the noodles!
  • In a large skillet, heat one tablespoon olive oil over medium high heat. Add sliced mushrooms and saute' until golden, about 5 minutes. If needed, add ½ tablespoon butter to help with browning. Add onions and cook, stirring occasionally, until onions are soft, about 3 minutes. Add chopped garlic and cook until fragrant, 30 seconds.
  • Start with half of the cabbage and stir into the mushroom, onion mixture. Add one tablespoon of the butter and cook until the cabbage begins to brown. See recipe note #2 if wanting to add less oil. Add remaining cabbage and additional tablespoon butter. Add the granulated garlic and onion at this time and continue to cook, stirring until the cabbage has softened and browned around the edges.
  • Once the noodles are al dente and drained (remember to save some of that pasta water), add the noodles a little at a time until you are happy with the ratio of noodles to cabbage. Add 1 teaspoon salt and ¼ teaspoon black pepper, less if desired, taste and add more if needed. Add the peas and stir to combine. If you want the dish to be a little "creamy", add some of the pasta water, about ¼ cup at a time until desired wetness is achieved.
  • At this point, the recipe is delicious and may be served right out of the skillet. The cabbage and noodles are tasty for sure but to infuse even more flavor, place the mixture into a buttered large casserole dish or roasting pan, add up to ½ cup of the pasta water, cover with aluminum foil and bake in a preheated 300F degree oven for 10 minutes, remove the foil and continue to bake 15 minutes more. Baking in the oven helps to tenderize the noodles and cabbage a little more and infuses the onion and garlic flavors into the noodles. I highly recommend the baking step.
  • Just before serving, whether you serve from the skillet or after baking in the oven, drizzle extra olive oil over the dish and sprinkle with the parsley just before serving. See recipe note # 4 regarding leftovers.

Every family makes it a little different and even the Food Network’s Guy Fieri has a recipe for it. (Honestly, I think his looks a bit insane with all those ingredients because I find the simplicity the true beauty of this dish.)
