GLAZED BAKED HAM

Steps:
- Preheat the oven to 325 degrees F.
- Score the surface of the ham about 1/8-inch deep in a diamond pattern. Insert a clove into the middle of each diamond.
- Bake the ham for 2 to 2 1/2 hours, or longer depending on package directions.
- Heat the brown sugar, mustard, vinegar and soda in a small saucepan until bubbly. Cook until thick, about 15 minutes.
- After 2 hours of baking time, brush the glaze on the ham in 20-minute intervals until nice and glossy.
GUINNESS BAKED HAM
Based on a recipe from the 1992 March/April Cooking Light magazine. The article claims that corned beef and cabbage is not traditional in Ireland for the St. Patrick's Day holiday:... "Guinness Baked Ham is more likely to be part of a tradtional Irish menu. It's basted with Guinness Stout, a creamy brew from Dublin."

Steps:
- Trim fat and rind from ham. Using a sharpened knife, score outside of ham in a diamond pattern.
- Coat a rack with cooking spray and place ham on it. Place rack in a shallow roasting pan.
- In medium-sized bowl, combine mustard, Guinness Stout, minced parsley, dark brown sugar, and ground cinnamon. Stir well and brush over ham.
- Bake at 425°F for 5 minutes. Reduce heat to 325°F, and continue baking 1 hour.
- Baste ham with mustard mixture every 15 minutes.
- Transfer ham to a platter, and let stand 15 minutes before slicing.
- Garnish with parsley, if desired.

This will surprise everyone! Dare your guests to guess what is in this glaze! Baste ham all over generously with all the glaze. As the ham bakes, baste every half hour with the juices in the bottom of the pan. As the ham bakes and the juice mixes with the glaze...Delicious!

HAM WITH BEER AND BROWN SUGAR GLAZE
Steps:
- Remove the baked ham from the oven and score the fat diagonally in a criss-cross pattern. Stud the ham with whole cloves, if desired. Skip scoring and the cloves if the ham is spiral-sliced. Spoon the glaze mixture over the ham.
- Serve the ham sliced; drizzle with the cooking liquids, if desired.

- Preheat oven to 350°F with rack in lowest position. Stir together beer and brown sugar in a large oven-safe high-sided skillet. Add ham; bring to a boil over medium-high. Reduce heat to medium-low; simmer 10 minutes, turning ham occasionally.
- Transfer skillet to preheated oven; roast until a thermometer inserted in thickest portion of ham registers 110°F, 1 hour to 1 hour and 30 minutes, turning ham every 20 minutes.
- Continue roasting at 350°F, without turning, until a thermometer inserted in thickest portion of ham registers 145°F, 30 minutes to 1 hour, basting ham with beer mixture in skillet every 10 minutes.
- Transfer ham to a serving platter; tent with foil to keep warm. Return beer mixture in skillet to heat over medium; cook, stirring often and skimming fat if needed, until thickened, syrupy, and reduced to about 1 cup, about 5 minutes.
