LOW-FAT STRAWBERRY PARFAIT
This is a light, refreshing dessert that is almost fat-free! This can be made with other flavors of gelatine and complementary fresh fruits, such as raspberry, melons, peach, kiwi, blueberries, banana, etc. Chilling in refrigerator is not counted in preparation time.

Steps:
- Save 4 whole strawberries for garnish, and slice the remainder.
- Set aside.
- Microwave 1 cup water until hot.
- Pour hot water over gelatine and sweetener in a small bowl, stirring until gelatine is dissolved.
- Refrigerate mixture 5-10 minutes to cool gelatine.
- Place sour cream in bowl.
- Add 1/4 of gelatine mixture and whisk until sour cream and gelatine are well-mixed and creamy.
- Slowly pour remainder of gelatine into sour cream mixture, whisking continuously to blend.
- Pour gelatine mixture into an greased 8x8-inch glass casserole.
- Refrigerate until set.
- With a sharp knife, cut into small squares.
- With a spatula, release squares from the bottom of glass dish.
- TO SERVE: In four stemmed glasses, divide ingredients, placing gelatine cubes in the bottom.
- Top with sliced strawberries, then whipped topping, ending with a whole strawberry.
- Sprinkle 1 tsp sugar over the top of each dessert.
- Place a pinch of nutmeg over top.

- Stir boiling water into JELL-O in a bowl until dissolved.
- Add 2/3 of frozen COOL WHIP to same bowl one spoonful at a time, whisking until it is melted and blended.

GUILTLESS FRUIT & COOKIE PARFAIT
This dessert has a wonderful blend of sweet, tart and creamy and is made with fat-free yogurt, cool whip, cookies, strawberry JELL-O and strawberries. It is utterly guiltless and bright pink color is delightful! This is a slightly modified recipe from kraftfoods.com. I use Recipe #240945 for the fat-free cookies (gluten free!) but don't refrigerate the dough so they come out softer. Feel free to use reduced fat Oreos or other cookies and have fun trying different types of fruit, gelatin and yogurt!

- Mix together yogurt and gelatin, then fold in cool whip (carefully mixing together completely).
- Layer the yogurt mixture, cookies (crumble into bite sized pieces if not soft) and fruit in four dessert glasses however you like and garnish with a sprig of mint, or you can follow my suggestion below!
- LAYERING SUGGESTION: Divide half of the yogurt mixture between the four glasses, then top with 1 cookie and 1/4 cup of the sliced strawberries, then repeat using 2 cookies, then top with a dollup of the yogurt mixture and garnish with a mint leaf.

BROWNIE TRIFLE
The official title of this dessert,the recipe for which I cut out of a magazine, is "Jell-O and Cool Whip Easy Chocolate Trifle," but my niece simplified it at our family 4th of July get-together as "Brownie Trifle." [p.s. it wouldn't let me put "1 box of brownie mix" in the ingredients, but that's what you need. I like Duncan Hines, myself.]This dessert was absolutely the hit of the party. We had ages 2-72 in the house, and everyone LOVED it. Super easy to make, and can be as high or low fat as you'd like. When I told my mom after the fact that I'd used skim milk in the pudding and fat-free Cool Whip, she was totally stunned because people were lining up for second helpings. Prep and cooking time sound high, but the "cooking time" is the chill time and the time it takes the brownies to come out of the oven; "prep time" would be the time to make the brownie mix--10 minutes--and the time to make the pudding--about 10 minutes. The milk, water, eggs, and vegetable oil are for the pudding and brownies, but the ingredient list wouldn't quite let me put that, so there it is then.

- Bake brownies according to package directions. While the brownies are in the oven and cooling off is a great time to make the chocolate pudding and slice the strawberries.
- Cut prepared brownies into cubes.
- In a trifle bowl or other large glass bowl, layer in this order, brownie cubes, chocolate pudding, strawberries (or raspberries, or whatever fruit strikes your fancy), Cool Whip, then brownie cubes, pudding, and Cool Whip again. - Prepare an 8x8-inch pan by spraying it lightly with cooking spray. Alternately, you can use sprayed candy molds to make gummy shapes.
- Place the water in a small saucepan over medium-high heat and bring to a boil.
- Immediately add the Jell-O, Kool-Aid, and gelatin and stir vigorously until it has all dissolved.
- Pour the candy into the prepared pan, or spoon it into the prepared molds. Place in the refrigerator to set for approximately 20 minutes.
- Candy can be cut into worms, squares, or shapes using cookie cutters. You can roll in sugar or other half of Kool-aid for an extra sour kick.

- Working in layers in each parfait glass, crumble one cookie at the bottom of each glass and top with about 2 tablespoons of yogurt. Add the red berries (strawberries and/or raspberries).
