GUACAMOLE - REAL AUTHENTIC MEXICAN "GUAC"

Guacamole - Real Authentic Mexican

I am surprised how difficult it is to find a genuine guacamole recipe. No need for mayo or sour cream or all the other additives. This is the original, handed down generations, yet the most simple basic way to make Guacamole. I even make it better than my Mother in Law, which is a hard act to follow. :) Make this recipe and you will never go back. Hope you enjoy this like all my friends and family do.

Time 15m

Yield 6 serving(s)

Number Of Ingredients 7

5 large Hass avocadoes (black in color, slightly soft to the press)
2 large limes, juice of
1 medium white onion (diced)
3/4 cup loosely packed fresh cilantro (chopped finely)
1 large tomatoes (Diced-make sure it isn't overly ripe)
salt
finely chopped fresh jalapeno (optional)

Steps:

  • Slice avocados in half. Discard the seed. Scoop out of shell with a spoon. Place in bowl.
  • Add juice of one fresh lime immediately to prevent browning. Use a fork and mash to desired consistency.
  • Add chopped onions, tomato, and cilantro. Stir gently to mix ingredients.
  • Add juice of second lime and then salt to taste. Stir just slightly, until incorporated.
  • Add jalapeño to taste.
  • Serve with your favorite tortilla chips for a dip, or use with your favorite Mexican dish.
  • a side note: this is to make a chunky, yet creamy guacamole. Some people prefer to use a food processor with all the ingredients to make for a VERY creamy dip.

CLASSIC GUACAMOLE

Classic Guacamole image

Avocados are native to Mexico, where they are used as more than just an ingredient in a chip dip. Here I'll show you three stages of making guacamole, from the most simple and delicious version to an elegant dip to serve your guests.

Provided by Rick Bayless

Categories     appetizer

Time 10m

Yield 6 servings

Number Of Ingredients 8

3 avocados
kosher salt
1 clove garlic
1 tablespoon lime juice, plus more to taste; preferably from fresh limes
1/4 cup cilantro, chopped, plus a little extra for garnish
1/2 serrano pepper, or 1 jalapeño
1/2 plum tomato
1/4 white onion

Steps:

  • Cut around each avocado lengthwise, then twist the two halves apart. Remove the pit and scoop the avocado flesh into a bowl. Mash the avocados (preferably with an old-fashioned potato masher) into a coarse purée. Season the purée with salt, about 1 teaspoon. Mince the clove of garlic. Sprinkle the minced garlic with a little salt, and mash with the side of your knife into coarse paste.
  • Fold in the lime juice and chopped cilantro.
  • Mince the green chile and add the desired amount to the bowl. Chop the tomato and add to the bowl. Mince the onion (you should have about a third of a cup) and rinse under cold running water in a small mesh strainer. Shake off the excess water, and mix into the avocado.
  • If you aren't serving the guacamole immediately, cover with plastic wrap directly on the surface of the guacamole and refrigerate. For best results, make the guacamole within 2 hours of serving and serve in batches.

THE BEST GUACAMOLE

The Best Guacamole image

Simple ingredients in perfect proportion make a this dip a crowd-pleasing favorite for any event. We decided not to use tomato in ours -- it makes the guac watery -- and included both onion and garlic for extra zip. A healthy dose of fresh lime juice balances and brightens the flavors.

Categories     appetizer

Time 25m

Yield 6 to 8 servings

Number Of Ingredients 9

1/2 small red onion, diced small
1 tablespoon distilled white vinegar
4 ripe Hass avocados
1/4 cup lime juice (about 2 limes)
1 jalapeno, minced (seeds and membranes included if you prefer heat or removed for a milder version)
1 clove garlic, grated
1 teaspoon kosher salt
1/2 cup lightly packed cilantro leaves, finely chopped (about 1/4 cup finely chopped)
Tortilla chips, for serving

Steps:

  • Put the diced onion into a small strainer and rinse under cold running water. Transfer to a small bowl and cover with 1 cup cold water. Stir in the vinegar and let sit for 10 minutes.
  • Slice the avocados in half, remove the pits and scoop the flesh into a medium bowl. Pour the lime juice over the avocado. Using a fork or potato masher, mash the avocado until creamy with some chunks remaining. Drain the onions well and add to the bowl, along with the jalapeno, garlic, salt and cilantro. Stir to combine.
  • Serve immediately with tortilla chips. Or press a piece of plastic wrap directly against the surface of the guacamole to prevent discoloration and refrigerate until ready to serve.

CHUNKY GUATEMALAN GUACAMOLE

Chunky Guatemalan Guacamole image

An authentic guacamole recipe we learned from Guatemalan friends. We have been spoiled and will only eat guacamole with authentic fresh ingredients. Don't cheat when you make this recipe!

Provided by Deerwoman

Categories     Low Protein

Time 15m

Yield 2 cups, 6 serving(s)

Number Of Ingredients 6

2 ripe but not mushy avocados, diced in large cubes
1 small tomatoes, diced
1/4 cup finely chopped white onion
fresh green chile, chopped. Use the amount you like
1/8 cup chopped fresh cilantro
1 lime, juice of

Steps:

  • Put avocados into bowl and mix with lime juice.
  • Mix in other ingredients gently. Serve as soon as possible.
  • You do not need salt with this unless you are one who cannot do without it.
  • We use a couple jalapenos, but serrano or whatever juicy green chile you like should work fine.
  • We eat this all year round and at least once a week. It's good for you! In hot weather we eat all of it between the two of us as a main course with tortillas or chips.
  • My husband insists on having green onion in anything with onion, so I add this too, but it is not in the original recipe.

AUTHENTIC MEXICAN GUACAMOLE

Authentic Mexican Guacamole image

This is how to make real guacamole! I've seen so many people butcher it, including resturaunts... Poor guacamole, what did you ever do to them?

Provided by jusblazzze

Categories     Low Protein

Time 15m

Yield 6 serving(s)

Number Of Ingredients 7

3 Hass avocadoes
1 medium white onion (about 2 cups)
1 serrano chili pepper, Chopped Finely (Jalapenos Are Good Substitites)
2 tablespoons fresh cilantro, Chopped Finely
2 medium roma tomatoes (Deseeded and Diced)
2 teaspoons of freshly squeezed lime juice
1 teaspoon salt

Steps:

  • In a molcajete, add the white onion, cilantro, and serrano chile. Grind the ingredients together until they form a paste so that the juices mix.
  • Hint: The molcajete is a mortar and pestle made from black volcanic rock and is used in mexico to make guacamole. If you don't have a molcajete, use a large heavy bowl and a wooden spoon to grind the ingredients.
  • Halve the avocados, discard the pits, and scoop out the avocado in large chunks with a spoon. Gently mix with the onion paste in the mocajete, mashing the avocado slightly.
  • Gently mix in the diced tomatoes, lime juice and salt. If needed add extra salt and serrano chile to taste.
  • Hint: Avocados brown quicker if not diced into cubes before mashing. The lime juice also helps to preserve it's color. The browned avocado doesn't taste any different, it just looses it's appeal. So make it just before you're ready to serve it! Enjoy!

BEST EVER CHUNKY GUACAMOLE

Best ever chunky guacamole image

This is the best version of this classic guacamole dip. The ingredients are kept to a minimum, so it's as fresh-tasting as possible.

Provided by Barney Desmazery

Categories     Buffet, Canapes, Snack, Starter

Time 10m

Number Of Ingredients 7

1 large ripe tomato
3 avocados, very ripe but not bruised
juice 1 large lime
handful coriander, leaves and stalks chopped, plus a few leaves, roughly chopped, to serve
1 small red onion, finely chopped
1 chilli, red or green, deseeded and finely chopped
tortilla chips, to serve

Steps:

  • Use a large knife to pulverise 1 large ripe tomato to a pulp on a board, then tip into a bowl.
  • Halve and stone the 3 avocados (saving a stone) and use a spoon to scoop out the flesh into the bowl with the tomato.
  • Tip the juice of 1 large lime, a handful of roughly chopped coriander, 1 finely chopped small red onion and 1 deseeded and finely chopped red or green chilli into the bowl, then season with salt and pepper.
  • Use a whisk to roughly mash everything together. If not serving straight away, sit a stone in the guacamole (this helps to stop it going brown), cover with cling film and chill until needed.
