CHICKEN BURRITO BOWL RECIPE (CHIPOTLE COPYCAT)
This chicken burrito bowl, is a nutritious, delicious and filling meal. It's a healthier (and less expensive) chipotle copycat. Plus it's just as tasty (if not more so!). Great for meal prep and easy lunches.

Steps:
- Cut chicken breast in bite size pieces
- Add chicken breast pieces in a medium sized bowl
- Add olive oil, paprika, cumin, ground chili pepper, salt and black pepper. Mix well until chicken is coated with spices and oil
- Heat a non-stick pan on medium heat
- Add chicken in pan and cook for 7-8 minutes on each side until thoroughly cooked
- Set chicken aside
- Cook rice according to box instructions
- In a large bowl add chopped lettuce, corn, beans, rice and cooked chicken
- Add salsa, sliced avocado, sour cream and cheddar cheese on top. Enjoy!
- Finely chop cilantro, tomato and onion. Add in a small bowl
- Add vinegar, lime juice and salt
- Mix well until everything is combined

Steps:
- First, cook brown rice according to the package's instructions.
- Sauté diced onion in avocado oil for 1 minute on medium heat. Add diced red bell pepper into the pan and cook for 1 minute. Next, add the ground chicken. Use a wooden spoon to break the chicken into crumbles. Sprinkle with the homemade burrito seasoning mix. Cook for 3-4 minutes. Lastly, add black beans and cook for another 2 minutes.
- It's time to assemble the bowls! Place butter lettuce on the bottom of each bowl. Add half of the brown rice and half of the meat mixture on top of each bowl. Top each bowl with avocado, salsa, Greek yogurt or other desired toppings.

- 1. Preheat oven to 400˚F/200˚C.
- 2. Line a baking sheet with foil.
- 3. Place the chicken, peppers, and onions on the baking sheet and drizzle with oil.
- 4. Sprinkle the taco seasoning evenly over both sides of the chicken breasts.
- 5. Salt and pepper the peppers and onions, tossing to coat.
- 6. Top each chicken breast with a generous pour of salsa.
- 7. Bake in a preheated oven for 25 minutes.
- 8. Rest chicken for 10 minutes, before slicing into strips.
- 9. Add a base of brown rice to 4 food storage containers. Top each with a scoop of black beans, corn, additional salsa, cheddar cheese, cooked peppers and onions, and sliced chicken. Garnish with fresh cilantro and a lime wedge.
- 10. Store in the refrigerator (and enjoy any extras immediately). Can be kept refrigerated for up to 4 days.

- Make corn and black bean salsa: Combine corn, red onion, black beans, chopped cilantro, and 2 teaspoons lime juice. Add some salt. Set aside.
- Make chili lime crema: Whisk together sour cream, 1 Tablespoon lime juice, 1 teaspoon chili powder, and honey. Refrigerate until ready to serve.
- Make taco seasoning: Combine 2 teaspoons chili powder, ground cumin, cornstarch, garlic powder, salt, and pepper.
- Make taco meat: Place a large skillet over medium heat. Add cooking oil. When it begins to shimmer, add chicken and cook, breaking it apart, until just cooked through, 6 to 8 minutes. Sprinkle taco seasoning over chicken and stir until no dry spots remain, about 1 minute.
- Pour water and salsa over chicken and stir well. Cover with a lid. Cook, covered, for 5 minutes. Remove lid and continue cooking until any extra liquid has cooked off.
- Assemble bowls with a layer of cooked rice topped with chicken and corn-black bean salsa. Finish with any toppings you'd like and drizzle with crema. Enjoy!

CHICKEN BURRITO CASSEROLE
A wonderful chicken burrito casserole that is simple to make but does not lack flavor. Very flavorful dish that is so easy to prepare and assemble. This is always a hit and never any leftovers (literally)! Great for pot lucks and get togethers. Mexican food is always easy and beautiful once dressed with all the toppings, very colorful. This dish freezes and reheats wonderfully. For easy weeknight preparation either make over the weekend and freeze for whenever you'd like to eat it OR you can do like I do... cook a ton of chicken on the weekend and then use it in various recipes during the week. Variations... you may add other ingredients to the layers that you like such as refried beans, olives, jalapenos, etc. You don't have to use only breast meat when making this recipe. It's great to recycle left over chicken from a BBQ! Note... instead of making in a large casserole dish I make in a deep one so I have more layers.

- Preheat oven to 350.
- Take the cooked chicken and tear up/shred and put in a pot.
- Add the can of rotel, package of taco seasoning (along with any water needed per the directions on the seasoning packet) to the chicken and heat through on the stove.
- Spray non-stick spray (such as Pam) on a casserole dish. Then, layer the following in the casserole dish -- tortillas (so it covers the entire bottom of the pan), then red sauce (just a thin layer so the torillas don't dry out while cooking), then chicken (doesn't have to be a thick layer because there will be multiple layers), then cheese.
- Repeat all layers until you are out of chicken but be sure to end with tortillas with red sauce on top.
- Bake covered for 30 minutes.
