SWEET CORN GRIDDLE CAKES

Steps:
- Combine the eggs, sugar and salt in a stand mixer fitted with the whisk attachment and mix until combined.
- Whisk the buttermilk, milk, and yogurt in a separate bowl until combined.
- Combine the cornmeal, flour, baking soda and baking powder in another bowl and mix with a fork until combined.
- Add the buttermilk mixture to the egg mixture and mix until combined. Remove from the stand mixer and fold the flour mixture in by hand, followed by the melted butter, until combined.
- Heat a griddle (or skillet) with 1/2 teaspoon vegetable oil until hot.
- Portion out 1/4 cup of the batter and cook until bubbles form over the griddle cake, then flip and cook until dry. Repeat with the remaining batter.
GRIDDLE CAKES
Over time I had developed a vague impression that griddle cakes (as opposed to pancakes) was made with cornmeal. I don't know if that is an accurate definition or not, but these are the griddle cakes that I came up with when I tried to make some. They are very good served with syrup or honey.

- Lightly grease a heavy nonstick pan (i.e. spray with non-stick cooking spray), and start heating it at medium-high heat.
- Sift together the dry ingredients in one bowl.
- In a separate bowl, combine the eggs, milk, and butter.
- Now combine the dry and wet ingredients together, stirring just enough to moisten the dry ingredients. Do not worry about getting rid of all of the lumps. (It is important to combine the dry and wet ingredients separately, and then combine them together to reduce the amount of time that the gluten in the flour has to toughen up.).
- Pour the batter onto the hot pan in about 4" circles.
- Flip the cakes when they get bubbly on the one side.
- Continue cooking until the bottom browns. I usually peek by pulling up the edge with a spatula.
- If the griddle cakes are cooking too fast, reduce the heat.
- Never flip the griddle cakes more than once as this will make them heavy.
- Serve the griddle cakes immediately even if this means that people have to eat at different times because there are not enough to go around when the first batch comes off of the griddles.
GRITTLE CAKES
Recipe by Janet Fossel found in American Profile magazine: "The problem with flapjacks and pancakes, as any mother knows, is by the time you cook and stack enough to feed the whole family, the pancakes on the bottom have the consistency of ... well ... not what you intended. I discovered the solution by accident one morning. Having run out of corn meal for flapjacks, I tried grits instead-and found the results not only stayed crispy all morning, but had such an indescribable taste that I've never cooked them any other way since. Griddlecakes became Grittlecakes. (Grits is a dry meal made from hull corn kernels; a favorite in the South.)"

- Combine grits, salt and sugar. Slowly add 1 cup boiling water. Cover and let stand for 10 minutes.
- Beat together milk, egg and butter. Add to grits mixture.
- Combine flour and baking powder. Stir into batter.
- Heat oil in a 10-inch iron fry pan on medium heat. Cook two grittlecakes at once, 1/4 cup batter per cake. Turn over when the surface is bubbly. Serve with butter and warm maple syrup. Or you might try your favorite jam or honey. For variety, add blueberries or apple pieces to the batter. Extra grittlecakes can be refrigerated for up to a week, reheated in the oven, and served. Or, they can be frozen for later use.

GRITS CAKES
Steps:
- Combine the milk and garlic in a large saucepan and heat over high heat until scalding. Reduce to a simmer and, using a wooden spoon, slowly stir in the grits. Cook over low heat, stirring constantly, for 8 to10 minutes, until the mixture is the consistency of mush. Remove from the heat and stir in the ham, cheese and chives. Season with salt and pepper and the cayenne.
- Depending on the shape you desire, pour the mixture into a lightly oiled 9 by 9-inch square pan or other shallow pan. Cover tightly with plastic wrap and cool to room temperature, then refrigerate for 2 to 3 hours, until firm.
- Unmold the grits mixture and slice or cut into the desired shapes.
SWEET MILK GRIDDLE CAKES

- Sift flour 3 times together with the baking powder, salt, sugar, and cinnamon.
- Beat the eggs, add the milk, and pour slowly into the dry ingredients. Beat thoroughly and add butter. Drop by spoonfuls onto a lightly greased hot griddle. When puffed full of bubbles and cooked on edges, turn and cook on the other side.
SAVORY CORN GRIDDLE CAKES
Steps:
- In a bowl combine cornmeal, baking soda, salt, and sugar. In another bowl whisk together egg, buttermilk, and oil. Stir into the flour mixture along with the corn, jalapeno, and cilantro.
- Coat a griddle or heavy skillet with vegetable cooking spray and place over moderately high heat. Pour about 1/4 cup batter onto hot griddle, forming a 4 to 5-inch round. Turn cakes when bubbles form on the top and the bottoms are golden. Continue to cook on the second side until cooked through, another 3 or 4 minutes. - Beat the egg and a little of the milk, then add the flour, sugar and remaining milk a little at a time while beating.
- Allow to stand for 2 hours.
- Peel and grate potatoes, then add to the batter and mix thoroughly.
- Season with salt and pepper.
- Heat a skillet over medium high heat.
- Melt a little butter in the pan, just enough to coat the pan.
- Add a thin layer of batter.
- Cook on each side until golden brown, and place on a warmed serving platter.
- Continue with remaining batter.

- Pour the milk over the oats and let stand 5 minutes.
- Stir the flour, baking powder, sugar and salt together.
- Add the beaten eggs to the oat and milk mixture. Add the melted butter.
