Time 35m

Yield 4 servings

Number Of Ingredients 21

1 pineapple, peeled and cut crosswise into 1/2-inch slices
6 tablespoons olive oil
1/4 cup finely chopped red onion
1/4 cup minced red bell pepper
1/4 cup rice wine vinegar
2 jalapeno peppers, seeded and minced
2 tablespoons lime juice
1 tablespoon finely chopped fresh cilantro leaves
1 1/2 teaspoons minced garlic
1/2 teaspoon salt, plus 1 teaspoon
4 (6-ounce) tuna steaks
1 tablespoon Essence, recipe follows
Fresh cilantro sprigs, for garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Brush the pineapple slices lightly with 1 tablespoon of the olive oil, then place the pineapple slices on the grill and cook, turning occasionally, until softened slightly and nicely marked by the grill, 2 to 3 minutes per side. Remove from the grill and allow to cool to room temperature. Dice the pineapple slices (discard the tough core portions) and place in a medium nonreactive bowl. Add the red onion, bell pepper, vinegar, jalapenos, lime juice, cilantro and minced garlic. Drizzle with 3 tablespoons of the olive oil and stir well to combine. Season with 1/2 teaspoon of the salt and set aside as you prepare the tuna.
  • Set a grill pan over medium-high heat. Season the tuna steaks with remaining salt and Essence and brush with the 2 remaining tablespoons of the olive oil. Place steaks on the grill, turning 45 degrees after 2 minutes. Repeat on the other side for an additional 2 minutes or until medium-rare. Remove from heat and set aside. Serve with the Grilled Pineapple Salsa.
  • Combine all ingredients thoroughly.

GRILLED YELLOWTAIL TUNA AND PINEAPPLE SALSA

Grilled Yellowtail Tuna and Pineapple Salsa image

This light and delicious dinner came to me by way of Chef Josh Korn of Paul Martin's American Bistro.

Provided by JMac11116

Categories     Weeknight

Time 20m

Yield 2 serving(s)

Number Of Ingredients 9

2 -7 ounces portions fresh yellowtail fish fillets
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked black pepper
1 whole pineapple, peeled, sliced into 1/4 inch slices, and diced
1 small red onion, peeled, sliced 1 inch thick, grilled, and diced
1 red bell pepper, diced
1 jalapeno pepper, diced
1/4 cup chopped cilantro
salt & pepper

Steps:

  • Season yellowtail with salt & pepper on both sides, and place on hot grill. Grill to medium (3 minutes per side depending on thickness), as overcooking will lead to a dry finished product. While fish is cooking, place all ingredients for the pineapple salsa in a bowl and toss. When the fish is cooked, place a piece of banana leaf on the plate. Place fish on top of banana leaf and top with pineapple salsa, serve with rice and garnish with a grilled lemon.
  • Salsa can be made 1-2 hours in advance, no need to chill.

GRILLED TUNA WITH MANGO-PAPAYA SALSA

Grilled Tuna With Mango-Papaya Salsa image

Yummy tuna with salsa. The salsa is soooo good. Depending on the size of your mango and papaya, you should have some extra salsa left. I like to use the rest of it up as a snack with tortilla chips. Recipe by chef Keith Famie. Note: Probably any sturdy fish would be good in this recipe ie. Mahi Mahi or swordfish, etc... Enjoy!

Provided by LifeIsGood

Categories     Tuna

Time 30m

Yield 2 serving(s)

Number Of Ingredients 11

1 papaya, peeled, seeded and diced

1 lime, juice of
salt and black pepper, to taste
2 tuna steaks, 6 oz each
salt and black pepper, to taste
1 1/2 teaspoons olive oil

  • Tuna:.
  • Prepare an outdoor grill and heat to medium high heat.

Keith recommends medium-rare.
