2 rice cooker cups uncooked Japanese short-grain rice
400 ml water
1 Tbsp kosher salt (Diamond Crystal; use half for table salt) ((you do not need to use all of it))
1 Tbsp neutral-flavored oil (vegetable, rice bran, canola, etc.)
soy sauce ((I love using my homemade unagi sauce))

Steps:

  • Gather all the ingredients. Cook the rice with a rice cooker, a pot over the stove, an instant pot, or a donabe. Let the cooked rice cool a little bit until you can hold rice without burning your hands. Do not let the rice completely cool down.

Number Of Ingredients 13

2 cups short-grain white sushi rice, rinsed until water runs clear
2 tsp. Diamond Crystal or 1¼ tsp. Morton kosher salt, plus more
3 tsp. sugar
½ cup unseasoned rice vinegar, divided
¼ cup pure maple syrup
¼ cup red or white miso
¼ cup tamari or regular soy sauce
½ tsp. crushed red pepper flakes, plus more for serving
2 Tbsp. extra-virgin olive oil
4 (5-6-oz.) skin-on salmon fillets
6 scallions, thinly sliced
1 Tbsp. toasted sesame seeds
Lime wedges (for serving; optional)

Steps:

  • Bring rice, a pinch of salt and 2½ cups cold water to a boil in a medium saucepan over medium-high heat. Stir once, cover, and reduce heat to low. Cook until water evaporates and rice is tender, 18-20 minutes. Remove from heat and let sit, covered, 10 minutes.
  • Whisk sugar, ¼ cup vinegar, and 2 tsp. Diamond Crystal or 1¼ tsp. Morton kosher salt in a small bowl until sugar dissolves. Stir into rice; re-cover. Let sit until ready to use.
  • Whisk maple syrup, miso, tamari, ½ tsp. red pepper flakes, and remaining ¼ cup vinegar in a small bowl. Set glaze aside.
  • Heat oil in a large nonstick skillet over medium. Season salmon with salt; cook, skin side down, shaking pan occasionally, until skin is very crisp and deep golden brown, 7-9 minutes. Turn over and cook just until flesh is very lightly browned ( it should be nearly cooked through), about 2 minutes. Using a spatula to hold back fish, pour off fat from skillet.
  • Reduce heat to low and add reserved glaze to skillet; cook, stirring occasionally, until it begins to thicken, about 1 minute. Baste salmon with glaze and cook, basting occasionally, until glaze evenly coats fish, about 1 minute.
  • Divide rice among plates and top with salmon. Drizzle with any leftover glaze over; sprinkle with scallions, sesame seeds, and red pepper flakes. Serve with lime wedges if desired.

1/4 cup soy-ginger glaze, recipe follows
1/4 cup gari julienned
1 tablespoon sesame seeds
1 cup thin soy sauce
Juice and zest of 2 oranges
3 tablespoons brown sugar
1 tablespoon minced ginger

Steps:

  • Form sushi cakes either using a rice mold or your hands. Make a small hole in the cake and fill with gari. Re-seal hole and let rest for 5 minutes. On a hot grill, mark the cake. Turn over and glaze marked side. Turn again and glaze. Garnish with sesame seeds and serve hot.
  • Combine all ingredients in a bowl.

1 tablespoon wasabi powder
2 tablespoons water
1 1/4 cups Homemade Ponzu Sauce, recipe follows, or purchased ponzu sauce
1/4 cup sake
2 tablespoons grated ginger
1 pound center-cut salmon fillet, cut into 4 equal pieces
12 ounces asparagus, ends trimmed
2 tablespoons vegetable oil
4 teaspoons sesame seeds
4 cups warm Sushi Rice, recipe follows
2 teaspoons sesame oil
3 green onions, chopped
1 avocado, pitted, peeled, and cut into 1/2-inch cubes
1 English cucumber, cut into matchstick-sized strips
1/4 cup sliced pickled ginger
1 lemon, zested
1/2 cup mirin
1/2 cup fresh lemon juice
6 tablespoons soy sauce
1/2 cup sugar
1 tablespoon minced green onion
2 cups short-grain rice
2 cups water
1/4 cup rice vinegar
2 1/2 tablespoons sugar
1 tablespoon mirin
3/4 teaspoon salt

Steps:

  • To make the sauce, combine the wasabi powder and water in a saucepan and let bloom for 5 minutes. Add 3/4 cup ponzu, the sake and grated ginger and bring to a boil over high heat. Reduce the heat to medium-low and simmer until the sauce is reduced by half, about 10 minutes.
  • Meanwhile, place the fish and asparagus in a large baking dish. Pour the remaining ponzu sauce and the oil over the fish and asparagus and turn to coat evenly. Let stand for 10 minutes.
  • In a small frying pan, toast the sesame seeds over medium heat, shaking the pan frequently, until lightly colored, 3 to 4 minutes. Immediately pour onto a plate to cool. Place a grill pan over medium heat until hot. Lift the asparagus from the marinade, place in the pan and cook, turning occasionally, until tender-crisp, about 3 minutes. Transfer the asparagus to a plate and cover with aluminum foil, shiny side down, to keep warm. Lift the fish from the marinade and place in the grill pan. Cook, turning once, until it turns opaque and just begins to flake, 2 to 3 minutes on each side.
  • To serve, divide the rice among 4 bowls. Top with a piece of fish and some asparagus. Pour 1/4 cup of the sauce over the fish in each bowl. Garnish each serving with the sesame oil, green onions, avocado, cucumber, pickled ginger and sesame seeds.
  • In a bowl, combine all the ingredients and stir until the sugar dissolves. Store in a covered container in the refrigerator; it will keep for up to 1 month.
  • Place the rice in a bowl. Add cold water to cover and wash the rice well by rubbing it between your hands, then drain. Repeat twice more. Pour the rice into a strainer to drain.
  • Place the rinsed rice and the 2 cups water in a 2 to 3-quart saucepan. Bring to a boil over high heat, reduce the heat to low, cover and cook for 20 minutes. Turn off the heat and let the rice stand for 10 minutes.
  • In a small pan, heat the vinegar, sugar, mirin and salt over medium heat until the sugar dissolves. Remove from the heat.
  • Turn out the cooked rice into a large wooden or plastic bowl, and pour the vinegar mixture evenly over the rice. Fold the liquid in with a wooden rice paddle. At the same time, fan the rice to bring out the luster of the grains. Continue fanning and folding until the rice absorbs all the liquid. Cover with a damp cloth and let stand until ready to use. It will hold at room temperature for up to 4 hours.

GRILLED PORTOBELLO AND ROASTED PEPPER MAKI SUSHI

2 portobello mushrooms, gills removed, grilled with olive oil, salt and pepper, placed in air tight bowl
2 red bell peppers, roasted, placed in same air tight bowl with portobellos
4 sheets yaki nori
Sushi Rice, recipe follows
8 scallions, grilled with olive oil, salt and pepper
2 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 minced shallot
1/3 cup extra virgin olive oil
4 cups sushi rice (Calrose/short grain)
Water, up to Mount Fuji
1 cup rice wine vinegar
1/4 cup mirin
1/2 cup sugar

Steps:

  • As soon as the portobellos and peppers are cool, slice them in long, thick strips. Save the juices in the bowl. Make sure they are well seasoned. Lay nori, shiny side down on sushi mat and lightly pat on rice on bottom half of nori, 1/4-inch thick. Place mushrooms, peppers and scallions 2/3 up on rice. Roll, moisten end and let rest. In the bowl of juices, whisk in vinegar, mustard and shallots. Lift with oil, season, and check for flavor.
  • PLATING Slice the roll, both straight and on the bias. Drizzle with vinaigrette and serve immediately.
  • Wash rice at least 3 times or until water is clear. Fill rice cooker or casserole with water to about 1-inch over rice. I highly recommend a rice cooker more than 2 billion people use them in Asia for a reason. Slowly heat vinegar, mirin and sugar until very hot but not boiling. Fold in su (vinegar and sugar) with the hot rice, add enough so that the rice has a tart/sweet taste. Rice should be shiny, not mushy. Carefully clean bowl with damp cloth, cover and let rest for 30 minutes.

3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1 teaspoon grated fresh ginger root
1 clove garlic, crushed or to taste
2 teaspoons olive oil
4 (6 ounce) mahi mahi fillets
salt and pepper to taste
1 tablespoon vegetable oil

Steps:

  • In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.
  • Heat vegetable oil in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork. Remove fillets to a serving platter and keep warm.
  • Pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistently. Spoon glaze over fish, and serve immediately.
