4 (1 pound) New York strip steaks, 1-inch thick
2 teaspoons salt
1/4 teaspoon freshly ground black pepper
2 tablespoons vegetable oil
2 sprigs fresh rosemary, cut in half
6 tablespoons butter
1 teaspoon salt
3 sprigs fresh rosemary

Steps:

  • For the steaks: In a baking dish, sprinkle the steaks on both sides with the salt and pepper and drizzle with the oil. Place the rosemary in the dish and allow to marinate on the counter at room temperature for 1 hour, turning the steaks halfway through to infuse all over with rosemary.
  • For the rosemary butter: In a saucepan over medium-low heat, add the butter and salt. Stir to melt the butter and dissolve the salt, then add the rosemary. Continue cooking on low until the butter is fragrant from the rosemary, 10 to 12 minutes. Remove the rosemary and discard.
  • Preheat a grill or grill pan to high heat. Remove the steaks from the baking dish, discard the rosemary and place the steaks directly on the grill. Cook for about 5 minutes on both sides for medium-rare. Remove from the grill and allow to rest under loosely fitted aluminum foil for 10 minutes.
  • Using the direction of the muscles as a guide, thinly slice the meat against the grain into strips and place on a serving dish. Pour the infused butter over the meat and serve.

3 sprigs rosemary, leaves picked and finely chopped
3 cloves garlic, smashed and finely chopped
Pinch crushed red pepper flakes
Extra-virgin olive oil, plus high quality finishing oil, for garnish
2 (20-ounce) porterhouse steaks or other large steaks with a bone
Kosher salt, plus coarse sea salt, for garnish

Steps:

  • In a small bowl, combine the rosemary leaves, garlic, crushed red pepper and enough olive oil to make a loose paste. Slather the steaks with the mixture and sprinkle them generously with salt. Let the steaks hang out outside the fridge to come to room temperature.
  • Preheat the grill to medium-high. Use a wire grill brush to loosen any crud and soot. Wipe the grill down with an oiled side towel to pick up any bits of loosened crud.
  • Put the steaks on a hot spot on the grill to get a great sear and really create BROWN FOOD! Once both sides of the steak are really nice and brown, move the steak to a cooler part of the grill to allow the steaks to cook to desired temperature. About 5 to 6 minutes on each side for medium-rare.
  • Remove the steaks from the grill and let rest for 5 to 10 minutes.
  • Cut the steak off the bone, slice across the grain and divide among 4 serving plates. Drizzle the steak with a little big fat finishing oil and a sprinkling of sea salt.

1 small onion, chopped
1/2 cup dry red wine or reduced-sodium beef broth
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon brown sugar
1/4 teaspoon pepper
2 fresh sage leaves, thinly sliced or 3/4 teaspoon dried sage leaves
1/2 teaspoon salt
1/2 teaspoon minced fresh gingerroot
1 beef flank steak (1 pound)

Steps:

  • In a shallow dish, combine the first 9 ingredients. Score the surface of the beef, making diamond shapes 1/4 in. deep; place in dish and turn to coat. Cover; refrigerate for 8 hours or overnight., Drain and discard marinade. Lightly oil the grill rack. Grill steak, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Let stand for 5 minutes; thinly slice across the grain.

Grilled Rosemary Flank Steak features a simple marinade with soy sauce, honey, garlic and rosemary for a delicious & easy summer meal.

1/2 c. soy sauce
1/2 c. olive oil
4 tbsp honey
6 cloves minced garlic
1 1/2 tsp kosher salt
1 tsp ground black pepper
3 tbsp.minced rosemary
2 1/4 lb flank or skirt steak

Steps:

  • Mix all marinade ingredients in a small bowl or liquid measuring cup. Place flank steak in a large zip lock bag and add the marinade, coating the steak well. Seal bag and refrigerate for 2-8 hours (the longer you marinate, the more flavor you'll have!) Flip the bag a few times while marinating to coat the meat well.
  • Remove meat from refrigerator and place on counter to bring to room temperature for 30-60 minutes. This helps the steak cook more evenly. Next, remove the steak from the bag and discard the marinade. Grill steak 4 minutes per side for medium-rare (or longer, if preferred.)
  • Let meat rest for 5 minutes before cutting into thin slices.

1/2 cup olive oil
4 1/2 tablespoons honey
6 garlic cloves, minced (or more to taste!)
3 tablespoons chopped fresh rosemary
1 1/2 tablespoons fresh coarse ground black pepper
1 1/2 teaspoons salt
2 1/2 lbs flank steaks

Steps:

  • Mix all ingredients except steak in a 13x9x2 inch glass baking dish.
  • Add steak and turn to coat.
  • Cover and refrigerate at least two hours, turning occasionally.
  • Preheat grill or broiler to medium high heat.
  • Remove meat from marinade and discard marinade.
  • Grill steak to desired doneness, about 4 minutes per side for medium rare.
  • Transfer steak to work surface and let stand 5 minutes.
  • Cut across grain into thin strips.
  • Arrange on a platter and serve.

I first had this style of steak at my in-laws. Who knew that a less expensive steak cut could be so easy AND good?

2 lbs flank steaks (bottom round or london broil works well, too)
2 tablespoons McCormick's Montreal Brand steak seasoning (or your favorite salt or spice blend)
3 tablespoons olive oil
1 tablespoon vinegar (any flavor)

Steps:

  • Sprinkle Montreal seasoning evenly over both sides of steak. Using a regular dinner fork, stab the seasoning into the meat-this get the flavor all the way through, and helps tenderize the meat. Use more or less seasoning to your taste.
  • Place steak in a large zip type bag with olive oil and vinegar and let rest for 15 minutes, up to an hour. Turn and massage the oil/vinegar mix around the steak occasionally during this time.
  • Heat grill to medium hot, then remove steak from bag and place steak on grill. Cook for 5-8 minutes per side, depending on thickness and desired doneness of steak.
  • Remove steak from grill and LET IT REST, covered, (resting keeps the steak's juice inside, instead of all over the cutting board!) for at least 15 minutes, then slice steak thinly across grain. Serve immediately.
  • This goes great with pan fries, steamed veggies and a nice green salad.
