GRILLED CORN AND TOMATO SALAD WITH THAI BASIL VINAIGRETTE DRESSING
Steps:
- Preheat a grill to medium-high heat.
- Salad: Peel back the corn husks, but do not remove them completely. Carefully pick off and discard the wispy silk threads that are attached to the corn. Pull the husks back over the ears and tie the ends closed with kitchen twine. Soak the corn in large bowl of cold water for 10 minutes. Drain the water, shake off the excess and put them on the grill for 15 minutes, turning every 3 to 4 minutes until the corn is tender. Remove them from the grill and let the ears cool to room temperature.
- Vinaigrette: While the corn is cooling, prepare the dressing. Puree all the ingredients, except the canola oil, in a blender or food processor. After the mixture is well incorporated, slowly drizzle in the canola oil while the processor is still running. Blend for 30 seconds, then transfer the dressing to a bowl.
- Assembly: Once the corn has cooled, cut the kernels off the cobs into a medium bowl and discard the cobs. Add the red onion and grape tomatoes and mix to combine. Drizzle in 1/2 cup of the Thai Basil Vinaigrette Dressing while lightly tossing the salad together. Reserve the remaining dressing. Gently stir in the basil leaves. Season the salad with salt and pepper to taste, and add more dressing, if desired. Serve slightly chilled on serving plates, using a slotted spoon to keep excess liquids in the bowl.

- Combine mushrooms, tomato, oil, vinegar and garlic in a medium bowl.
- Cook mushrooms and tomatoes on heated oil grill plate (or grill on the b-b-q until browned lightly and heated through.
- Meanwhile, make balsamic vinaogrette - put ingredients into screw top jar, put on lid and shake well.
- Divide mushrooms among plates; top with tomato and basil and drizzle with vinaigrette.

- Prepare the barbecue (medium-high heat).
- Drizzle 3 tablespoons of olive oil over both sides of the mushrooms. Sprinkle the mushrooms with salt and pepper. Drizzle olive oil on grill pan to prevent mushrooms from sticking. Grill until the mushrooms are heated through and tender, about 5 minutes per side.
- Meanwhile, whisk the extra-virgin olive oil and garlic in a medium bowl to blend. Add the tomatoes, cheese, and basil and toss to coat. Season the tomato salad, to taste, with salt and pepper.
- Place 1 hot grilled mushroom gill side up on each of 4 plates. Sprinkle with more salt and pepper. Spoon the tomato salad atop the mushrooms, drizzle with extra-virgin olive oil to finish, about 1 tablespoon and serve.

- Cook pasta according to package directions.
- While pasta is cooking, melt butter in a pan and saute garlic and onions until golden brown (If using powders add with tomato).
- Once garlic and onions are golden brown, pour in olive oil (enough to cook with) and add chopped mushrooms and saute until browned.
- Toss in the tomato (and garlic and onion powders if in a hurry) along with the red pepper flakes and cook until properly done, stirring occasionally.
- Add torn baby spinach and Parmesan cheese and toss until evenly distributed and spinach is wilted. Once pasta is cooked, drain and toss in with veggie mix.
- Stir until everything is sufficiently mixed up. Serve immediately with extra Parmesan for sprinkling.

- Prepare barbecue (medium-high heat). Combine oil and garlic in large bowl. Place vegetables on baking sheet. Brush with garlic oil; sprinkle with salt and pepper.
- Grill vegetables until slightly charred and just tender, turning often, about 10 minutes. Transfer vegetables to work surface. Cut corn from cob. Cut remaining vegetables into cubes. Toss all vegetables and basil in bowl with garlic oil. Season with salt and pepper.
