2 bone-in skin-on chicken breast halves (about 1 1/4 lb)
1/4 cup dry red wine or nonalcoholic wine
1 tablespoon olive oil
1 teaspoon Italian seasoning
1 clove garlic, finely chopped

Steps:

  • Place chicken in shallow glass dish or plastic bag. In small bowl, mix remaining ingredients; pour over chicken. Cover; refrigerate at least 1 hour to marinate but no longer than 6 hours.
  • Heat gas or charcoal grill. Remove chicken from marinade; reserve marinade. Place chicken, bone sides down, on grill. Cover grill; cook over medium heat 10 to 20 minutes. Turn chicken; cover grill. Cook 15 to 20 minutes longer, turning and brushing 2 or 3 times with marinade, until juice of chicken is clear when thickest part is cut to bone (170°F).

pam no-stick grilling cooking spray
3 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 tablespoon dried Italian seasoning (I sometimes use a Middle Eastern spice mix called Bhaharat that I received in a "B" swap)
1 teaspoon garlic salt
1/4 teaspoon ground black pepper
4 boneless skinless chicken breasts

Steps:

  • Coat grill pan with no-stick cooking spray. Heat over medium heat.
  • Combine olive oil, lemon juice, Italian seasoning, garlic salt, and pepper, in a medium microwavable bowl. Microwave on HIGH for 1 minute. Stir. Dip chIcken in olive oil mixture to coat evenly.
  • FOR INSIDE COOKING: Place on hot grill pan. Cook 6-8 minutes per side until juices run clear and thermometer reads 165 degrees. Allow to rest 5 minutes before serving.
  • FOR OUTDOOR GRILL: Coat unheated grill grate with no-stick cooking spray. Preheat grill to medium-high heat. Grill chicken 6-8 minutes per side until juices run clear and thermometer reads 165 degrees F. Allow to rest 5 minutes before serving.

2 lbs chicken breasts (cut to similar sizes)
1/2 cup Italian dressing
1 tablespoon olive oil
2 tablespoons lemon juice
2 garlic cloves (crushed)
1 shallot (minced)
1/2 teaspoon pepper (cracked)
1/2-1 teaspoon hot sauce

Steps:

  • Mix marinade ingredients and place chicken and marinade in a gallon ziplock bag.
  • Marinate 30 mins to 24 hours.
  • Preheat grill to med high.
  • Grill breasts for 3 to 4 mins per side or till juices run clear and chicken reached 155 degrees.
  • Remove from grill and wrap in foil. Let sit about 5 minutes Chicken will continue to cook to 160.
  • You should know your grill. Chicken may take a little longer to cook or it may take less time. The sitting is critical to the chicken staying moist.
  • Enjoy.

4 boneless skinless chicken breasts, whole
1/2 cup Wish Bone Italian salad dressing
2 teaspoons steak sauce, A1
1 teaspoon garlic salt
1 teaspoon extra virgin olive oil
1 pinch lemon pepper
1 pinch oregano
1 pinch salt
1 pinch pepper

Steps:

  • Place chicken in plastic bag. Mix all other ingredients then pour in bag over chicken. Let stand in fridge overnight, stirring occasionally.
  • Place chicken on grill grate brushed with oil. Flip chicken once after 10 minutes, halfway through cooking time.
  • Remove chicken from grill when chicken is no longer pink inside.

4 chicken breast fillets
3 tablespoons lemon juice
1 teaspoon salt
1 1/2 teaspoons finely chopped garlic
1 teaspoon crushed red pepper flakes
1/3 cup olive oil
1 1/2 teaspoons dried oregano
2 tablespoons chopped fresh parsley

Steps:

  • Place chicken in bowl; return to refrigerator. In a seperate bowl mix together lemon juice, salt, garlic and red pepper; gradually whisk in olive oil. Stir in dried oregano. Pour marinade over chicken to coat. Cover and refrigerate at least one hour, turning chicken occasionally. Preheat grill to medium-hot. Remove chicken from marinade and discard. Grill until tests done.
