BARBECUE CHICKEN FOIL PACKETS
Tender bbq chicken, potatoes and loads of bacon and cheddar make the perfect summer meal on the grill!

Steps:
- Preheat grill to medium high heat.
- Prepare foil packets. Lay out 4 large pieces of heavy duty foil then top each with a large piece of parchment paper (or spray with non stick spray).
- Place equal amounts of sliced potatoes and onions in the middle of each packet. Drizzle with oil and sprinkle with seasoning salt and pepper.
- Place a chicken breast on top of potatoes. Brush each side of each chicken breast with barbecue sauce.
- Wrap up each foil packet by bringing two sides together and rolling it up. Then roll up each open end to seal the packet.
- Place on hot grill and cook (potatoes down) for about 25 minutes or until potatoes are tender and chicken is cooked through (chicken should be 165°F).
- Cut open packet, brush chicken with more barbecue sauce if desired and top with cheddar cheese and bacon bits. Place back on grill (do not reseal) to melt about 5 minutes.
- Garnish with sour cream and chives.

- Preheat grill to medium-high heat or the oven to 425 degrees F. Cut four 18 x 12-inch squares of foil* and layout on a flat surface. Place one chicken breast in the middle of each piece of foil and divide the vegetables evenly into each packet. arranging them around the chicken.
- Drizzle the chicken and vegetables with oil and season with salt and pepper to taste.
- In a bowl, whisk together the barbecue sauce, sweetener, vinegar, chili powder, and smoked paprika. Brush sauce on both sides of the chicken, reserving enough for later. Sprinkle with half of the chopped parsley.
- Fold the foil over the chicken and seal to close off the packets.

- Preheat a grill for medium heat.
- Melt butter in a skillet over medium heat. Add the garlic, and cook until fragrant, 1 to 2 minutes. Whisk in honey and lemon juice. Reserve half for basting, and brush the other half onto the chicken breasts.
- Lightly oil the grill grate, and place chicken on the grill. Cook for 6 to 8 minutes per side, turning frequently. Baste often during the last 5 minutes. Chicken is done when the meat is firm, and juices run clear.

- Preheat outdoor grill to medium-high heat according to manufacturer's directions. Place four 18x2-inch pieces of heavy foil on counter. Spray each with cooking spray. For each packet, spread a generous teaspoon barbecue sauce in center. Place 1/2 cup potatoes in single layer over sauce. Spoon another teaspoon sauce over potatoes.
- Top potatoes with chicken. Spoon 1 teaspoon sauce over each breast. Top each with 1/4th bell pepper, onion and black pepper. Bring up short sides of each foil packet and double fold top. Double fold both ends to seal each packet, leaving space for steam to gather.
- Place packets on grate of covered grill. Gril 15 to 20 minutes or until chicken is no longer pink in centers (165°F) and potatoes are tender. Carefully open packets; sprinkle 1/4th cheese on top of each breast. Close foil and let stand 2 minutes or until cheese melts.
- COOK'S TIPS:.
- Packets may be baked in shallow pan in 425°F oven 20 minutes or until chicken is no longer pink in centers and potatoes are tender.
