4 chicken drumsticks
olive oil as needed
1 (1 ounce) package ranch dressing mix
1 pinch cayenne pepper, or to taste
salt and ground black pepper to taste

Steps:

  • Place chicken drumsticks into a resealable bag; add olive oil to coat. Add ranch dressing mix, cayenne pepper, salt, and black pepper. Close the bag and mix until drumsticks are covered. Let marinate in the refrigerator, 30 minutes to 1 hour.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Remove chicken from the bag; discard marinade.
  • Cook on the preheated grill until an instant-read thermometer inserted into a drumstick reads at least 165 degrees F (74 degrees C), 20 to 25 minutes. Remove from the grill and let sit for 5 to 10 minutes before serving.

1 yellow onion, chopped
½ white onion, chopped
5 cloves garlic, sliced
16 chicken drumsticks
3 tablespoons chopped fresh cilantro
2 teaspoons dried oregano
2 teaspoons ground cumin
2 teaspoons ground thyme
1 teaspoon garlic powder
salt and ground black pepper to taste
2 large lemons

Steps:

  • Mix yellow onion, white onion, and garlic together in a bowl.
  • Season chicken drumsticks with cilantro, oregano, cumin, thyme, garlic powder, salt, and pepper. Place chicken into the bowl with onion mixture. Squeeze lemon juice over the chicken, slice the rinds, and place into the same bowl. Cover and let sit in a refrigerator, 20 to 24 hours.

  • Bring wine, sugar, soy sauce, ginger, and garlic to a boil in a saucepan.

  • Using a sharp knife, make three diagonal slashes through the skin and flesh on both sides of each drumstick (this will help the flavors permeate the meat).

¼ cup brown sugar
6 garlic cloves, minced
1 tablespoon onion powder
2 teaspoons smoked paprika

¼ cup olive oil

1/3 cup Steve's Basic BBQ Rub
1 cup BBQ sauce

Steps:

  • Heat the grill to 350F.
  • Toss the chicken drumsticks in Steve's Basic BBQ Rub. Place on the grill and cook for 10 minutes. Keep the lid closed as much as possible, but watch for any flare ups. If there is a flare up, turn down the heat and more the chicken away from the flame.
  • Use tongs to turn the drumsticks over and cook another 10 minutes.
  • Brush with BBQ sauce and flip the drumsticks again. Cook for 5 more minutes, or until the internal temperature of the drumsticks is at least 165F (I prefer chicken drumsticks to have an internal temperature around 180F)
  • Remove from the grill and brush one more time with BBQ sauce. Serve.

Steps:

  • Preheat grill to 350°F.
  • Sprinkle chicken drumsticks with salt and pepper so all sides are covered evenly.
  • Lower the grill heat to low. It'll hover between 325°F-350°F.
  • Place drumsticks on the grill in an interlocking pattern to ensure they are all relatively centered in the grill. Use two rows if necessary.
  • Shut the grill cover and quarter turn the drumsticks every 10 minutes.
  • Start basting the chicken with the barbecue sauce about 40 minutes in once all sides have been turned. Do this several times and continue to turn the chicken so all sides are covered. See Note.

  • Make the chicken: Combine the brown sugar, chili powder, paprika and cumin in a small bowl. Season the chicken all over with 1 tablespoon salt and 1 teaspoon pepper, then rub all over with the spice mixture. Cover and refrigerate 1 to 2 hours.
  • Meanwhile, make the barbecue sauce: Whisk the ketchup, vinegar, brown sugar, orange juice, garlic, molasses, hoisin sauce, mustard and chili powder in a small saucepan until smooth. Bring to a boil, then reduce the heat to a simmer and cook until slightly thickened, 10 to 15 minutes. (You should have 1 1/4 to 1 1/2 cups sauce.)
  • Remove the chicken from the refrigerator 30 minutes before grilling. Preheat a grill to medium and oil the grates.   • Preheat grill to get a surface temp of about 450°. That is medium-high on a standard gas grill and medium on a hot gas grill. Clean and oil.
  • Pat dry the drumsticks. Trim off excess skin and any loose bones/tissue especially in the joint area.
  • Season to taste. You can use my 7:2:2 spice mix. A little cayenne is nice. You may want to skip the cayenne if cooking for little ones. Or use the seasoning of your choice.
  • Let rest at room temperature until grill is ready.

1 lb. chicken legs (~6 legs)
2 tablespoons garlic powder
2 teaspoons onion powder
2 teaspoons coconut sugar
1 teaspoons paprika
1 teaspoon chili powder
1/2 teaspoon ground chipotle powder
1/4 teaspoon ground cinnamon
1/4 teaspoon ground mustard seed
1/2 teaspoon table salt
1/4 teaspoon ground pepper
Optional: 1/2 cup bbq sauce, for serving

Steps:

  • Preheat grill to 425ºF.
  • Then, prepare chicken dry rub by mixing together all of the spices in a small bowl. You should get around 4.5 tablespoons of dry rub.
  • Prep chicken legs (leave the skin on) by fully coating each leg with 1-2 teaspoons of dry rub. Use your hands to pat the spices into each part of the leg and make sure that every part is fully coated. You may have leftover dry rub. This is okay! Store it in an airtight container for up to 3 months.
  • Spray your grill grates with nonstick cooking spray (or rub with olive oil) and then grill chicken legs over direct heat at 425ºF (medium-high heat) for around 15-20 minutes or until the legs have reached an internal temp of 160ºF - 165ºF. Rotate the legs every 5 minutes.
  • Remove chicken legs from the grill and let rest for 5 minutes before eating.
  • Eat chicken legs as is or rub them with bbq sauce.

6 Lute leg
1 tsp black pepper powder
1 piece ginger
1 tablespoon Cooking Wine
1 tablespoon Soy sauce
1 tsp salt
a little olive oil

Steps:

  • Clean the lute legs
  • With the help of scissors and a sharp knife, cut to the end with one cut on the back of the chicken leg
  • Gently pull the mucous membrane that connects the flesh and bones, you can easily remove the bone
  • Take a pat on both sides of the back of the knife to make it easier to taste
  • Put the boned chicken legs into a bowl
  • Add soy sauce
  • Add other seasonings and stir evenly to marinate for more than 2 hours
  • Put the marinated chicken thighs in a baking tray lined with greased paper
  • Put the chicken drumsticks in the preheated 200°C oven, skin side down, turn over after 15 minutes, bake the skin side up for 10 minutes
