Steps:

  • In a large bowl, whisk eggs and cream; stir in the ham, onion, salt and pepper. In a large skillet, heat butter over medium heat. Add egg mixture; cook and stir until almost set. Stir in cream cheese. Cook and stir until completely set.

  • Grease a medium-sized, microwave-safe bowl or deep dish with olive oil or butter.
  • In a separate bowl, add all ingredients and beat until well blended. Pour into the microwave-safe bowl.

3 tablespoons milk, or more to taste
¼ teaspoon seasoned salt (such as Season-All®)
salt and ground black pepper to taste
¼ cup olive oil
1 jalapeno pepper, seeded and minced
½ cup chopped deli slices applewood-smoked ham
1 cup finely shredded Cheddar cheese, divided

Steps:

  • Beat eggs, milk, seasoned salt, salt, and black pepper together in a bowl.
  • Heat olive oil in a large non-stick skillet over medium-high heat; saute jalapeno in hot oil until slightly softened, 2 to 3 minutes. Add ham to jalapeno and cook until heated through, about 1 minute.

1/2 cup fresh spinach greens, washed and dried
1/4 cup smoked ham, diced
1/8 cup scallions, chopped
3 eggs, whisked
1 heaping tablespoon Spinach Pesto, recipe follows
Salt and freshly cracked black pepper
1 1/2 cups packed fresh spinach greens, washed and dried
1/4 cup fresh basil leaves
4 cloves roasted garlic, chopped
1/4 cup grated Parmesan, optional
1 cup extra-virgin olive oil
Salt

Steps:

  • Heat the butter in a medium skillet over medium-high heat. Add the spinach, ham, and scallions to the skillet, stirring with a wooden spoon to combine. Cook for 2 minutes, and then pour the eggs over the spinach mixture. Allow the eggs to begin to set, and then add pesto, salt, and pepper. Stir together until eggs are cooked evenly. Serve with favorite breakfast accompaniments.
  • Add the spinach, basil, garlic, and cheese, if using, to a food processor and begin to pulse on low speed. Slowly add the olive oil while the processor is running. Pulse until the ingredients are blended into a smooth sauce, being careful not to overmix. Season, to taste, with salt.

1/2 cup prepared salsa verde (see Mexican Green Sauce With Tomatillos and Avocado (Salsa Verde))
4 -6 eggs
2 -3 tablespoons diced ham or 2 -3 tablespoons chorizo sausage
2 teaspoons extra-virgin olive oil
salt and pepper
snipped fresh cilantro, to garnish
fresh soft tortilla, warmed (optional, to serve)

Steps:

  • Heat olive oil in a medium-sized skillet over medium heat. Add the diced ham or chorizo and saute briefly until lightly browned.
  • Stir in the salsa verde and cook until hot.
  • Crack the eggs directly into the pan with the sauce (no need to whisk first). Stir the mixture with a spatula to mix in the sauce and to lightly scramble the eggs.
  • Cook gently over medium-low to medium heat, stirring and scraping the bottom of the pan with a wooden spoon. Season to taste with salt and pepper.
  • Remove from heat when the eggs begin to set, but are still moist, about 3 minutes.
  • Sprinkle with snipped fresh cilantro, to garnish. Serve immediately.
  • Good with a side of warmed fresh soft tortillas.

Add half of the ham and potatoes; saute 2-3 minutes longer. , Meanwhile, in a blender, combine the eggs, sour cream, milk, onion salt, garlic salt and pepper.   • Melt the butter in a skillet over medium heat. Cook the onion, garlic scapes, and ham in the melted butter until the onion is tender, about 5 minutes.
