Bacon Wrapped Green Bean Bundles are loaded with a herby, buttery flavor and a hint of sweetness! They can easily be made to suit dairy-free, low carb, paleo, and Whole30 diets. They're also naturally gluten-free!

1 1/2 pounds thin fresh green beans (haricot verts or french green beans work best))
6 slices bacon (cut in half (do not use thick-cut bacon))
1/4 cup butter (melted)
1/2 teaspoon garlic powder
1/2 teaspoon salt
2-4 Tablespoons brown sugar
1/2 teaspoon black pepper
1 Tablespoon fresh rosemary (finely chopped)
1 Tablespoon chopped parsley (optional)

Steps:

  • Preheat oven to 400 degrees F. Line baking sheet with parchment paper or foil for easy cleanup. Separate the bacon slices and lay flat on the baking sheet. Bake for 8 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Cook the green beans for 2 minutes, just until they are bright green and slightly tender. Drain and rinse with cold water for 1 minute immediately or put in ice bath. Pat dry.
  • Combine butter, garlic powder, and salt in a small bowl. Pour over green beans, tossing to coat.
  • Wrap 8-10 green beans into a bundle with half a piece of bacon, securing with a toothpick. Lay on the baking sheet and repeat until all of the beans are wrapped. Combine brown sugar, pepper, and rosemary. Sprinkle over the bundles.
  • Bake for 15-20 minutes until the bacon is crispy and the green beans are tender. Sprinkle with chopped parsley.

1 1/2 pounds thin green beans or haricots verts, trimmed
4 tablespoons unsalted butter
1 sprig oregano, plus 1 1/2 teaspoons finely chopped oregano leaves
1/4 teaspoon red pepper flakes, plus more for topping
Flaky salt, for topping

Steps:

  • Bring a large pot of salted water to a boil. Add the green beans and cook until crisp-tender, about 2 minutes; drain and transfer to a bowl of ice water. Let cool, then drain.
  • Melt the butter in a large pot over medium heat. Add the oregano sprig and red pepper flakes. Cook, swirling the pot, until the butter is browned, 5 to 7 minutes. Add the green beans and 3/4 teaspoon kosher salt. Continue to cook, tossing, until the green beans are glazed, 2 to 3 minutes. 1 pound thin green beans or haricot verts, trimmed
24 long, thin slices red bell pepper
8 long, thin scallions
2 tablespoons butter
2 cloves garlic, peeled
1 tablespoon extra-virgin olive oil
1/4 teaspoon flaked sea salt, such as Maldon
Freshly ground pepper to taste

Steps:

  • Bring 1 inch of water to a boil in a large pan fitted with a steamer basket. Steam green beans and bell pepper until tender-crisp, 3 to 5 minutes. Trim whites off scallions and place the 8 long greens on the vegetables in the steamer during the last minute of cooking to soften. Transfer the vegetables to a large plate. Divide the beans into 8 portions (10-14 beans each). To make a bundle, lay a scallion green on your work surface and place 1 portion of beans and 3 pieces bell pepper across it. Wrap the green around the vegetables and tie a knot to secure the bundle. Transfer to a serving platter. Repeat with the remaining vegetables. Melt butter in a small skillet over medium heat; smash garlic flat, add to the pan and cook, swirling often, until the butter is nutty brown, 2 to 4 minutes. Discard the garlic. Stir in oil. Serve the bundles drizzled with the butter and sprinkled with salt and pepper.

These are the best green bean bundles I have ever tasted. I make them every Thanksgiving and for parties, everone raves about them. It certainly isn't the healthiest, but is the tastiest! I got the recipe from a friend of a friend-so not sure where it orginated. They are time consuming to make, and you have to plan ahead but I promise you they are well worth it!

10 slices bacon
1 cup brown sugar
1 cup melted butter
1/2 teaspoon garlic salt
1 dash soy sauce
toothpick

Steps:

  • Cut bacon into thirds.
  • Wrap 8-10 beans in a piece of bacon and secure with toothpick.
  • Place in 9 X 13 casserole.
  • Cover with marinade of brown sugar, butter, garlic salt, and soy sauce.
  • Refrigerate overnight.

1 head garlic
1 tablespoon olive oil
1 stick unsalted butter
2 shallots, thinly sliced
2 pounds green beans, cleaned and blanched
1/2 cup sliced almonds, toasted
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F
  • Cut off the top of the garlic head and discard. Put the garlic on a square of aluminum foil and drizzle with the olive oil. Wrap the foil around the garlic, put in the oven and roast for 50 minutes. Remove from the oven and set aside to cool to room temperature. Once cooled, remove the garlic from the foil and squeeze the garlic head, cut side down, over a small bowl until all of the roasted garlic cloves pop out. Mash the pulp with a fork and set aside.
  • In a large skillet over medium-high heat melt the butter and cook until it begins to foam, turn light brown and acquire a nutty aroma. Turn the heat to low, add the shallots, and cook for 2 minutes. Add the green beans, roasted garlic, and almonds, and season with salt and pepper, to taste. Transfer the beans to a serving bowl and serve immediately.

3/4 lb fresh green beans, cut in half
2 tablespoons butter (do not use margarine or vegetable oil spreads)
2 tablespoons chopped pecans
1 teaspoon grated lemon peel

Steps:

  • In 2-quart saucepan, place beans in 1 inch of water. Heat to boiling. Boil uncovered 6 to 8 minutes or until crisp-tender (they shouldn't be "squeaky" when you bite into one); drain. Keep warm.
  • Meanwhile, in 1-quart saucepan, melt butter over low heat. Be careful not to let butter burn or it will taste bitter. Stir in pecans. Heat, stirring constantly, until butter is golden brown. (If bottom of saucepan is dark, it may be difficult to see the difference between brown butter and burnt butter. Try spooning a little of the butter onto a white plate to see the color more clearly.) Immediately remove from heat. Pour butter mixture over beans; toss to coat. Sprinkle with lemon peel.

10 slices bacon
1 pound fresh green beans
1 cube beef bouillon
4 tablespoons Worcestershire sauce
2 teaspoons soy sauce
2 tablespoons butter
2 tablespoons brown sugar
½ teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until partially cooked. Drain, cut each piece in half, and set aside.
  • Bring a large pot of water to a boil. Place the green beans on a rack or special steamer basket over the boiling water. Cover with a lid so that the steam does not escape. Steam for a few minutes until the green beans are done. Set the green beans aside. Reserve about 2 cups of the water and dissolve the bouillon cube in it.
  • Take a bundle of green beans (4 or 5) and wrap them with a piece of bacon. Secure with a toothpick if necessary. Place the bundles in a shallow baking dish.
  • In a saucepan over medium heat, combine the reserved stock with the Worcestershire sauce, soy sauce, butter, brown sugar, and garlic powder. Stir until the sugar is dissolved.

1 lb fresh green beans (adjust to your yield requirements)
5 slices bacon (I like to use maple bacon)
1 teaspoon butter
3 teaspoons butter (for the sauce)
1/4 cup brown sugar (Packed)
1/2 teaspoon garlic salt
1/2 teaspoon soy sauce
15 toothpicks

Steps:

  • Preheat oven to 400.
  • Boil green beans in large pot till tender. IMPORTANT: green beans need to stay long. Meanwhile, fry the bacon in a skillet over med-low heat. You want the bacon to cook 'soft'. Do not 'crisp' the bacon. Place aside on paper towels to cool and reduce grease. Then cut the strips into halves.
  • After beans have been drained, place the 1 tsp butter on the hot green beans and let melt, then mix. In a large 3x9x2 pan lay one of the 'half' pieces of bacon and place several beans (about 6-7) then wrap the bacon around the bundle of beans and secure with a toothpick. Continue doing this till the beans are gone.
  • Next, melt the 3 tsp of butter in small sauce pan. add brown sugar, garlic salt and soy sauce and mix continuously while cooking over med heat. Once completely blended, brush over the bundles with a 'cooking' brush until mixture is gone.
  • Bake in the oven for 10-15 minutes.
