6 whole eggs
3 tablespoons skim milk
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1/2 cup spinach leaves (chopped or torn)

Steps:

  • Gather the ingredients.
  • Heat a large skillet over medium-high heat and coat it well with cooking spray. If you prefer, use a nonstick skillet for easier cleanup later.
  • Crack the eggs into a medium-sized dish. Using a wire whisk, beat the eggs and break up the yolks completely.
  • Add the milk to the egg mixture, followed by the salt and ground black pepper. Whisk the mixture together well.
  • Pour the egg mixture into the heated pan, using a fork to stir the egg mixture continuously as it cooks. (If you are using a nonstick skillet, stir the eggs with a wooden spoon or silicone tool since a fork can scratch the pan's surface.)
  • When the eggs begin to take form, add the spinach to the pan.
  • Continue cooking the eggs and spinach until the spinach wilts and the eggs are no longer runny, about 2 minutes.

Fresh dill, tangy Greek yogurt, and feta amp up everyday scrambled eggs.

1 teaspoon olive oil
4 large eggs
2 tablespoons Greek yogurt
1/8 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1 tablespoon chopped fresh dill plus a couple of sprigs for garnish (if desired)
2 tablespoons crumbled feta cheese

Steps:

  • Add olive oil to a large non-stick saute pan over medium heat.
  • In a medium bowl, whisk together the eggs, yogurt, salt, pepper, and chopped dill until well-blended.
  • Pour the eggs into the pan and cook, stirring frequently, until fluffy, solid, and no longer runny, 4-5 minutes. Add feta and combine.
  • Remove from heat and serve immediately, topped with with sprigs of fresh dill, if desired.

2 cups spinach or other greens
1 garlic clove (pressed)
4 large eggs
1/4 cup plain Greek yogurt
sea salt flakes (to serve)
black pepper (to taste)

Steps:

  • Heat the olive oil in a small skillet over medium heat. Add the spinach and sauté for 4-5 minutes, until they start to wilt.
  • Add in the pressed garlic and cook another 30 seconds or so, reducing the heat to low
  • Whisk together the eggs and Greek yogurt and pour the egg/yogurt mixture over the greens. Don't forget to season with a bit of salt and pepper.
  • To cook the eggs, stir frequently to form small curds, you need about 8-10 minutes.
  • You can garnish with sea salt flakes or add a white cheese such as feta or goat's cheese.

2 large, ripe, firm tomatoes
2 tablespoons extra-virgin olive oil
1 garlic clove, finely chopped (optional)
1 tablespoon fresh or dried mint or oregano
4 large eggs, slightly beaten
1/2 cup grated Greek kefalotyri or feta cheese
Salt and pepper, to taste

Steps:

  • Lop off a dime-size piece of the base of the tomato using a sharp knife. Grate the tomato from the base along the coarse side of an upright hand grater.
  • In a 10-inch frying pan over medium heat, warm the olive oil and add the garlic. Cook for a minute or so, careful not to burn. Add the tomatoes. Cook them until all their water has cooked off and all that's left is thick pulp, about 10 minutes.
  • Pour in the eggs and herbs. Season with salt and pepper. Stir all together with a wooden spoon. Remove when the eggs are cooked to desired doneness, anywhere between 5 and 8 minutes.
  • Transfer to serving plates and sprinkle with grated Greek kefalotyri cheese.

3 tomatoes , halved
4 large eggs
4 tbsp natural bio yogurt
⅓ small pack basil , chopped
175g baby spinach , dried well (if it needs washing)

Steps:

  • Heat 1 tsp oil in a large non-stick frying pan, add the tomatoes and cook, cut-side down, over a medium heat. While they are cooking, beat the eggs in a jug with the yogurt, 2 tbsp water, plenty of black pepper and the basil.
  • Transfer the tomatoes to serving plates. Add the spinach to the pan and wilt, stirring a few times while you cook the eggs.
  • Heat the rest of the oil in a non-stick pan over a medium heat, pour in the egg mixture and stir every now and then until scrambled and just set. Spoon the spinach onto the plates and top with the scrambled eggs.
