Steps:
- Gather the ingredients.
- Heat a large skillet over medium-high heat and coat it well with cooking spray. If you prefer, use a nonstick skillet for easier cleanup later.
- Crack the eggs into a medium-sized dish. Using a wire whisk, beat the eggs and break up the yolks completely.
- Add the milk to the egg mixture, followed by the salt and ground black pepper. Whisk the mixture together well.
- Pour the egg mixture into the heated pan, using a fork to stir the egg mixture continuously as it cooks. (If you are using a nonstick skillet, stir the eggs with a wooden spoon or silicone tool since a fork can scratch the pan's surface.)
- When the eggs begin to take form, add the spinach to the pan.
- Continue cooking the eggs and spinach until the spinach wilts and the eggs are no longer runny, about 2 minutes.

- Remove from heat and serve immediately, topped with with sprigs of fresh dill, if desired.

- Heat the olive oil in a small skillet over medium heat. Add the spinach and sauté for 4-5 minutes, until they start to wilt.
- Add in the pressed garlic and cook another 30 seconds or so, reducing the heat to low
- Whisk together the eggs and Greek yogurt and pour the egg/yogurt mixture over the greens. Don't forget to season with a bit of salt and pepper.
- To cook the eggs, stir frequently to form small curds, you need about 8-10 minutes.

- Lop off a dime-size piece of the base of the tomato using a sharp knife. Grate the tomato from the base along the coarse side of an upright hand grater.
- In a 10-inch frying pan over medium heat, warm the olive oil and add the garlic. Cook for a minute or so, careful not to burn. Add the tomatoes. Cook them until all their water has cooked off and all that's left is thick pulp, about 10 minutes.

- Scoop the cottage cheese into the middle of a non-stick skillet. Toss the frozen spinach on top of it and cover with a lid. Cook on medium heat until the cottage cheese starts to melt and the spinach is thawed, approximately 6-8 minutes. Stir occasionally.
