GREEK STYLE POTATOES

Greek Style Potatoes image

Greek Style Potatoes is a simple recipe, and the closest I can get to the real thing. The best is that it can be adjusted to your taste as you bake it. I sometimes add a little more lemon. The potatoes are moist, and great with green beans and baked chicken with a little salsa and feta on top.

CRISPIEST GREEK LEMON POTATOES RECIPE (PATATES LEMONATES)

Crispiest Greek Lemon Potatoes Recipe (Patates Lemonates) image

Best Greek lemon potatoes recipe! Crispy on the outside, fluffy on the inside with yummy lemon-y flavor. All the secrets to roast the perfect Greek potatoes

Provided by Eli K. Giannopoulos

Categories     Sides

Time 1h30m

Yield 6

Number Of Ingredients 8

7 large potatoes (maris piper)
3 cloves of garlic, minced
150ml olive oil (3/4 cup)
150ml water (3/4 cup)
1 tablespoon dried oregano
juice of 2 lemons
1 teaspoon semolina
salt and freshly ground pepper

Steps:

  • Preheat the oven to 200C / 400F
  • To prepare these extra crispy Greek lemon potatoes, cut the potatoes into wedges and place them on a large metal roasting pan. Into a bowl add the remaining ingredients (including the semolina and the 150ml of water) and blend; pour the semolina-lemon mixture over the potatoes and season well with salt and pepper.
  • Bake for 40 minutes, until a nice golden crust has formed on the potatoes; turn them out of the oven, toss them a little bit to bring them upside down, sprinkle with a pinch of oregano and put back into the oven for another 30-40 minutes. If all of the liquid has been absorbed and the pan appears to be getting dry, add 1/4-1/2 of a cup hot water into the pan or some extra lemon mixture, before they have fully browned
  • The secret for these extra crispy Greek lemon potatoes is to sprinkle the potatoes with some semolina, as it helps to form a nice golden crust around them. Don't be afraid of over baking them- they will become even more delicious!

GREEK POTATO SKINS

Greek Potato Skins image

You can do most of this recipe ahead, have your skins ready and baked the first 5 minute baking and have your cheese mixture ready and in the fridge. Continue on to the last steps just before serving. These go over well with sports fans, however I think you'll want to make more than 32!

Provided by Bergy

Categories     Potato

Time 1h30m

Yield 32 skins

Number Of Ingredients 7

3 medium potatoes, scrubbed
olive oil
4 ounces feta cheese, crumbled
1 1/2 teaspoons oregano
1/2 teaspoon basil

  • Cool potatoes slightly, cut in half, lengthwise and scoop out the pulp leaving a 1/4" shell (reserve pulp for another use) Cut skins in half lengthwise again and then cut in half crosswise (you'll have 32 pieces) Brush skins generously with with oil.
  • Bake 5 minutes.
  • Combine the remaining ingredients and top the skins with the cheese mixture.
  • Drizzle with a little oil and broil for 2-3 minutes until cheese is bubbly.

STUFFED POTATO SKINS

Stuffed Potato Skins image

Creamy cheesy fluffy potatoes with crispy bacon - all baked in a crunchy potato skin. These Stuffed Potato Skins are serious comfort food.

Provided by Nicky Corbishley

Categories     Appetizer

Time 1h25m

Number Of Ingredients 9

8 small floury potatoes - such a Maris Pipers
1 tbsp vegetable oil
7 oz (200g) pancetta cubes (or bacon lardons)
2 tbsp double/heavy cream
2 tbsp salted butter
1 pinch of salt and pepper
1 3/4 cups (175g) of your favourite cheese (I used a mix of 75% mature chedder and 25% red Leicester, grated)
4 tbsp soured cream
4 spring onions (scallions) (chopped)

Steps:

  • Preheat your oven to 190c. Prick your potatoes with a fork and start them off in the microwave. Put all the potatoes in the microwave and microwave on high for 10 minutes (alternatively you can add 20 minutes to the cooking time in the oven).
  • Put your potatoes in the oven, directly on the shelf and cook for 35-45 minutes until they're crisp on the outside and soft on the inside (you can check this by stabbing a knife into one of the potatoes to see if it slides in easily).
  • Meanwhile, heat the oil in a small frying pan/skillet over a medium-high heat. Cook the pancetta cubes for 5-6 minutes, until crispy. Remove from the pan.
  • When your potatoes are ready, take out of the oven and chop each of the potatoes in half. Pick up a potato half (using a tea towel to protect your hands) and using a spoon, scoop out the insides into a large bowl. Repeat with the rest of the potatoes.
  • Add the cream, butter and salt & pepper to the bowl and mash using a potato masher or a fork until the potato is fluffy.
  • Add in the pancetta and cheese (reserving a small handful for sprinkling on top). Mix together.
  • Take one of the potato skins and put a spoonful of the potato mix inside. Put the potato in a baking dish and sprinkle with a little of the reserved cheese. Repeat with the remaining potatoes.
  • When all of the potatoes are stuffed, put them back in the oven for 10-15 minutes (same temperature).
  • Take out of the oven and serve with soured cream and a sprinkling of spring onions (scallions).

ROASTED GREEK LEMON POTATOES

Roasted Greek Lemon Potatoes image

If there's one certainty in life that I can stand fully behind is that Greeks love their potatoes. The humble root vegetable is incorporated into a number of iconic dishes like moussaka, briam, artichoke and potato stew. If you're used to visiting Greece in the summer you'll most often see it fried in olive oil as the universal side dish. But what I want to share with you today is my all-time favorite recipe for roasted Greek lemon potatoes

Provided by Christina Xenos

Categories     Greek Easter Recipes

Time 55m

Yield 4 servings

Number Of Ingredients 9

2 pound potatoes, cut into wedges
1/3 cup extra virgin olive oil
4 garlic cloves, minced (a teaspoon of garlic powder would be ok)
1 tablespoon dried oregano
1/2 cup broth (chicken or vegetable) or water
2 teaspoons (or more to taste, especially if you're not using broth), kosher salt
1 teaspoon black pepper
2 lemons (juice and zest)
1/4 cup mustard (optional, but adds great depth of flavor)

Steps:

  • Preheat your oven to 425ºF (use the convection function if your oven has one). Cut your potatoes into wedges.
  • Toss potatoes in a roasting pan with olive oil, garlic, 2 teaspoons salt, pepper, oregano, and mustard (if you are using).
  • Mix the lemon juice with broth/water, and carefully pour into the pan around/between the potatoes, being careful not to wash the other seasoning off the potatoes.
  • Roast potatoes for 30 minutes. Then give them a shake/toss, and roast 15-20 minutes more.
  • Remove from oven. Garnish with parsley (optional), additional oregano, and lemon to taste.

  • To prepare this skordalia recipe, start by washing thoroughly the potatoes. Peel the potatoes and place them in a large saucepan. Cover with cold water and bring to the boil. Lower the heat to a gentle simmer and cook for about 30 minutes. (For this skordalia recipe the potatoes need to boil, until very tender.) Drain them in a colander and keep 1/2 a cup of the boiling water.
  • In a food processor add 1/2 a cup of the boiling water, the garlic, red wine vinegar and season with salt. Blend until the garlic is diluted. Cut the potatoes in pieces, add them in the food processor and blend to combine. Pour in the olive oil a little bit at a time, whilst blending, like making mayonnaise. Blend until the oil is incorporated and the mixture is smooth and creamy. If you like your skordalia to have a mild garlicky taste, a little trick is to boil the garlic (peeled) in some milk for about 5 minutes, before using.
  • When making a skordalia recipe, it is essential, that the potatoes are hot. If the potatoes are cold, then it will be difficult to combine the ingredients and the skordalia will become lumpy.
  • If you don’t have a food processor to prepare this skordalia recipe, you can mash the potatoes with a fork and combine the ingredients, using a whisk.

Line a sheet pan with aluminum foil. Combine the the chopped cucumber and tomatoes together, season lightly with salt and pepper, and set aside.
  • Place the potatoes in a medium mixing bowl. Toss the potatoes with one tablespoon of extra olive oil and sprinkle with kosher sea salt and pepper. Bake at 400 degrees (center-rack) for 25 to 30 minutes, or until a wooden skewer can easily be pierced through them without meeting resistance.
  • Place on a cooling rack until the potatoes are cool enough to handle. Increase the oven temperature to 425 degrees Fahrenheit. Slice the potatoes in half lengthwise. Set aside the scooped potato into the mixing bowl from earlier – use for mashed potatoes or other cooking applications.
  • Set a rack in the foil-lined sheet pan. Brush the potatoes with olive oil, inside and out, and sprinkle lighting with salt. Distribute the skins, skin-side up, on the rack and bake at 425 degrees Fahrenheit for 8 to 12 minutes, flipping the potatos halfway through.

  • Preheat the oven to 400 degrees F. Rinse and scrub the potatoes under water and then dry them with paper towel and use a brush to rub each potato with a thin layer of olive oil. Put the potatoes on a baking sheet and bake for 50-60 minutes {you want the potatoes to be soft to cut and starting to crisp on the skin}.
  • Remove the potatoes from the oven and let sit for five minutes, or until you can handle them. Cut each potato in half and using a spoon or scoop gently scoop out the center leaving a thin layer of potato in the skin {save the center of the potatoes for mashed potatoes or soup}. Place the halved potatoes on a broiler pan or roasting pan. Turn the oven up to 450.
  • Rub each potato skin on the inside and outside with canola, peanut or grape seed oil {you want a high smoke point oil} and sprinkle the inside with salt and pepper. Place the potatoes on a roasting or broiler pan and bake for 18 minutes or until the skins are crispy, flipping half way through.
  • Remove the potato skins from the oven and sprinkle the cheese on the inside of each potato. Return the potato skins to the oven for 3-4 minutes, until the cheese is melted.
