GREEK PASTA
I have been trying to duplicate the Greek Pasta from Zio's Italian Restaurant for a couple years. I finally got the seasoning right, and my family gave me a 'thumbs up'! Now it is one of our favorites.

Steps:
- Cook pasta according to directions on the box.
- While the pasta is cooking, grill chicken seasoned w/some of the Greek Seasoning.
- Saute garlic, onion, green pepper and red pepper flakes in oil.
- Toss pasta, chicken, sauteed vegetables, tomatoes and Feta together along with the Greek Seasoning. Enjoy!

GREEK PASTA
Flavorful Greek style pasta with garlic, feta cheese, mushrooms and black olives.

Steps:
- Bring a large pot of lightly salted water to a boil. Plunge whole tomatoes in water briefly, until skin starts to peel. Remove with a slotted spoon and place in cold water. Add pasta to boiling water and cook for 8 to 10 minutes or until al dente; drain.
- While pasta is cooking peel blanched tomatoes and chop.
- In a large skillet over medium heat, heat olive oil. Stir in garlic and mushrooms and saute until mushrooms begin to give up their juices. Stir in tomatoes and oregano and cook until tomatoes are tender.
- To serve, plate pasta, top with hot tomato sauce and sprinkle with feta and olives.

GREEK FLORENTINE FETTUCCINE
You can substitute frozen spinach for the fresh spinach, but I think fresh is the best. Also if you like things a bit spicy, try adding 1/4 tsp. cayenne pepper or 1/2 tsp. crushed red pepper. Another recipe from Brenda Walsh. Posted for ZWT 4.

Steps:
- Cook pasta in boiling salted water until tender. Drain and set aside.
- While pasta is cooking, heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté until onion is clear.
- Add remaining ingredients except for spinach, olives and pasta. Simmer for 15-20 minutes.
- Add fresh spinach and cook for an additional 5 minutes.
- Stir in olives and serve over fresh, hot pasta.
