GREEK CHICKEN AND SPINACH
This was a quick "throw together" meal one night recently, and it worked out great. Sorry, no exact proportions on a lot of things. It's very much an "eyeball" recipe. Use as much or as little of the ingredients as you like.

Steps:
- Pound the chicken breasts with a mallet til they're flattened and uniform thickness.
- Marinate for about 1/2 hour in a mixture of oregano, garlic powder, red pepper flakes, salt, pepper, the zest from 2 lemons and the juice from one, and a little rice vinegar.
- Grill 2-3 minutes on each side till cooked through.
- While marinating, mince a couple of cloves of garlic.
- Saute until fragrant in a little olive oil.
- Add a bag of fresh spinach and wilt over med-high heat.
- When bright green and not quite finished, add a handful of chopped parsely, some dill (to taste, I don't like much dill), and the juice of half a lemon.
- Stir together.
- Remove from heat, crumble some feta cheese on top and and cover for a few minutes to let the cheese heat up and soften.
- Serve with sparkling water and some fresh crusty bread.
GREEK CHICKEN CASSEROLE
This greek chicken casserole is full of flavor and is a quick and easy weeknight dinner for the family.

Steps:
- Preheat oven to 375F.
- Cook orzo in a pot of boiling water for ~8 minutes. Once finished, drain in a mesh colander and rinse with cold water. Place it in a large bowl
- In the same bowl as the orzo, add in feta, spinach and can of tomatoes. Mix to combine and pour into a casserole dish.
- Pour 2 cups of chicken broth over orzo mixture in the casserole dish. Place pieces of chicken on top then add lemon slices on top of that.
- Cover with aluminum foil or a lid and bake at 375F for 40 minutes.
- Let the casserole sit for 5-10 minutes before consuming to allow juices to absorb into the orzo. The first time you serve it, use a slotted spoon. The juices will absorb in the fridge over time.

- Sprinkle chicken with garlic powder and pepper. In a large skillet, heat oil over medium heat. Add chicken; cook and stir until no longer pink, 8-10 minutes. Stir in artichokes, roasted peppers, tomatoes and olives. Cook and stir until heated through, 3-5 minutes., Meanwhile, prepare rice according to package directions. Serve with chicken. Sprinkle with parsley.

GREEK SPINACH CHICKEN CASSEROLE IN PHYLLO
Even if you don't like Greek food you will adore this melt in your mouth dish. The flavors mingle so well and the phyllo is light, crisp and buttery! It is rich and light at the same time and is sure to be a favorite with your family! Note: Cook time does not include pre-cooking chicken.

Steps:
- Preheat oven to 375 degrees.
- In large mixing bowl, combine spinach, shredded chicken, garlic, parsley, mayo, and milk.
- Layer this mixture evenly in 9x9" glass dish.
- Sprinkle mozzarella evely over top.
- Tear phyllo into pieces about the size of the palm of your hand and layer over cheese.
- Pour melted butter over phyllo and cover dish with foil and bake 30 minutes covered; try not to let foil rest on phyllo, but create a little "tent".
- After 30 minutes, remove foil and sprinkle with parmesan.
- Broil for 5-10 minutes until phyllo is golden and crisp.
- Serve with green salad and fresh rolls!
