A refreshing grapefruit dressing that's easy to make! I like to put it on a salad of spinach, walnuts, and apple chunks.

½ cup freshly squeezed grapefruit juice
¼ cup vegetable oil
1 teaspoon white sugar
½ teaspoon dry mustard
salt and ground black pepper to taste

Steps:

  • Whisk grapefruit juice, vegetable oil, sugar, and dry mustard together in a bowl. Season dressing with salt and pepper.

Red Grapefruit and Fennel Salad image

Top this red-grapefruit-and-fennel salad with a citrus-based dressing, such as Green Herb Sauce or Creamy Lemon Buttermilk Vinaigrette.

3 ruby-red grapefruit
1/4 teaspoon whole fennel seeds
1 teaspoon honey
1/2 teaspoon Dijon mustard
Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil
1 small red onion
1 small fennel bulb
8 ounces baby spinach or watercress

Steps:

  • Using a paring knife, remove peel, pith, and outer membranes from 2 grapefruit. Slice into 1/4-inch rounds; set aside. Squeeze juice from remaining grapefruit, and set aside.
  • Place fennel seeds in a skillet over medium-high heat. Cook until golden brown and fragrant, about 3 minutes. Transfer to a spice grinder, and grind until very fine.
  • Place ground seeds in a bowl; add 1/4 cup grapefruit juice, honey, and mustard. Season with salt and pepper. Whisk to combine, slowly adding olive oil. Set dressing aside.
  • Using a mandoline or sharp knife, slice onion into thin rounds; place in a bowl. Pour remaining grapefruit juice over onions; toss.
  • Cut fennel in half lengthwise; remove core. Using mandoline, slice fennel. Drain onions; place in a large bowl. Add fennel, spinach, and grapefruit rounds. Toss with dressing.

Found in the magazine Delicious Living with some additions and modifications to the recipe. Two versions of this recipe were tested: one with no cream and the other with two teaspoons of whipped cream and the recipe was reduced by two thirds. I omitted the egg yolk completely in both versions. I used 1/4 teaspoon vanilla extract (or vanilla powder will also work). Walnut oil replaced flaxseed oil.

2 teaspoons grapefruit zest, finely grated (my addition)
2 ruby red grapefruits
1 egg yolks (can sub half and half, whipping cream or your favorite non-dairy substitute) or 2 tablespoons egg substitute (can sub half and half, whipping cream or your favorite non-dairy substitute)
3 tablespoons brown rice vinegar (can sub white balsamic, white wine vinegar, etc.)
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon paprika (I substituted Spanish smoked paprika and reduced the amount)
1 vanilla bean, split lengthwise and chopped into small pieces
1/3 cup flax seed oil

Steps:

  • Juice the two grapefruits.
  • Transfer juice to a blender. Add the (egg yolk, egg substitute or cream if using), vinegar salt, pepper, paprika and vanilla bean (or extract/powder).
  • Puree on high speed until vanilla bean is thoroughly blended.
  • With the blender motor running, slowly add the oil.
  • When the dressing is emulsified, strain into a small non-reactive bowl, discarding any vanilla bean debris if present.
  • Stir in the zest.
  • Can be refrigerated up to 1 week.
  • Yield is estimated.

3 large grapefruits, peeled and sectiond
3 large oranges, peeled and sectioned
1 (6 ounce) can sliced water chestnuts, drained
2 tablespoons vegetable oil

2 tablespoons wine vinegar
1 tablespoon soy sauce
1 dash Tabasco sauce
1/4 lb fresh mushrooms, sliced
2 tablespoons bacon bits (or 3-4 slices bacon, fried crisp and crumbled)

Steps:

  • Wash spinach, break into bite size pieces & arrange in a salad bowl. Top with grapefruit & orange sections and water chestnuts.
  • Mix dressing ingredients together until well blended & pour over salad and chill for 30 minutes.
  • To serve, garnish with mushrooms and bacon.
  • ** Cooks note: - this dressing is tart. Add sugar or Splenda, to taste, if you prefer it sweet.

1/2 ruby red grapefruit, juice of, large
1 teaspoon pomegranate molasses, to taste
1 teaspoon fresh lemon juice
fresh cracked black pepper, to taste
salt, to taste
1/2 teaspoon sugar (I used unbleached white, honey or agave nectar would work well, too!)
1/4 cup mayonnaise (I've used both, the mayo' is homemade) or 1/4 cup plain yogurt (I've used both, the mayo' is homemade)
2 tablespoons extra virgin olive oil
6 ounces mixed baby greens
1 cup fresh blackberries
1/2 cup dried cranberries
1/4 cup toasted slivered almonds

Steps:

  • In a small non-reactive bowl, whisk together the grapefruit juice, pomegranate molasses, lemon juice, black pepper, salt and sugar.
  • Add mayonnaise and oil. Whisk until smooth and creamy. Dressing is best prepared at least an hour in advance. Before serving, taste and adjust seasonings if necessary.
  • In a large bowl, toss together all salad ingredients except for the slivered almonds.
  • Divide equally among 4 salad plates.
  • Drizzle the salad dressing over salads. Garnish with the slivered almonds.
