My grandmother and mother made these cakes for years. They are moist but don't contain eggs. Applesauce is the secret ingredient. I sold these at bake sales for years and we had many customers who returned every year just to get one.

4 cups all-purpose flour
2 cups white sugar
¼ cup unsweetened cocoa powder
2 tablespoons cornstarch
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
2 teaspoons ground cloves
3 cups unsweetened applesauce
¾ cup vegetable oil
1 cup raisins
1 cup chopped pitted dates
1 pound candied mixed fruit
2 cups chopped walnuts
½ cup walnut halves
1 cup halved candied cherries

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 9 inch tube pan and one 9x5 inch loaf pan.
  • Sift the flour, sugar, cocoa, cornstarch, baking soda, salt, cinnamon and cloves into a large bowl. Stir in the applesauce and oil, then mix in the raisins, dates, mixed fruit and 2 cups of walnuts. Pour into the prepared pans. Pans should be about 3/4 full if using mini pans, or an assortment.
  • Bake for 1 hour in the preheated oven, or until a toothpick inserted into the crown of the cake comes out clean.

2 cups candied cherries
1 cup raisins
1 cup blanched almonds
1 cup dried pineapple pieces
3 ½ cups all-purpose flour, divided
2 cups white sugar
1 ½ cups butter
6 eggs
1 teaspoon baking powder
¼ teaspoon salt
1 teaspoon vanilla extract
1 teaspoon almond extract

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Line two loaf pans with parchment paper.
  • Coat cherries, raisins, almonds, and pineapple with 1 cup flour.
  • Beat sugar, butter, and eggs together until creamy. Sift remaining flour with baking powder and salt. Add to butter mixture; stir in vanilla and almond extracts. Fold in the fruit and almond mixture. Spoon batter into the prepared pans and spread evenly.
  • Bake in the preheated oven until a toothpick inserted into the center of a cake comes out clean, 1 1/2 to 2 hours. Wrap cakes tightly and let age in a cool place for 2 to 4 weeks.

1 cup white sugar
1 (20 ounce) can crushed pineapple, with juice
2 cups cake flour
1 teaspoon baking soda
1 cup brown sugar
½ cup butter
¾ cup evaporated milk
1 cup white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour and baking soda; set aside.
  • In a large bowl, combine eggs, 1 cup white sugar and pineapple with juice. Beat in the flour mixture. Pour into prepared pan. sprinkle brown sugar over top of batter.
  • Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove from oven and prick top with a fork. Pour on topping while still hot.
  • To make the topping: To Make Topping: In a small saucepan combine the butter, evaporated milk, 1 cup white sugar, and 1 teaspoon vanilla. Cook over medium low heat, stirring occasionally until sugar is dissolved. Mixture will be thin. Pour over hot cake.

This throw together" fruit cake might not cut the mustard against some of the more decadent fruit cakes, but is scrumptious nonetheless. I offer it to you as a perfect natural rescue remedy for any sugar cravings, or as a quick easy cake for those surprise guests who pop over for a cup of tea on a lazy Sunday afternoon. Most fruit cakes contain nuts, sugar and alcohol. This fruit-sweetened cake is nut-free and dairy free - good news for those of you with food allergies; and perfect for anyone wanting a healthier alternative to refined sugar-sweetened cakes. Fruit is sweet enough. The best thing about this cake - it is unbelievably moist. I have used rice and potato flours to make this cake easy and affordable. But it works really well with a buckwheat, tapioca, rice flour mix as well.Try to purchase mango tinned in natural fruit juice instead of sugar syrup. This mildly flavoured cake hits a sweet spot without making you sick.

17 2/3 ounces mixed dried fruit (500gms)
15 ounces sliced mangoes, in natural juice (or 1 425 gm not sugared syrup )
2 organic eggs
1/2 cup filtered water
1/2 cup white rice flour
1/2 cup brown rice flour
1/2 cup potato flour
1 teaspoon xanthan gum
1 teaspoon gluten free baking powder
1 1/2 teaspoons baking soda
1 pinch celtic sea salt

Steps:

  • Preheat an oven to 160 C / 320°F.
  • Put fruit, water and contents of the whole tin of mangoes (including the natural juice) into a saucepan.
  • Bring to the boil and simmer just for a minute.
  • Sieve the flours, baking powder, baking soda, xanthan and salt together.
  • Beat the eggs lightly in your mixer and gradually combine all the ingredients together.
  • Place in a greased round tin lined with baking paper.
  • Bake for about 45 minutes to an hour until a skewer comes out clean.

1 cup sugar
1 cup flour
1/2 teaspoon baking powder
2 cups fruit

Steps:

  • Preheat the over to 350F (180C). Butter an 8x8 baking dish.
  • In a big bowl whisk together the eggs and the sugar just until it all comes together, about 30 seconds, no more.
  • Add the flour (and baking powder if using) and wisk together just until the flour disappears and there are no more lumps, about 45 seconds, no more. The batter will be quite thick and there won't be a lot of it.
  • Spread the fruit over the bottom of the dish and spread the batter over. It will barely cover the fruit and it'll look like it's not enough, but it will be great. Alternatively you can mix the fruit with the batter.
  • Bake for 45-55 minutes depending on your oven. A toothpick inserted into the cake should come out clean when the cake is ready.

GRANDMA'S BOILED FRUITCAKE

I am posting this for myself, as I only make this once a year - the recipe has often moved since I made it last (or I forgot where I put it). This recipe has been in our family for over 100 years (5 generations), it takes 2 days make and is rich and moist. As this fruit cake contains no alcohol it does not need time to "cure".

500 g sultanas
250 g raisins
250 g currants
250 g chopped dates
250 g chopped walnuts
250 whole glace cherries (I always add more as this is my favourite part of the cake)
1/2 cup brown sugar
1/2 cup white sugar
250 g butter
1 cup water
1 teaspoon bicarbonate of soda
1/2 cup fresh orange juice
4 eggs, beaten
1 1/2 cups self raising flour
1 1/2 cups plain flour
1 teaspoon mixed spice
blanched almond, to top (optional)

Steps:

  • Day one.
  • Mix the first 11 ingredients into a large heavy based pot, place over a medium heat. Stir and bring to the boil (don't leave it alone in case it burns at the base).
  • Reduce the heat to low and simmer for 10 minutes, you can leave it alone for this part.
  • Turn the heat off and add the orange juice, stir until well combined and leave overnight to soak. Place a lid over the top to stop moisture evaporating through the night.
  • Day 2.
  • In the cold pot with the pre-soaked fruit mixture add the remaining ingredients and stir well, be warned - you will need some serious elbow grease as the mixture will be very thick!
  • In either 2 large and deep loaf tins or a deep 20x20cm grease and line the sides and base 4 times with brown paper (I use brown paper bags that I have sliced open). Have the paper create a rim that goes up and above the tin. For a square tin you will need around 8 paper bags.
  • Place the cake mix into the prepared tin/s. Bang the cake tin on the floor about 10 times to get all the air bubbles out.
  • Using a wet hand, smooth the cake to make it flat. At this stage you can choose to decorate the top with blanched almonds or not.
  • Place into a cold oven, turn the oven up to 250 degrees F/150 degrees C for 3 1/2 - 4 hours for 1 large cake or 2 1/2 - 3 hours for 2 loaves. Rotate the cakes at least once during cooking - even it you have a fan forced oven. Cake is cooked when a skewer comes out clean.
  • Cool in the tin, cake is best eaten the day after baking.
  • Store in an airtight container for upto 5-7 days depending on your humidity.

This recipe was adapted by my mother from one that appeared in the Washington Post newspaper in the late 1960's. It is "quick" because it does not require dousing with sherry and soaking for months before serving. Cooking the raisins with water, sugar, and a little whiskey and honey moistens them before the cake is baked, so it can be served after only 1 week of resting. PLEASE READ THE RECIPE COMPLETELY BEFORE BEGINNING! We like to use 1 cup diced mixed candied fruit, plus 1 cup whole candied red cherries and large candied pineapple chunks, mixed. This makes a nice looking slice when served. The recipe makes 5 pounds of fruitcake - that's two large loaves or one angel-cake ring pan. If you don't have a mixing bowl large enough, use a large dutch oven or stockpot. For gift giving, I divide it into small disposable loaf pans - it makes 4 or 5 depending on size and how full they are. You absolutely must line the greased pans with parchment paper, then grease them again.

  • The day before baking: Cook raisins, water, and sugar for 5 minutes. Remove from heat. Add whiskey and honey, stir to combine. Add butter and let it melt in the hot mixture. Cool to room temperature, overnight is best.
  • Prepare pans: grease pans with shortening, line with parchment paper and leave a 2" collar extending above all the sides. Grease the inside of the parchment paper.
  • Preheat oven to 275°F Adjust rack to center position.
  • Reserve 1/2 dozen whole cherries and several whole nuts to use as decoration on top of cake. Adhere with a little batter or syrup.
  • Measure fruit and nuts into a large bowl. Sift together the flour, spices, baking powder, soda and salt into another medium bowl. With your hands, blend the flour mixture into the combined fruit and nuts. Make sure the fruits are not stuck together, and are coated with flour. Set aside.
  • In your largest mixing bowl, beat eggs well. Alternately add to the beaten eggs, the floured fruit and nuts, and the raisin mixture. Combine with large spatula or with bare hand.
  • Divide batter evenly among pans. Bake for about 2 hours (time will vary with size of pan) until cake shrinks from sides of pan slightly. After 1 ½ hours, decorate tops of cakes with reserved fruit and nuts, by adhering them to the top of cake with reserved batter. Return to oven to finish baking. Turn off oven, leave cake in oven 10 minutes with heat off. Remove pans from oven, allow to cool on racks 10-15 minutes. Peel paper off cakes carefully while still warm. Cool on rack completely.
  • To store cakes, wrap in muslin moistened with sherry, and place in zip lock bag or tin. Check periodically and add sherry to keep moist. Slice about 1/2 inch thick to serve, with hot tea, coffee, or egg nog. Can be stored for a year or more if kept moist with sherry or whiskey.
