GRANDMA'S OLD FASHIONED MEATLOAF

Steps:
- Preheat oven to 350F, rack in the middle. Line a rimmed baking sheet with parchment paper and lightly spray. In a large bowl add the oats and milk and gently mix. Set aside for 15 minutes to allow the oats to soak in the milk.
- After 15 minutes strain out the milk into a separate container but do not discard. *If there is no milk left, it's OK. Some brands of oats suck up all the milk while others do not.
- In the bowl the oats are in, add the ground beef, eggs, Worcestershire sauce, steak seasoning, garlic, onions, ketchup, and 3 tablespoon of tomato soup.
- Just combine but try not to overwork it as it will get tough. If the mixture is too wet, add in 1-2 more tablespoon of oats (don't worry if they aren't soaked). If too dry, add in the milk 1-2 tablespoon at a time. If you have no milk left as your oats sucked it all up just add more milk or water. You want the mixture to be pretty moist but firm enough to hold a shape.
- In the bowl gently press together.
- Transfer the mixture to the baking sheet and using your hands, form a loaf that is about 12 inches long, 6 inches wide, and about 2 1/2 inches tall. The loaf should be smooth and have rounded edges. This will help the loaf stay together when serving.
- Bake for 30 minutes, remove from the oven, and spread the remaining tomato soup on top of the meatloaf.
- Continue baking for another 30 minutes.
- Remove from the oven and allow to rest for 10-15 minutes before serving.

CLASSIC MEATLOAF

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
- Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
- Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.
GRANDMA'S MEATLOAF
This is my all time favorite dish, that my Grandmother served in her restaurant. She would serve this with real mashed potatoes and creamed corn.

- Mix everything together very well and shape into 2 loaves.
- You can either pour the tomato juice or ketchup on top before baking, or apply the sauce to the top of the meat loaf 10 minutes before it is done.
- Bake at 350 degrees for about 45 minutes to 1 hour or until done.
- Makes 2 loaves.
GRANNIES MEATLOAF
My grandma had to send me this recipe when I first moved out on my own, I missed her food so much. Goes well with just about any sides, but my personal favorites are green bean almondine, mashed potatoes, and fresh corn.

- 1. Personally I hate to see big chunks of crackers so I mix the eggs ketchup and crackers together and let sit for a few minutes so the crackers break up even more when I mix in the rest of the ingredients. Blend all together well place in a heavy bottomed pan,( I use my large iron skillet) place in a 350 degree oven for about 40- 45 minutes. Pull out and spread 1/4 cup more ketchup on top and let cook ten more minutes. Slice and serve..
- 2. you can turn this into easy go to meatballs by switching out half the ground beef for ground pork, rolling into medium balls and browning in a heavy skillet.

Steps:
- Put ground beef, sausage or ground pork, and oats into a mixing bowl.
- Add egg, milk, 1/4 cup tomato sauce or ketchup, salt, pepper, and chopped vegetables to the blender. Pulse to chop vegetables into smaller pieces.
- Add liquid/vegetable mixture to the ground meat and oats. Mix up with your hands. Let sit for about 15 to 30 minutes so the oats can absorb some of the liquid.
- Shape the mixture into a round loaf or put into a bread pan.
- If you are making a free-standing round loaf, cover a baking sheet with foil. Make sure there is a rim on the sheet because your meatloaf may release liquids. You can also use a large cast iron skillet too.
- Bake in a 350-degree oven for 45 minutes. Carefully remove from oven.
- Put the remaining tomato sauce or ketchup on top and bake an additional 15 to 20 minutes.
- Remove from the oven and let stand for about 15 minutes before serving.

- Preheat oven to 350 degrees F.
- In a large bowl, combine all ingredients except ketchup. Knead mixture and place into a loaf pan. In a large shallow pan, add 1-inch of water, place the meatloaf pan in the center and cover with foil. Bake for approximately 1 hour.
- Drain water, remove foil, cover meatloaf with ketchup and bake for another 10 to 15 minutes.
GRANDMA'S OLD-FASHIONED MEATLOAF

- Preheat the oven to 350 F
- Heat the oil in a large skillet over medium heat. Add the chopped celery and onion; cook until the vegetables are tender, or for about 7 to 9 minutes, stirring frequently.
- In a large bowl, mix ground beef or beef and pork mixture, oats, chili sauce or ketchup, Worcestershire sauce, salt, beaten egg, celery and onion mixture, and the water or milk.
- Pack the meatloaf mixture into a 9-by-5-by-3-inch loaf pan or shape it and bake it free-form in a 9-by-13-by-2-inch baking pan or 10-by-15-by-1-inch jelly roll pan.
- Bake at 375 F for 1 hour.
- Using 2 spatulas, carefully move meatloaf to a serving plate and slice.

GRANDMA'S FAMOUS MEATLOAF WITH SALTINES
This is the recipe my grandmother used to make her meatloaf. Most notably it doesn't have any sort of sauce coating the top as is called for in many meatloaf recipes. My family enjoys it this way but I'm relatively certain that any standard meatloaf sauce would do if you want one.

MEATLOAF
This is how my Granny taught me to make meatloaf. She was an awesome southern cook! Note the method for adding bread - this is part of what keeps the meatloaf from being dry.

Steps:
- Put meat in a large bowl and add eggs, chopped onion and bell pepper.
- Then add half the tomato sauce, catsup, Worcestershire sauce and Tabasco. Add the spices.
- While holding the slices of bread, run cold water over them until wet - then squeeze them in your hand to get rid of excess water - add to meat.
- Now the fun part, use your hands to mix it all up - make sure it's really well mixed and that everything is evenly distributed.
- I don't use a loaf pan for this - I use a sheet cake or other large baking pan, and shape the mixture into a loaf that's about 2 inches thick - and probably 4 inches wide.
- Lay the bacon strips side by side down the length of the loaf.
- Bake at 350°F for about 1 and half hours.
- Sauce: While meat is baking, mix the remaining tomato sauce, Worcestershire, Tabasco and catsup (I just leave half the tomato sauce in the can, then add the other ingredients to "refill" the can. (hope that makes sense).
- During last 20 minutes or so of baking - pour sauce over meat, continue baking until done.
