GRANDMA'S SOUTHERN CREAMED CORN PUDDING

Steps:
- In a large skillet, melt the butter over medium low heat. Remove the skillet from heat. When the butter's cooled, whisk in the flour until smooth and evenly incorporated.
- Whisk in the sugar, eggs, and milk- again until evenly incorporated.
- Stir in both kinds of corn, until evenly combined. Season with salt & pepper, to taste.
- Transfer the mixture to an 8x8" baking dish, and use the back of the spoon to smooth out evenly.
- Bake at 350 degrees for an hour and fifteen minutes, or until a toothpick inserted into the center of the casserole comes out clean, and the casserole is lightly browned on top.
- Remove the dish from the oven, and let it rest for 5 minutes. Serve while still warm. Enjoy!

- Preheat the oven to 350°F. Coat a deep-dish pie plate or 8 x 8-inch baking dish with cooking spray.
- Put the butter in a large microwave-safe bowl and microwave until melted, about 1 minute.

- In a skillet, heat olive oil over medium heat. Add onions and red bell pepper and cook until tender and translucent, about 5-6 minutes.
- Meanwhile, combine all of the other ingredients into a large bowl, stirring everything together. Add onions and red bell peppers when they are done.
- Pour everything into a 2-quart casserole dish or 8" square pan. Cook until center of pudding is set (knife should come out clean when inserted into the middle) about 45 minutes. Garnish with fresh thyme and enjoy!

- Preheat oven to 400 degrees fahrenheit.
- Add 2 cups buttermilk cornmeal mixture to a large bowl. Add ¾ cup regular granulated sugar and ¾ tsp salt.
- Whisk dry ingredients, sifting well
- Add the following wet ingredients to dry ingredients: 1 cup regular milk, one egg, ½ cup vegetable oil.
- Mix all of the ingredients together.
- Spray loaf pan with nonstick spray.
- Pour cornbread mixture into loaf pan.
- Bake for 30-35 minutes. (When toothpick or knife comes out clean, cornbread is done).
- Rub 1 tablespoon of butter (not margarinover surface of cornbread.

- Preheat the oven to 325 degrees F.
- Mix all the dry ingredients together in a bowl.
- Mix the eggs, butter, milk and creamed corn.
- Add the flour mixture to the wet and mix until just combined.
- Grease a large 9 X 13 rimmed baking dish. Pour the pudding mixture into the pan and place it in the oven. Lightly tent the pan with foil.
