GRANDMA'S PORTUGUESE SOUP



Grandma's Portuguese Soup image

Portuguese linguica, cabbage, and pinto beans come together in a traditional Portuguese soup. This recipe is from my grandmother's grandmother, straight from Portugal. You will not find a more delicious Portuguese soup recipe! This recipe will feed 4 adults easily. It serves well alone or with a good bread.

1 pound dried pinto beans
2 ham hocks
1 large onion, diced
water to cover
7 ounces linguica sausage (such as Silva®), sliced
1 small head cabbage - quartered, cored, and thinly sliced
1 large potato, cubed
1 (8 ounce) can tomato sauce
salt and ground black pepper to taste

Steps:

  • Place beans in a large pot and cover with water. Soak 8 hours to overnight.
  • Drain and rinse beans and return them to the pot. Add ham hocks and onion. Add enough water to cover ham hocks. Bring to a boil, reduce heat to a simmer, and cook until beans are tender, 1 to 2 hours.
  • Remove ham hocks from soup and separate the meat from the bones. Return meat to the pot and discard bones. Add sausage, cabbage, potato, and tomato sauce to the pot. Bring to a simmer and cook until cabbage is softened, 30 to 45 minutes. Season with salt and pepper.

3 medium sized turnips
(2⅓ cups / 320 grams), peeled and diced into 3 cm ( 1.2 inches) cubes
2 to 3 large russet potatoes
(2 ½ cups / 420 grams), peeled and diced into 3 cm ( 1.2 inches) cubes
2 medium sized white onions
(2 cups / 220 grams), peeled and diced into 3 cm ( 1.2 inches) cubes
4 large carrots
(2 ½ cups / 420 grams), peeled and diced into 3 cm ( 1.2 inches) cubes
6 cups
(1 ½ liters) water
2 medium sized white or savoy cabbages
(10 cups / 680 grams), roughly cut into strips
1 ½ cups (320 grams)
cooked cannellini beans
½ teaspoon
sea salt
olive oil
to taste

Steps:

  • In a large pot over high heat, bring the water to a boil. Once boiling, add the turnips, potatoes, onions and carrots to the pot. Decrease the heat to a simmer, add the salt and cook, covered, from 15 to 20 minutes, or until the vegetables are tender.
  • With the help of an immersion blender, purée all the ingredients until totally smooth - you're looking for a creamy and slightly thick broth here. Have a taste and add a bit more salt if necessary. Now, add the cabbage strips to the pot and cook for additional 5 minutes, or until the cabbage is cooked through but still holding some texture.
  • When the cabbage is cooked, turn off the heat and add the cooked cannelini beans to the soup.
  • Serve the soup in bowls and drizzle a little olive oil over each serving. Perfect along with a good slice of crusty bread.

3 tablespoons olive oil
1 cup chopped onion
2 minced fresh garlic cloves
2 quarts water
4 chicken bouillon cubes
1 teaspoon salt
1/2 teaspoon black pepper
1/2 head cabbage, cored and coarsely chopped
1 (14 1/2 ounce) can stewed tomatoes, drained and diced

Steps:

  • In a large stockpot, heat olive oil over medium heat.
  • Stir in onion and garlic, cook until onion is transparent, about 5 minutes.
  • Stir in water, bouillon, salt and pepper.
  • Bring to a boil, then stir in cabbage.
  • Simmer until cabbage wilts, about 15 minutes.
  • Stir in tomatoes.
  • Return to a boil, then simmer 15 to 20 minutes, stirring often.

1 pound smoked sausage, sliced
1 medium head cabbage, chopped
6 potatoes, peeled and cubed
2 (15 ounce) cans kidney beans
2 cups ketchup
1 (10.5 ounce) can beef consomme
2 ⅔ quarts water
2 teaspoons garlic powder
2 teaspoons ground black pepper
1 teaspoon salt
½ cup vinegar

Steps:

  • In a large pot over medium heat, cook onions in oil until just tender. Stir in sausage and cook 5 minutes more. Place cabbage, potatoes, beans, ketchup, consomme and water in the pot. Season with garlic powder, pepper and salt. Bring to a boil, then reduce heat and simmer 30 to 45 minutes.
  • Stir in vinegar and simmer 1 hour more. Add more water if needed.

1 tablespoon olive oil or 1 tablespoon vegetable oil
1 large yellow onion, finely chopped
2 garlic cloves, minced
3 1/2 cups low sodium chicken broth
3 medium potatoes, peeled and chopped
1 (10 ounce) package frozen chopped spinach, thawed
6 ounces turkey kielbasa, sliced (Polish sausage)
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • In a large saucepan, heat the oil over moderate heat. Add the onion and garlic and cook for 5 minutes or until onion is tender.
  • Add the broth and potatoes. Bring to a boil. Lower the heat and simmer, covered, for 30 minutes or until potatoes are very soft. Using a potato masher or large spoon, slightly mash potatoes to thicken soup.
  • Stir in the spinach, kielbasa, salt, and pepper. Simmer, uncovered, for 5 minutes more until heated through.

  • Bacalhau a Bras. Out of the numerous ways to prepare salted cod fish in Portugal, “Bras style” is one of the most popular and I honestly salivate just to think about it.
  • Ameijoas a Bulhao Pato. More than a meal, clams Bulhao Pato style are a snack, best enjoyed with ice-cold beer. It’s very popular as appetizer as well, and a tasty way to get your juices flowing.
  • Rojoes a Moda do Minho. Because Portugal has a never ending affair with pork, rojoes are abundant to keep the spark alive! Chunks of pork loin cooked in the very same pig’s lard, and seasoned with garlic and white wine.
  • Bolinhos de Bacalhau. A super Portuguese Grandma wouldn’t let you leave Portugal after trying only one cod fish dish alone! Also known as “pasteis de bacalhau” these cod fish fritters can be savored as a starter or snack, or along with rice and salad as main dish.
  • Açorda Alentejana. This typical dish of the southern region of Alentejo is as good as it gets when it comes to comfort food with a rustic touch. The basic recipe for açorda would be made of mashed bread with olive oil, coriander, salt, eggs and water but more complete versions might include cod fish or shrimps.
  • Alheira de Mirandela. Translate “alheira” into sausage doesn’t almost make justice to this unique combination that, yes looks like a sausage, but is so much more than that!
  • Arroz de Pato. In case you don’t appreciate pork meat and are frustrated by most of the suggestions above, let’s end on a ducky note. In Portugal, duck rice is cooked until the meat is ridiculously tender, simmered in red whine, and oven toasted along with the rice until the top is crispy.
