My mother would always start them the day after Thanksgiving, which was exciting for us kids, as we knew Christmas wasn't far off. 2 cups molasses
2 cups dark corn syrup
1/2 cup shortening, melted
2 tablespoons white vinegar
1 tablespoon cold water
10 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon powdered star anise
1/4 teaspoon ground cloves
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Dash salt

Steps:

  • Combine the first five ingredients. Whisk together remaining ingredients; add to molasses mixture and mix well. Refrigerate, covered, 3 hours or overnight., Preheat oven to 375°. On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut into desired shapes with floured 2-in. cookie cutters; place 1 in. apart on greased baking sheets. Bake until set, 10-12 minutes. Remove to wire racks to cool.

This is my great-grandmother's recipe. It has survived four generations and is still at the top of my cut-out recipe list. The secret is to roll the dough extra thin! Frost with buttercream frosting for best taste.

1 cup butter
1 ½ cups sugar
2 eggs
¼ teaspoon lemon extract
½ teaspoon vanilla extract
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 cups oatmeal

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease baking sheets.
  • Cream together the butter and sugar in a large bowl. Blend in the eggs, lemon extract, and vanilla extract. Sift together the flour, salt, and baking soda in a separate bowl. Slowly add the flour mixture to the butter mixture, beating continually. Stir in the oatmeal.
  • Roll the dough out onto a lightly-floured surface to about 1/8-inch thickness. Cut dough into shapes using cookie cutters and arrange them on the prepared sheets.
  • Bake in the preheated oven until edges begin to brown, 10 to 12 minutes. Allow to cool on a cooling rack before frosting.

I am posting this recipe for safe keeping. My grandma just passed away and this is my favorite recipe of hers. She always made it at Christmas time. I think it is better if it sits for a day or so to let the flavors blend.

2 cups raisins
2 cups applesauce
4 tablespoons melted butter
1/2 teaspoon salt
2 teaspoons cinnamon
2 teaspoons nutmeg
2 teaspoons allspice
3 1/2 cups all-purpose flour
2 teaspoons baking soda
2 cups sugar
1 cup walnuts, chopped (any kind of nut meat will work)

Steps:

  • Preheat oven to 325 degrees.
  • Prepare a tube pan.
  • Put raisins in a 1 quart pan and cover with water.
  • Cook until almost dry.
  • Meanwhile, combine dry ingredients.
  • When raisins are done mix into dry ingredients with applesauce and melted butter.
  • Bake in prepared tube pan for 1 1/2 hours.

3 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/4 cups sugar
1 cup shortening or 1 cup margarine
3 eggs
1 teaspoon vanilla extract
ground pecans (Optional, ground pecans for added flavor. This is how Grandma always mixed hers) (optional)

Steps:

  • Sift dry ingredients together.
  • Add shortening or margarine using a fork to combine with dry ingredients.
  • Add unbeaten eggs and vanilla.
  • Mix well.
  • Add ground pecans for added flavor. (This is how Grandma always mixed hers).
  • Whisk the dry ingredients together, add alternately with the eggs and vanilla.
  • Mix well.
  • Roll out thin on floured board and cut with floured cookie cutters.
  • Decorate with sugar.
  • Bake at 375°F for 8 minutes.
  • Makes about 6 dozen.
