My Mother has made this stew for as long as I can remember. The lentils do a great job of making a nice thick gravy! Enjoy!

1 lb chuck steak
2 medium onions
4 garlic cloves, crushed
1 bay leaf
1 teaspoon marmite (or 1 T. Worcestershire Sauce)
1/4 pint stock
1 pint crushed tomatoes
4 large potatoes
2 large carrots
3 sticks celery
1 cup frozen peas or 1 cup frozen corn kernels
1/2 cup red lentil
about 1-2 cups vegetables (see below)
leek
rutabaga
parsnip
green pepper
green beans

Steps:

  • Use a pressure cooker. Seal the meat in a small amount of oil, add onions, garlic, bay leaf marmite and stock. Bring to pressure then turn off the heat and leave the pressure cooker on the stove and allow to come to normal pressure so that you can remove the lid. Do not remove the pressure manually.
  • Add the tomatoes, potatoes and other vegetables except the peas, stir well then pour the lentils over the top. Do NOT stir the lentils in at this point or they will burn onto the bottom of the pressure cooker. You have been warned!
  • Pressurize the cooker again, and again allow to come to normal pressure.
  • Test to check that the vegetables are cooked; if not, re-pressurize.
  • Add frozen vegetables and season to taste with salt and pepper.
  • Stir well and re-heat.

1/4 cup extra-virgin olive oil, for frying, plus more to drizzle
3 tablespoons butter
2 cups all-purpose flour
2 to 3 pounds beef chuck shoulder roast, cut into 2-inch pieces (this cut is also called chuck shoulder pot roast and chuck roast boneless)
Sea salt and freshly ground black pepper
1 bottle good quality dry red wine (recommended: Burgundy)
8 fresh thyme sprigs
6 garlic cloves, smashed
1 orange, zest removed in three 1-inch strips
1/4 teaspoon ground cloves
2 bay leaves
2 1/2 cups beef stock
9 small new potatoes, scrubbed clean and cut in 1/2
1/2 pound carrots, peeled and sliced
2 cups frozen pearl onions, a large handful
1 pound white mushrooms, cut in 1/2
1/2 pound garden peas frozen or fresh
Fresh flat-leaf parsley, chopped, for garnish
Horseradish Sour Cream, recipe follows, for garnish
Toasted Peasant Bread, recipe follows, for serving
1 cup sour cream
1 tablespoon prepared horseradish
Olive oil
Salt and pepper
Chives, finely chopped, as garnish
1 loaf peasant bread, sliced into 1/2-inch pieces
Extra-virgin olive oil
4 garlic cloves, halved
Chopped parsley leaves

Steps:

  • Preheat a large heavy-bottomed saucepan or Dutch oven over medium-high heat with the oil and butter.
  • While the pan is heating, arrange the flour on a large dish. Season the cubed beef with some salt and freshly ground black pepper and then toss in the flour to coat. Shake off the excess flour and add the beef chunks in a single layer to the hot pan, being careful not to over crowd the pan, you might have to work in batches. Thoroughly brown all of the cubes on all sides. Once all the meat has been browned remove it to a plate and reserve.
  • Add the wine to the pan and bring up to a simmer while you scrape the bottom of the pan with a wooden spoon being sure to loosen up all those tasty bits. Once the wine has gotten hot add the browned meat, thyme, smashed garlic, orange zest strip, ground cloves, freshly ground black pepper and salt, to taste, bay leaves and beef stock. Bring the mixture up to a boil and then reduce the heat to a simmer and cook uncovered until the liquids start to thicken, about 15 to 20 minutes. Cover and cook on low heat for 2 1/2 hours.
  • After 2 hours add halved potatoes, sliced carrots, pearl onions and mushrooms, along with a pinch of sugar to balance out the acid from the red wine. Turn the heat up slightly and simmer, uncovered, for 30 minutes more, until the vegetables and meat are tender. Add the frozen peas during the last minute of cooking. Season with salt and pepper and remove the thyme sprigs.
  • To serve, place the stew in a soup bowl, garnish with parsley, drizzle with olive oil and add a dollop of Horseradish Sour Cream. Right before serving add a slice of Toasted Peasant Bread, half way submerged in the stew.
  • Combine sour cream, prepared horseradish and a drizzle of olive oil in a small bowl and mix until thoroughly combined. Season with salt and pepper. Add a dollop of the mixture on top of the stew and garnish with chopped chives.
  • Preheat the oven to 500 degrees F.
  • Put a sheet pan in the oven so that it gets good and hot.
  • Place the bread slices on the hot sheet pan. Drizzle the bread with the extra-virgin olive oil bake for 5 minutes, until the bread is nicely toasted. Rub the bread slices with the garlic cloves, and discard garlic. Sprinkle with parsley and serve.

1 1/2 lbs ground beef (ground shoulder roast is good)
1 slice bread (broken or chopped finely)
1 egg
1 small vidalia onions or 1 small type sweet onion, finely chopped
1 teaspoon table salt
1/4 teaspoon black pepper
4 tablespoons ketchup
1/2-2/3 cup whole milk or 1/2-2/3 cup half-and-half
4 tablespoons apple cider vinegar
2 -4 tablespoons dark brown sugar, packed firm (to taste)
1/2 cup ketchup

Steps:

  • Meatloaf: Combine meat loaf ingredients and place into a loaf baking dish.
  • Smooth out top.
  • Sauce: Combine sauce ingredients and pour on top and sides of meatloaf.
  • Bake at 350°F about 1 hour to 1 hour 15 minutes or until done.
  • ENJOY!
  • *The addition of 1 or 2 teaspoons of Kitchen Bouquet® makes this recipe very good.
  • **Recipe should be"plump" from the addition of the milk or Half & Half.

2 -3 lbs stew meat, cut into big bite size pieces
3 -4 lbs potatoes, peeled and cut into big bite size pieces
1 bag carrot, peeled and cut into big bite size pieces
1 bunch celery, cut into big bite size pieces
1 -2 clove garlic, chopped fine
1 large onion (I keep this whole because I can't digest onion. Love the flavor but can't eat the actual onion)
1 bottle ketchup
salt and pepper

Steps:

  • If it is cool or cold weather, it is best to put this in the oven (or a crock pot) and let cook for a while.
  • Take a large pot (I use a dutch oven) on med high heat and add whole bottle of ketchup.
  • Fill empty bottle with water and rinse out bottle with it, Pour this water in pot with ketchup.
  • Add carrots, celery, potatoes, garlic and onion.
  • When all of this has been cooking for a 1/2 hour or so, coat meat with flour and brown in large pan with a little oil.
  • Cover with a lid and let this simmer for a few minutes.
  • Meat will be soooooo tender.
  • add meat mixture (oil, drippings and all) to the veggies.
  • Mix well.
  • Add the salt and pepper.
  • Let this cook until it is thick and the veggies are tender.
  • The"secret" is the ketchup.
  • The stew doesn't taste a thing like ketchup though.

I started craving my friend's grandmother's home made stew but couldn't get a hold of her, so I just threw together some ingredients that sounded good. My husband & I REALLY enjoyed it. I served it w/ hot home made bread. It truly satisfied our craving & did wonders for our cold.

2 lbs beef tip roast (cut into bite size cubes)
2 cups stewed tomatoes (16 oz.)
1/2 cup all-purpose flour
1/4 cup olive oil
3 1/2 cups beef broth (Swansons or any beef broth will do, 32 oz)
3 medium russet potatoes (peeled & diced)
3 medium red potatoes (peeled & diced)
1 medium yellow onion (finely chopped)
2 medium onions (diced)
1 large carrot (finely chopped)
2 large carrots (thickly sliced)
1/4 cup celery (finely chopped)
3 celery (thickly sliced)
2 cups baby portabella mushrooms (cubed) (optional)
1/2 cup frozen green pea (optional)

1 pound flank steak, cut into 1/2-inch cubes

1 cup dry lentils
4 cups beef broth
2 teaspoons dried rosemary
11 ounces baby potatoes with skin

Steps:

  • Pour flour into a shallow bowl and dust steak with flour. Heat oil in a large skillet over high heat and sear beef on all sides until browned, 3 to 5 minutes. Remove from the skillet and set aside.

Now I'm attempting to return the favour! It really is a "throw in whatever you have" recipe, so have fun with it.

2 tablespoons olive oil, divided
1 large onion
3 large carrots
9 celery ribs
5 cremini mushrooms
1 1/2 large red peppers
1 1/2 cups chopped cauliflower
1/2 cup chopped green beans
4 garlic cloves
2 large fresh tomatoes, chopped
1 (12 ounce) can no-salt-added corn
5 red new potatoes, halved or 5 red new potatoes, quartered
1 (28 ounce) can no-salt-added diced tomatoes
2 cups beef broth
1 teaspoon kosher salt
1 teaspoon cocoa powder
1 teaspoon allspice

Steps:

  • Cube the steak and season well with salt and pepper.
  • Heat 1 tbsp of oil in a large, heavy pot (I used enameled cast iron).
  • Add the steak and brown on all sides. Remove to a plate.
  • Add the remaining olive oil and bring back to temperature, then add the onion, carrots, celery, mushrooms and peppers.
  • Cook, stirring, for about 15 minutes, until they begin to soften.
  • Add the cauliflower, beans, garlic, fresh tomatoes, corn and potatoes and stir inches.

  • Cover the pot completely and cook, stirring every hour or so, for 3 hours.

Flavorful and filling beef stew. Best if made the day before serving.

2 tablespoons vegetable oil
2 pounds sirloin steak, cubed
¼ cup all-purpose flour for coating
2 cups boiling water
1 tablespoon Worcestershire sauce
2 teaspoons garlic powder
salt to taste
ground black pepper to taste
1 onion, chopped
4 carrots, cut into 1 inch pieces
1 (29 ounce) can diced tomatoes
3 potatoes, cubed

Steps:

  • Heat oil in a large pot over medium heat. Coat beef with flour. Place in the pot, and evenly brown on all sides.
  • Place 2 cups boiling water, Worcestershire sauce, and garlic powder into pot with beef. Season with salt and pepper. Reduce heat to low, and simmer beef for 2 hours, or until tender.
  • Add onion, carrots, diced tomatoes and potatoes to pot. Continue cooking 30 minutes to 1 hour, until vegetables are soft.

Grandma knew what she was doing with this warm and comforting beef stew. It's seasoned perfectly and the meat is so tender. Everything is prepared in one pot, which makes for easy clean up after preparing this tasty stew. Serve with fresh rolls for a comforting meal.

2 lb beef stew meat
1-2 Tbsp cooking oil
1 1/2 c chopped onion
1 can(s) diced tomatoes with liquid, 14.5 oz
3 Tbsp quick tapioca (I use Kraft minute tapioca)
1 clove garlic
1 Tbsp parsley flakes
1 tsp salt
1/4 tsp pepper
1 bay leaf
6 medium carrots, quartered
3 medium potatoes, quartered
1 c sliced celery
1 can(s) beef broth, 14.5 oz

Steps:

  • 1. Brown the beef stew meat in a large skillet or Dutch oven.
  • 2. Add the onion, tomatoes with their liquid, beef broth, tapioca, garlic, parsley, salt, pepper, and bay leaf. Bring to a boil. If you are using a skillet, transfer this to a pot you can put in the oven or you can transfer this to a Crock Pot.
  • 3. Cover and bake at 350 degrees for 1 to 1 1/2 hours. Remove from oven and stir. Add all the vegetables and cook until tender.
  • 4. If I'm using my Crock Pot, I add the vegetables in at the same time I add the meat mixture. I slow cook it most of the day.
  • 5. Just a note, I always double this recipe because we love to have leftovers. I've have even had to triple it before. The recipe feeds 4 to 6 people one good size bowl of stew each.
