Sticky and sweet, this bundt-shaped banana bread with buttery glaze and cinnamon is a show-stopping bake

175g softened butter , plus extra for the tin
200g self-raising flour
1 tsp cinnamon
100g light muscovado sugar
2 large eggs , beaten
3 tbsp clear honey
2 overripe bananas (about 350g with skins on)
100g stoned date
50g chopped walnut
2 tbsp clear honey
25g butter
50g walnut half

Steps:

  • Heat oven to 160C/140C fan/gas 3. Butter and line the base of an 18cm Bundt mould or round cake tin with baking parchment. Put the flour, cinnamon, butter, sugar, eggs and honey in a large mixing bowl and beat with a wooden spoon or hand-held electric mixer until light and fluffy.
  • Mash the bananas and chop the dates. Stir into the cake mix with the walnuts. Spoon into the prepared tin and smooth the top. Bake for 40-50 mins until firm to the touch and a skewer inserted into the centre comes out clean (a round tin may take 10-20 mins more). Cool in the tin for 15 mins, then turn out and cool on a wire rack.
  • To make the glaze, put the honey and butter in a small pan and bring to the boil, stirring until the butter has melted. Boil briefly, about 1 min, until slightly thickened. Remove from the heat and stir in the walnuts. Leave to cool until thickened and opaque. Spoon over the top of the cake and leave to set.

3 very ripe bananas, mashed
3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed
1/2 cup vegetable oil
2 extra-large eggs, at room temperature
1/2 cup sour cream
1 teaspoon pure vanilla extract
Grated zest of 1 orange
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup coarsely chopped walnuts (optional)
Cream Cheese Frosting, recipe follows
Walnut halves, for decorating (optional)
6 ounces cream cheese, at room temperature
6 tablespoons (3/4 stick) unsalted butter, at room temperature
1 teaspoon pure vanilla extract
2 1/2 cups sifted confectioners' sugar (1/2 pound)

Steps:

  • Preheat the oven to 350 degrees. Grease and flour a 9 by 2-inch round cake pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the bananas, granulated sugar, and brown sugar on low speed until combined. With the mixer still on low, add the oil, eggs, sour cream, vanilla, and orange zest. Mix until smooth.
  • In a separate bowl, sift together the flour, baking soda, and salt. With the mixer on low, add the dry ingredients and mix just until combined. Stir in the chopped walnuts, if using. Pour the batter into the prepared pan and bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes, turn out onto a cooling rack, and cool completely.
  • Spread the frosting thickly on the top of the cake and decorate with walnut halves, if using.
  • Mix the cream cheese, butter, and vanilla in the bowl of an electric mixer fitted with the paddle attachment on low speed until just combined. Don't whip! Add the sugar and mix until smooth.

1/2 cup shortening
2 eggs
1 teaspoon vanilla
1/2 cup buttermilk
3 mashed bananas
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
FROSTING:
1/2 cup butter, softened
2-1/2 cups powdered sugar
3 tablespoons milk
1 teaspoon vanilla
Dash of salt

Steps:

  • Cream sugar and shortening together; add eggs and vanilla. Mix in buttermilk and mashed bananas., In a separate bowl, combine flour, soda, baking powder and salt; add to banana mixture and mix until ingredients are combined. Spoon into a greased 13x9-in. baking pan or two 9-in. round cake pans., Bake at 350° for 25-30 minutes or until toothpick inserted into center comes out clean. Cool cake for 30 minutes before frosting. , For frosting, mix butter, powdered sugar and milk until smooth; add vanilla and salt. If frosting is too thick, add more milk 1 tsp. at a time until reaching desired consistency. Spread on warm banana cake.

2 3/4 cups all-purpose flour, sifted before measuring
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1 1/2 cups granulated sugar
2 eggs
2 teaspoons vanilla
1 cup mashed ripe banana
1/2 cup buttermilk
1/2 cup finely chopped dates
1/4 cup chopped nuts
confectioners' sugar

Steps:

  • Preheat oven to 350 degrees.
  • Grease well a 9 by 5 by 3 inch loaf pan.
  • Sift flour, baking powder, soda, and salt.
  • In large bowl with electrix mixer at high speed, beat butter, granulated sugar, eggs, and vanilla, occasionally scraping side of bowl with scraper, until light and fluffy- about 3 minutes.
  • In small bowl, combine banana and buttermilk.
  • At low speed, beat in flour mixture (in fourths) alternately with banana mixture in 3rds- about 1 minute.
  • Stir in dates and nuts.
  • Bake 1 hour and 10 or 15 minutes.
  • Cool on rack 15 minutes in pan, then turn out on rack until cool.
  • Dust with confectioner's sugar.

My grandmother's recipe which was brought to every family gathering I can remember as a child. Still the best!

1 1/2 c sugar
1/2 c butter, softened
2 large eggs, slightly beaten
1 1/2 c flour
1/2 tsp nutmeg (or mace)
1/2 tsp salt
1 tsp baking soda
3 Tbsp sour milk
1 tsp vanilla
1 c ripe bananas, mashed

Steps:

  • 1. Preheat oven to 350 degrees; grease and flour a 9 x 11 inch cake pan.
  • 2. Cream together butter and sugar.
  • 3. Add eggs, one at a time, mixing after each egg.
  • 4. Sift together flour, nutmeg OR mace, and salt. Add to wet mixture and mix well.
  • 5. Dissolve baking soda in sour milk. (You can add a 1/4 teaspoon of white vinegar to the milk to sour it if you don't have sour milk on hand.) Add to batter.
  • 6. Mix in mashed bananas and vanilla.
  • 7. Bake in 350 degree oven in a 9 x 11 inch cake pan for 45 minutes. Frost with cream cheese frosting.

  • ICING.

  • when mixture reaches full rolling boil, boil for one minute.
  • let cool.
  • add vanilla.
  • beat and spread on warm cake.
