- In a large bowl, combine the flours, sugar, baking powder, cinnamon, baking soda and salt. In another bowl, whisk the egg, apple juice, applesauce and oil until smooth. Stir into dry ingredients just until moistened. Fold in pecans. , Pour into 2 greased 8x4-in. loaf pans. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

GRANDMA'S APPLESAUCE BREAD
Grandma Carr made quick breads and enjoyed them, especially for breakfast, year round. The flavor depended on what she had on hand but all of them were good! Here's her applesauce version.

- Pre-heat oven to 350 degrees. Grease an 8 by 4 inch loaf pan. Put flour, brown sugar, cinnamon, baking powder, baking soda and salt in the bowl of a mixer and beat on low just to combine.
- Add the applesauce and egg. Mix briefly to combine but do not mix for more than a minute or so. Stir in the nuts by hand. Pour into the prepared loaf pan.
- Bake for 45 - 50 minutes at 350 degrees. Cool in pan on a rack for 20 minutes, then remove from pan and let cool completely.
- NOTE: I recently made this recipe with blueberry flavored applesauce and it was awesome. I plan to try the peach or raspberry flavors, too. :)
GRANNY'S BANANA BREAD
My Great-Grandma used to make this for us whenever we would spend the night at her cabin in Paris, Arkansas. I make it now for my kids and it brings back such wonderful memories! It's absolutely magnificent warm with some sweetened butter.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease and flour a 9x5 inch loaf pan.
- In a large bowl, stir together flour, baking soda, cinnamon, nutmeg and white sugar. Stir in eggs, applesauce, bananas and vanilla extract. Fold in raisins and nuts if desired. Pour batter into prepared pan.

- Soak raisins in coffee until plump. Do not drain.
- Cream together the shortening, sugar and eggs. Blend in molasses and vanilla.

GRANDMA'S APPLESAUCE PIE
This is one of the recipes I remember most from my childhood. My grandmother always had this on hand for her grandkids who came to visit. It was invented especially for us kids because it had no "chunks" of apple in it. There was no surprise that the adults loved this pie, just as much as we did.

- Prepare pastry for 2 crust pie shell, using your favorite recipe for pie shells.
- Roll out 2 balls of dough until they measure large enough to fit your pie pan.
- Line bottom of 8" pie pan with one of the rolled out pastry pieces.
- Set the other rolled-out dough aside for a bit.
- Bake the shell for 10 to 15 minutes at 375 degrees; set aside.
- In a mixing bowl, combine beaten eggs, applesauce, sugar and seasonings.
- Pour mixture into 8" prepared pie shell.
- Add top pastry to pie and seal edges.
- With tines of a fork, prick holes on top of pie shell to vent.
- Bake at 450 degrees for 10 minutes, then turn oven down to 350 degrees and continue baking 30 more minutes.
- Note: If you like a more custard-y pie, try adding 1/2 to 1 cup of milk to the above ingredients before pouring into the pieshell (use a 9" shell in this case).

GRANDMA'S ONE BOWL MOLASSES APPLESAUCE CAKE
My Mom has been making this for 20 years. This is a very dense, moist cake, maybe closer to a pound cake, but that's what I like about it. We added the raisins to the recipe, so you could omit them. I also like to add Walnuts, some day I may also add some coconut. This is great warm or cold.

This is one of my family's favorite 'comfort' foods - by all six generations. Don't let the applesauce scare you off; you can't taste it, but it keeps the meatballs tender and moist. Add mushrooms and/or pearl onions for an even heartier 'comfort' meal! Serve over hot buttered noodles or rice. We like a salad and garlic bread, or a plate of sliced tomatoes and cucumbers. Enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with cooking spray.
- Whisk the egg and milk together in a large bowl, and stir in the croutons. Allow the croutons to soak up the milk mixture for about 2 minutes. - Bag the bananas and seal the baggie, getting as much air out as possible. Then, using your hands, just start squishing and squashing, mashing the bananas to a pulp. "Smoosh" the bananas out of the baggie and into the Bread Machine's Pan.
- Put about a 1/4 cup of the Bread Flour in a bowl and stir the Blueberries around in it. This helps keep the Blueberries from clumping together in the dough.
- Insert the Bread Pan into the Machine and close the lid. Set the Machine for a Medium Crust, 2 Pound Loaf of Wheat Bread.
