OLD-FASHIONED APPLE DUMPLINGS



Old-Fashioned Apple Dumplings image

These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

1 recipe pastry for double-crust pie
6 large Granny Smith apples, peeled and cored
½ cup butter
¾ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 cups water
2 cups white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
  • On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
  • With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
  • In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
  • Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

2 sticks (1 cup) salted butter, plus more for greasing the pan
2 Granny Smith apples
Two 8-ounce cans refrigerated crescent roll dough
1 1/2 cups sugar
1 teaspoon vanilla extract
8 ounces citrus-flavored soda, such as Mountain Dew (two-thirds of a 12-ounce can)
Cinnamon, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch pan.
  • Peel and core the apples, then cut each into 8 slices. Roll each apple slice in a crescent roll piece, then transfer to the prepared pan.
  • Melt the butter in a saucepan, then add the sugar and barely stir. Add the vanilla and stir slightly, then pour the entire mixture over the apples. Pour the citrus soda around the edges of the pan. Sprinkle with cinnamon and bake until golden brown and crispy on top, about 40 minutes.
  • Serve, spooning some of the sweet sauces from the pan over the top.

2 Granny Smith apples - peeled, cored and quartered
1 (8 ounce) can refrigerated crescent rolls
⅛ teaspoon ground cinnamon
½ cup butter
¾ cup white sugar
1 cup orange juice
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Wrap each apple piece in one crescent roll. Place seam side down in an 8x8 baking dish and sprinkle with cinnamon.
  • In medium saucepan, combine butter, sugar, and orange juice; bring to a boil. Remove from heat and stir in vanilla. Pour over rolls.
  • Bake for 30 minutes, or until pastry is golden and apples are tender. Spoon sauce over rolls when serving.

Pastry for double-crust pie
6 small tart apples, peeled and cored
1/3 cup sugar
2 tablespoons half-and-half cream
3/4 cup maple or maple-flavored syrup, warmed

Steps:

  • On a floured surface, roll out pastry to an 18x12-in. rectangle. Cut into six 6-in. squares. Place an apple on each square. Combine sugar and cream and spoon into apple center. Moisten edges of pastry; fold up the corners to center and pinch to seal. , Place on an ungreased 13x9-in. baking pan. Bake at 450° for 15 minutes. Reduce heat to 350° bake 30 minutes longer or until golden brown, basting twice with syrup. Serve warm.

2 medium Granny Smith apples
2 tubes (8 ounces each) refrigerated crescent rolls
1 cup sugar
1/3 cup butter, softened
1/2 teaspoon ground cinnamon
3/4 cup Mountain Dew soda
Vanilla ice cream

Steps:

  • Preheat oven to 350°. Peel, core and cut each apple into 8 wedges. Unroll both tubes of crescent dough; separate each into 8 triangles. Wrap a triangle around each wedge. Place in a greased 13x9-in. baking dish., In a bowl, mix sugar, butter and cinnamon until blended; sprinkle over dumplings. 3 peeled diced apples
3 cups water
1/2 cup sugar
1 cup baking mix
1 teaspoon cinnamon
1/2 cup milk

Steps:

  • 1. Peel and dice the apples.
  • 2. Boil the water.
  • 3.When the water is boiled put the peeled and chopped apples, sugar and cinnamon.
  • Dumplings------------.
  • 4.Put the baking mix in a small mixing bowl and pour in the milk stir until gooey.
  • 5. Once the apples are soft put in tablespoon full of the gooey baking mix.
  • 6. Stir the apple dumplings and let the dumplings stay on the oven boiling for 25 minutes.

1-1/2 cups sugar
1-1/2 cups water
1/4 cup red cinnamon candies
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
DUMPLINGS:
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2/3 cup shortening
2/3 cup cold whole milk
6 small baking apples, peeled and cored
3 tablespoons butter
1 large egg white, beaten
1 tablespoon sugar
Half-and-half cream, optional

Steps:

  • Combine all sauce ingredients in a medium saucepan. Bring to a full rolling boil, stirring occasionally. Set aside. , For dumplings, combine flour, baking powder and salt in a large bowl. Using a fork or pastry blender, cut in shortening until mixture resembles coarse crumbs. Sprinkle in milk, mixing lightly with a fork until a soft dough forms. Shape into a ball. , On a lightly floured surface, roll dough to an 18x12-in. rectangle. Cut into six squares. Place an apple in the center of each square; dot with butter. My grandmother is famous for this recipe which has been a family favorite for generations. She will only make it during the fall, but I have a hard time sticking to the seasonal stipulation because they are so darn good! Grandma swears that Jonathan apples are the only decent apples to use in this recipe, but any other tart apple would work just as well. Enjoy!

3 cups flour
1 cup shortening (such as Crisco)
1 teaspoon salt
1/2 cup ice cold water
8 johnathan apples, peeled and cored
sugar
butter
cinnamon
1 cup sugar
2 cups water
4 tablespoons butter

Steps:

  • Creating the pie dough:.
  • Blend flour, salt, and shortening together using a pastry cutter until the mixture is about the texture of corn meal.
  • Add 1/2 cup of ice cold water and mix the dough (I find using my hands for this is easiest). If dough is too dry, add a bit more water but sparingly.
  • Roll dough out on a lightly floured surface to 1/8 inch thickness. Cut into eight squares.
  • Filling the dumplings:.
  • Place one apple on a square of pie dough. Fill the apple with sugar, sprinkle with cinnamon, and dot with butter.
  • Bring corners of pie dough to top of apple and pinch shut.
  • Place finished dumplings in a 9x13 greased pan.
  • Syrup:.
  • Bring to boil sugar, water, and butter in a sauce pan. Boil for two minutes.
  • Pour syrup mixture around the dumplings.
  • Bake at 400 degrees for 40 minutes or until golden brown. Baste the dumplings with the syrup from the pan every 5 to 7 minutes.
