GOUDA BACON CHEESEBURGER

- 1. In a small bowl combine the Thousand Island dressing, bacon bits, mustard powder, diced onion, and, if desired, a dash of ketchup.
- 2. Mix ingredients until combined.
- 3. Cook the applewood smoked bacon in a separate frying pan. Drain the bacon and pat dry with paper towels.
- 4. Let cool to finger touch and rip each strip into half pieces.
- 5. Cook your patties to desired doneness.
- 6. Also, toast your hamburger buns.
- 7. Construct your hamburger by placing about a tablespoon of the Thousand Island mixture on the inside facing of the bottom half of the bun.
- 8. Top this with a slice of Gouda cheese.
- 9. Then add the beef patty.
- 10. Add another slice of Gouda cheese.
- 11. Break your thin slice of white onion into individual rounds, splitting equally between the two buns.
- 12. On the inside face of the top half of the bun, add an additional tablespoon of Thousand Island mixture.
- 13. Add slices of bacon. Of course, this is your burger, so if you like additional items like pickles, tomatoes, or lettuce, please don't let these instructions stop you.
- 14. You're ready to serve! Favorite beverage in hand, onion rings or fries on the side, all up to you.
BACON WRAPPED SMOKED GOUDA STUFFED CHICKEN BREASTS
I found this recipe on another site when I was looking to use up some leftover smoked gouda. It's very flavorful, easy enough for weekenights yet perfect for a dinner party too.

- Combine, cayenne, garlic powder, paprika and pepper.
- Flatten chicken breasts to approx 1/4" thickness.
- Season both sides of chicken with the cayenne mixture.
- Place small piece (s) of cheese on chicken and roll up, pressing firmly.
- Wrap each stuffed breast with a bacon slice and then brown over medium heat until bacon just begins to crisp.
- Bake in a 350 oven for 20 minutes.

- Heat the grill as directed.
- Cook the bacon in a skillet over medium heat until crisp; remove with a slotted spatula and place on paper towels to drain. Crumble.
- Using your hands, mix the beef, parsley, cheese, onion, Worcestershire, salt, pepper and cooked bacon in a bowl until well blended; do not overmix. Using a light touch, form into 6 patties no more than 1 inch thick. Refrigerate the burgers until the grill is ready.
- Brush the grill grate and coat it with oil. Put the burgers on the grill, cover, and cook for 7 minutes, flipping after about 4 minutes, for medium-done (150°F, slightly pink). Add a minute per side for well-done (160°F).
- To toast the buns, put them cut-sides down directly over the fire for the last minute of cooking.
- If serving the burgers directly from the grill, serve on the buns. If the burgers will sit, even for a few minutes, keep the buns and burgers separate until just before eating.

- In a large skillet, heat the oil. Add the sliced onion and a pinch of salt, cover and cook, stirring a few times, until the onion is crisp-tender and just turning translucent, about 5 minutes. Stir in the hot sauce and remove from the heat. Season with salt, if desired.
- Heat a large griddle. Spread the butter on 1 side of each bun and griddle buttered side down over moderate heat until toasted, about 2 minutes. Transfer the toasts to a plate. Add the bacon to the griddle and cook over moderate heat until crisp, about 4 minutes per side; drain on paper towels. Wipe off the griddle.
- Season ground beef with salt and pepper and form ground beef into 4 patties. Cook on the griddle over moderately high heat until medium-rare, about 2 minutes per side. Top each burger with 1/4 cup of smoked Gouda and cook until the cheese melts, 1 minute.
- Set the burgers on the unbuttered sides of 4 buns. Top with the bacon, onion and barbecue sauce. Close the burgers and serve, passing more barbecue sauce.

GOUDA TO KNOW YA BACON BURGERS
Ok, so honestly these were pieced together from parts of several recipes...honorable mention goes to Kittencal (onion soup mix) and Rachael Ray (Gouda). I have always eaten my burgers medium rare.....but these are cooked med- well due to my suspicion of grocery store ground beef. Surprisingly they were very juicy!

Steps:
- Combine all ingredients in a bowl using a fork (except bacon and rolls).
- Refrigerate 1 hour.
- Form patties with a large indent in the middle of each one.
- Light your charcoal or gas grill.
- Allow meat to sit at room temperature for 20-30 minutes prior to grilling.
- Grill direct heat 4 minutes each side then 4 minutes indirect each side to finish.
- Let rest a few minutes while toasting buns and preparing condiments.
- Top with crispy bacon and serve on toasted buns with your favorite condiments.
