1 liter gooseberry
1 piece fresh ginger (3cm across)
300 ml sugar
50 ml lime juice

Steps:

  • Boil the gooseberrys with the ginger, the sugar and the juice in some water until soft.
  • Strain through a strainer, removing pips and peel.
  • It might be decorative to save some pips to make the sorbet spotted.
  • Season with juice and sugar, it shouldn’t be to sweet sorbet but consider that the taste is mitigated when refrigigated.
  • Refrigigate in a metal bowl, stirring ones every hour until the sorbet is even after about 10 hours.
  • Serve in glasses decorating with “fresh” gooseberrys and cumcuats.

Whip up this yoghurt-based fruity syllabub dessert in only 20 minutes - great for a last minute dinner party

250g gooseberry , topped and tailed
3 tbsp caster sugar
200g Greek yogurt
1-2 tbsp icing sugar
1 tsp vanilla extract
200ml double cream

Steps:

  • Put the gooseberries and sugar in a pan with a splash of water. Heat gently, stirring, then bring to a simmer and cook until the fruit starts to burst. Squash the gooseberries with a potato masher or fork until pulpy. Cool then chill until cold in the fridge.
  • Put the yoghurt in a bowl and beat with the icing sugar and vanilla until smooth. Gently whisk in the cream (it will thicken as you whisk so don't overdo it). Ripple through the gooseberry pulp then spoon into pretty glasses or bowls to serve.

  • Put the wine and sugar in a large pan and gently heat until the sugar has dissolved. Add the gooseberries and elderflower cordial, cover and bring to a simmer for 5 mins or until the berries are squishy. Cool a little.
  • In two batches, blitz to a purée in a food processor. Transfer to a freezerproof container (about 2 litres should do it), cool at room temperature, stirring now and again, then cover and freeze overnight until solid.
  • The next day, leave at room temp for 15 mins or until just softened. Chop into rough chunks, then process with the egg white until thick, pale and smooth. Spoon the sorbet back into the container and refreeze. Will keep for up to 1 month. Let it soften for a few mins out of the freezer before you scoop.
