Steps:
- Wrap tofu in a clean towel and place onto a plate. Set another plate on top, and place a 3- to 5-pound weight on top. Press tofu for about 20 minutes; drain and discard the accumulated liquid.
- Cut tofu into 1-inch by 2-inch chunks. Sprinkle 1/4 teaspoon salt onto one slide; flip over and sprinkle remaining 1/4 teaspoon on the other.
- Heat oil in a wok or large skillet. To test if the oil is ready, dip a chopstick or wooden spoon in it; if bubbles rise, it is ready. If the oil smokes, it is too hot.
- Gently place 5 to 8 pieces of tofu at a time in hot oil using metal tongs. Be very careful as oil may splatter; use a splatter guard if possible. Fry tofu until golden, 3 to 4 minutes.
- Drain tofu on a plate lined with several paper towels. Allow to cool slightly before serving.

THE BEST PAN-FRIED TOFU
I have had MANY people ask me how I pan fry my tofu and get it so crispy and firm. There are a few reasons why:-). First I either use a non-stick or cast iron pan, I don't overcrowd the surface, I drain my tofu REALLY well, use only extra firm Chinese style and MOST important of all, I leave it undisturbed while cooking and this allows the golden crust we all love on pan-fried tofu to develop! Please find detailed instructions below on how to make the best pan-fried tofu ever!

Steps:
- Take your block of tofu and wrap it in several layers of paper towels.
- Gently press the tofu with your hands or against the counter top to release the liquid. This will take about a minute.
- Slice the tofu into pieces about 1/2 an inch thick.
- Set tofu aside.
- If you are using a non-stick pan heat it slightly on medium-high heat (about 30 seconds) before adding oil.
- If you are using a cast iron pan, please heat for about 1 minute to 1 1/2 minutes on medium-high heat. Cast iron is very thick and you want the pan to be heated evenly before adding the tofu.
- Add oil to heated pan.
- Gently spread oil over the entire surface of the pan.
- Set the tofu pieces in the pan, leaving ample room between them. They should sizzle when placed in the oil. Sprinkle the tops with salt and a little cayenne pepper.
- Now, the MOST IMPORTANT step is -- LEAVE THEM ALONE for about 6 or 7 minutes. Just gently shake them to make sure they don't stick to the pan. Do NOT turn them or agitate them in any other way. When you see a golden crust beginning to creep its way up the sides of the slices, turn them and spice the other side. Add more oil if the pan seems too dry.
- The second side will only take about 4 minutes to cook.
- When they are evenly browned take them out of the pan and place them on paper towels to drain.
- These are very simply seasoned and basic and can now be used any way you like. I like these with steamed broccoli and peanut sauce -- or in a sandwich with grilled peppers and mushrooms and aioli -- or just eaten with ketchup:-).

Steps:
- Drain the tofu, wrap in 4-5 sheets of kitchen paper, put on a plate and put something heavy over the top, like a wooden chopping board, or a tray with a few tins on it. Leave for 20 mins to drain the excess moisture from the tofu.
- Mix the cornflour, garlic, paprika, salt and pepper in a small bowl. Unravel the tofu from the paper, cut in half through the centre, then cut into triangles, cubes or strips.
- Toss the tofu pieces in the spiced cornflour to coat all over. Heat the oil in a large non-stick frying pan over a medium-high heat. Fry the tofu for 2-4 mins on each side until golden, crunchy and browned at the edges. Smaller cubes will take 2 mins each side, larger triangles will take 4 mins. Cook in batches if you need to, adding a little more oil if the pan gets dry.
- Drain the cooked tofu on kitchen paper and season with a pinch more salt before serving.

Steps:
- Cut the tofu horizontally into three equal slabs. Wrap each slab in a clean tea towel or paper towel and press the toful for 45 minutes. If time does not permit, wrap tofu and press gently to extract as much moisture as possible.
- For seasoning mix; place the nutritional yeast, salt, herbs, and spices in a wide, shallow mixing bowl. Stir well to combine.
- Stir the milk and lemon juice together in a small mixing bowl. Place the flour in mixing bowl.
- Cut each slab of tofu into 4 triangles, making a total of 12 in all. Working with one piece at a time, dredge the tofu in the flour. Shake off any excess. Now submerge the tofu in the "soured" milk. Coat the tofu in the seasoning mix.
- Coat a large skillet with vegetable oil and heat over medium high heat. When oil is hot, add the tofu pieces in a single layer. Cook until bottoms are well browned, then turn pieces over and cook until browned. Add more oil between batches and adjust the heat as necessary.
- As soon as tofu is removed from the skillet, place it on a plate lined with paper towels and blot off excess oil. Serve and enjoy!

Steps:
- Preheat the oven to 400°. Brush the cups of three 12-cup mini cupcake pans with the melted butter. Then sprinkle each tin with breadcrumbs and shake the pan, tilting to coat with breadcrumbs.
- Bring a medium pot of salted water to a boil. Add the macaroni and cook according to the package directions until al dente. Drain and set aside.
- Meanwhile, make the béchamel: Melt the remaining 2 tablespoons of butter in a medium pot over medium heat. Add the flour and cook, stirring, until very lightly toasted, about 1 minute. Stir in the mustard and paprika.
- While whisking, slowly pour in the milk. Bring to a boil and cook over medium-low heat, stirring, until the mixture is thick enough to coat the back of a spoon, about 2 minutes. Reduce the heat to low and add the cheese, a small handful at a time, stirring until the cheese is melted before adding the next addition. (You should have 2½ cups cheese sauce.) Remove from the heat and stir the cooked macaroni into the cheese sauce.
- In a large bowl, beat the eggs, then scrape the mac and cheese into the eggs and stir to combine. Season with salt and pepper.
- Mound about 2 rounded tablespoons of the mac and cheese mixture into each cup of the prepared cupcake pan.
- Bake until the cheese is melted and the bites are golden brown, 20 to 25 minutes. Let cool for at least 5 minutes before removing from the tins. Run a knife around the outside of each bite before removing it. Serve warm or at room temperature with hot sauce on the side, if desired.

- Add the oats, coconut, and salt to the base of a food processor or high-speed blender and pulse until a fine flour forms. Add the maple syrup to the food processor along with 1 tablespoon of filtered water and pulse until a damp dough forms. Add additional water in 1 tablespoon increments, if necessary – the mixture should look relatively dry, but hold together when you pinch it. Use a spatula to firmly and evenly press the base into the pan, then bake in the middle rack of the oven for 10 minutes while you prepare the filling.
- Quickly rinse the food processor, then add the tofu, melted chocolate, coconut milk, and salt to it. Blend until a thick and even texture forms. Pour the filling over the pre-cooked base and use a spatula to spread it out smoothly and evenly.
- Top with vegan marshmallows, then bake in the middle rack of the oven for 20 minutes. Remove from the oven and let cool completely before slicing and serving; the marshmallows will be puffed up when first removed, but will deflate with time.

- Bubble tea (boba) I’m starting my Taiwan food guide with a drink. Acceptable? Let’s roll with it. The chewy tapioca pearls in bubble tea are so sweet and filling that it’s almost like a dessert.
- Coffin bread. Of all the food to try in Taiwan, there’s none weirder than coffin toast, also called coffin bread. Actually, it’s just the name that’s bizarre.
- Sausage in a rice bun. This Taiwanese dish is sometimes described in English as ‘little sausage in big sausage’ which actually hits the nail on the head.
- Pork pepper buns. One of my first meals in Taiwan was at Fuzhou Pepper Buns inside Taipei’s Raohe Night Market. The recipe for these meaty morsels has been perfected over several decades and the result is undeniably delicious.
- Stuffed chicken wings. How to make chicken wings more delicious than they already are? Give them an Asian makeover and stuff them with rice and spices!
- Peanut ice cream rolls. The Taiwanese certainly have a sweet tooth. As you’ll learn, plenty of the best Taiwanese foods are desserts including peanut ice cream rolls.
- Squid. Another of the best street foods in Taiwan is battered seafood. Every night market I visited had row upon row of squid stands, all serving my favourite seafood dish for practically pennies.
- Taiwanese fried chicken (TFC) Next in my Taiwan food guide, another dish that isn’t unique to Taiwan but is done so well. People tend to think of Korean fried chicken before they do Taiwanese fried chicken but having tried both, I can vouch for TFC being just as tasty.
- Xiao long bao (soup dumplings) While they might look like regular dumplings, xiao long bao are soup dumplings and probably Taiwan’s most famous food.
- Other dumplings. If you don’t fancy the queue for Din Tai Fung, it’s not a problem because there are dumplings all over Taiwan. You’ll find them at night markets, restaurants, street stalls and my favourite chain, Bafang Dumpling.

- It Looks Weird. Advertisement. Grilled Tofu and Squash With Chimichurri Sauce and Couscous. Some people claim they hate tofu because it looks strange. You open the package, pour out the water, and you are left with a spongy white block of curd.
- It Has a Bad Reputation. “Chicken-Fried” Tofu Steaks. When I say the word “tofu,” what’s the first thought that comes into your mind? Hippie? Health food?
- It’s Fake Food. Advertisement. Kidney Bean and Tofu Burger. Uh, no, it isn’t. Tofu is made from soy milk which comes from soybeans. Tofu is a vegetable, a plant-based food.
- It Tastes Mushy & Like Eating a Sponge. Spicy Balsamic Tofu Veggie Kebabs. When you take a block of tofu out of the package, it is wet, mushy, and spongy.
- It Has No Flavor. Sesame Tofu. A pet peeve of mine has become the way talented chefs treat tofu. Whether I’m watching a cooking show on television or reading recipes in magazines, people are instructed to drain the tofu, cut it up and cook it.
- The Texture is Strange. Grilled Buffalo Tofu Po’ Boy with Apple Slaw. Even if you press the tofu and season it, you still have to cook it correctly and part of that is cutting the tofu into pieces appropriate for the dish.
- It Doesn’t Taste Like Chicken. Crispy Tofu Nuggets. Some people eat a tofu dish like these amazing Crispy Tofu Nuggets and declare that it doesn’t take like chicken.
- It’s Bad for My Health. Even though soy has been the staple of the diets of many cultures for thousands of years, there are a lot of conflicting opinions out there about the health benefits and consequences of eating soy.

- Beef Noodle Soup (Niu Rou Mian 牛肉麵) Beef stew noodle soup is Taiwanese comfort food. You can find the world’s most expensive bowl of beef noodle soup in Taipei, but there are also affordable beef noodle shops on practically every corner.
- Marinated Pork Rice (Braised pork over rice or lu rou fan 滷肉飯 ) Salty, meaty, and tasty. lu rou fan is minced pork in gravy served over freshly steamed white rice, and it’s a simple yet wonderfully tasty meal served in most local Taiwanese restaurants.
- Bubble Tea (pearl milk tea/bubble milk tea/boba 珍珠奶茶) The world-famous bubble tea was born in Taiwan. This popular flavored iced tea began in the early ’80s in Taichung’s Chun Shui Tang (春水堂) teahouse that came up with an idea of concocting a cold flavored milk tea.
- Gua Bao (割包) It’s often compared to a type of Taiwanese “burger”. Gua Bao is a street snack filled with braised pork belly that has been braised in a mixture of rice wine and soy sauce, along with cilantro, pickled mustard greens and crushed peanut powder, sandwiched in puffy mantou steamed buns.

Stinky tofu is fermented in a brine that usually includes meat, fermented milk, Chinese herbs, dried fish or shrimp, bamboo, mustard, and amaranth greens, and left for several months.
- Pineapple cake. These small pastries filled with pineapple paste are the tastiest after-dinner treats that go perfectly with a cup of tea. Pineapple cake is also one of Taiwan’s best food souvenirs, as they can be brought home on the plane.
- Tian bu la (Taiwanese oden) Tian bu la is a fish paste that’s been molded into various shapes and sizes, deep-fried, then boiled in a broth. The food is basically a Taiwanese take on Japanese oden, with more sugariness, tougher fish cakes, and a signature sauce.
