1 cup granulated sugar
1/2 cup heavy cream
1 tablespoon salted butter
Two 9-inch unbaked, unrolled pie crusts
1 to 2 Granny Smith apples, peeled, cored, and diced into 1/4-inch cubes (about 1 cup)
Couple pinches ground cinnamon
1 egg, beaten
1/4 cup demerara sugar

Steps:

  • Pour the sugar and 1/2 cup of water into a small saucepot, trying to keep the sugar in the middle of the pot to avoid crystallization on the sides. Bring to a boil and cook until the syrup is thick and pecan brown, 15 to 20 minutes.
  • Add the heavy cream, be careful because it will bubble up. Stir in the butter and let cool completely, about 30 minutes.
  • Preheat the oven to 350 degrees F.
  • Punch out eight 4 1/2-inch circles from the pie dough. Toss the apples with 1/4 cup of the cooled caramel and the cinnamon. Brush the edges of the dough circles with beaten egg. Mound about 1 heaping tablespoon of the apple filling in the center of each circle. Fold the dough in half and crimp the edges with a fork.
  • Brush the tops with beaten egg and sprinkle with demerara sugar. Cut 2 small slits on top of each pie and bake on silicone-lined sheet pan until golden, 20 to 25 minutes. Drizzle the hand pies with leftover caramel sauce and serve.

1/4 cup cornstarch or tapioca starch
1/4 teaspoon salt
1 cup buttermilk
1/4 cup store-bought dulce de leche, plus more for garnish
4 large eggs
1 large or 2 small d'Anjou pears
1 baked 9-inch deep-dish pie crust, recipe follows, or store bought
1/2 cup dried apple slices
Ground cinnamon, for garnish
1 1/2 cups all-purpose flour, plus more for rolling
1/2 teaspoon sugar
8 tablespoons (1 stick) cold unsalted butter, cubed
6 tablespoons ice water
Nonstick cooking spray, for spraying pie plate
1 egg beaten with 1 tablespoon water

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the sugar, 2 tablespoons of the cornstarch and the salt in a large bowl. In a medium bowl, whisk together the buttermilk, dulce de leche and eggs until well combined. Add the egg mixture to the cornstarch mixture and whisk to combine.
  • Halve and core the pear. Cut lengthwise into 1/4-inch slices. Add the slices to a bowl with the remaining 2 tablespoons cornstarch and toss to completely coat the fruit.
  • To assemble the pie and bake, place the baked deep-dish pie crust on a baking sheet. Lay the dried apple slices in a single layer on the bottom of the crust. Fan the pear slices out in a circle over the apple slices. Stir any excess cornstarch from the pears into the custard filling and pour the filling over the top of the pears.
  • Bake the pie until the center is set and the pears are slightly golden brown, about 1 hour. Let cool to room temperature.
  • Before serving, dust the top of the pie with ground cinnamon. Heat some dulce de leche in a microwave for 30 seconds and stir to loosen. Drizzle over the top of the pie and serve.
  • In the bowl of a food processor, combine the flour, sugar and salt and pulse to mix. Add the butter and pulse to a coarse meal (the butter should be in pea-size pieces). With the motor running, stream in the water until the dough starts to come together. Dump out the mixture, gather into a ball, press to a disk and wrap well in plastic wrap. Refrigerate for at least 1 hour, and up to overnight.
  • Spray a 9-inch deep-dish glass pie plate with nonstick cooking spray. Remove the dough from the fridge, unwrap and transfer to a floured surface. Roll out the dough into a 12-inch circle. Transfer the dough to the prepared pie plate. Dock with a fork and crimp the edges between your fingers to make a decorative border, removing any excess dough. Freeze the crust for 20 minutes.
  • Preheat the oven to 425 degrees F.
  • Line the crust with a sheet of parchment paper and fill with pie weights or uncooked beans. Bake for 15 minutes. Remove the foil and weights, brush with the beaten egg and continue to bake until the crust is golden brown, about 10 minutes. Let cool completely.

Steps:

  • Peel core and slice the Gala Apples (4) and Pear (4).
  • In a large bowl add the sliced apples, sliced pear, Brown Sugar (1/2 cup), Ground Cinnamon (1 tablespoon), Chinese Five Spice Powder (1/2 teaspoon), Vanilla Extract (2 teaspoon), All-Purpose Flour (3 tablespoon) and Dried Orange Peel (1 1/2 teaspoon). Mix everything together, then pour in the Butter (8 tablespoon) and continue to mix in.
  • On a pie dish roll out and press in the 9-inch Pie Crust (1). Pour in the apple mixture into pie dish.
  • Lay the second 9-inch Pie Crust (1) on top. Tuck the top layer behind the pie crust underneath and using both hands seal it. Using a knife create four small slices in the center.
  • Beat the Egg (1) with a little water to make egg wash.
  • Brush the egg wash on top of the pie crust evenly and poke some holes in the crust.
  • Preheat your oven to 375 degrees F (190 degrees C).
  • Bake the pie in a preheated oven for 45 minutes to an hour. Slice and enjoy!

1 cup slivered almonds, chopped
3/4 cup powdered sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
Dash salt
1/2 cup butter, softened or melted
1/2 cup sugar
1/2 cup brown sugar
1/4 cup lemon juice
1/4 cup butter
1 teaspoon maple flavoring
2 tablespoons all-purpose flour
2 tablespoons cornstarch
1 teaspoon ground cinnamon
Dash, salt
3 Granny Smith apples, peeled, sliced
3 Anjou pears, peeled, sliced
1 (8-ounce) package cream cheese
1 tablespoon heavy cream
1 (14-ounce) package individually wrapped caramels
1 can evaporated milk

Steps:

  • Oatmeal Crust Preparation: Preheat oven to 350 degrees F. Combine oats, almonds, powdered sugar, flour, cinnamon and salt in a bowl. Stir in butter. Grease/spray a 9-inch pie pan. Press half of oatmeal mixture into bottom and up sides. Take remaining half of oatmeal mixture and spread it out onto a greased cookie sheet as if making 1 large cookie. Bake for 20 minutes or until golden brown. Set aside to cool while making pie filling.
  • Apple-Pear Cream Filling Preparation: In a saucepan, whisk together sugars, lemon juice, butter and maple flavor over medium heat. In a small mixing bowl, combine flour, cornstarch, cinnamon and salt and sprinkle into sugar mixture in saucepan. Mix in sliced apples and pears. Cook for about 8 to 10 minutes until mixture starts to thicken. Remove from heat. Using an electric mixer, whip cream cheese and heavy cream until smooth. Stir cream cheese mixture into warm apple mixture until well incorporated. Pour filling into prepared pie crust.
  • Assembly: Take baked large "oatmeal cookie" and crumble it into small chunks. Sprinkle oatmeal crumble onto pie filling, covering it almost completely. Bake for 50 minutes to 1 hour at 375 degrees F. Cool at least 30 minutes. While pie is cooling, prepare caramel sauce.
  • For Caramel Sauce: Unwrap caramel candies. In the top of a double boiler, melt the caramels in the evaporated milk, stirring constantly until the sauce is smooth and pourable. Pour caramel sauce in a zigzag pattern over cooled pie. May serve with whipped cream or ice cream, if desired.

6 Lady apples, stems removed
6 Seckel pears, stems removed
2 cups granola
1 cup sugar
1/2 cup dark corn syrup
2 teaspoons pure vanilla extract
3 tablespoons water
4 tablespoons (1/2 stick) unsalted butter
1 cup heavy cream

Steps:

  • Insert a licorice stick, cinnamon stick, or bamboo skewer into the stem end of each apple and pear. Spread the granola on a baking sheet; reserve. Have ready 1 or more cooling racks or a large sheet of parchment paper for cooling the caramel fruits.
  • In a saucepan over low heat, combine the sugar, corn syrup, vanilla extract, and water. Cook, stirring, until the sugar melts. Add the butter and cream, raise the heat to medium-high, and bring to a boil. Cook, stirring occasionally, until the caramel registers 240 degrees F on a candy thermometer, about 10 minutes. Remove from the heat and let cool for 2 minutes.
  • One at a time, dip the apples and pears in the caramel, twirling and swirling them to coat completely. Dip the tops in the granola to coat them, then transfer to the cooling rack or the parchment paper to cool. As the apples and pears cool, the caramel will set. Store the caramel apples and pears, wrapped in cellophane if desired, in a cool, dry place until ready to serve or up to 2 days.

This apple pie is rich and full of gooey caramel and soft, sweet apples and it's nowhere NEAR healthy. I love to make it in fall on a cold day and serve it warm. The recipe was adapted roughly from the New Joy of Cooking, apple pie 11, but it was my decision to make the caramel for the filling. I don't know if there's any other recipes for apple pie that include caramel (probably is), but I know this is good, and it's usually better the next day (for breakfast, of course.)

1 cup vegetable shortening
2 cups flour
1 tablespoon salt
1 tablespoon sugar
1/4 cup ice water
8 large apples, peeled (Galas or Fujis do fine)
6 tablespoons butter
2 cups brown sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon baking soda

Steps:

  • Combine the flour, salt and sugar in a large bowl. Add the shortening in large chunks and blend with a pastry blender. Drizzle the ice water over the flour mixture and cut into/across the dough repeatedly with a rubber spatula. The quicker the pastry is made, the better. Refrigerate for at least 30 minutes.
  • Slice the apples a 1/4 inch thick. Heat 2 tbsp of butter in a large frying pan and sauté the apples until soft on the outside. Add 1 cup sugar and the cinnamon and nutmeg. Cover and cook for about 15 minutes. Take the apples out of the pan and arrange them on a plate or cookie sheet to cool.
  • Preheat oven to 350°F.
  • Add the remaining 4 tbsp of butter and 1 cup brown sugar and cook, (medium heat) for 2 minutes. Add 1 tsp of baking soda and stir. Don't be afraid of he colour it turns, that's because of the baking soda, it's keeps it from hardening. The great thing about this caramel is it tastes like caramel apples because the apples were cooked in the butter.
  • Take the pastry dough out of the fridge and role it out into 2 12 inch circles. place one in a 10 inch pie pan.
  • Combine the caramel and the pre-cooked apples in a bowl and transfer into the pie crust. Place the second round of pastry over the pie and seal around the edges, rolling up any excess dough. Using a sharp knife, cut 4 slits in the top layer of pastry, to prevent explosion. Bake in the oven for 30-35 minutes, or until the crust is golden brown.
  • When the pie comes out of the oven, make sure you let it cool for at least 4 hours before eating it so it can set.

Place the dough gently into a 9x2-inch pie pan; you can do this by flouring a rolling pan and rolling the dough loosely around it, then unrolling it into the pan. Brush away any excess flour on the surface. With a sharp knife, trim the edges of the pastry to fit the pie pan. Cover pan with plastic wrap and place in the fridge. Roll out the other disc in the same fashion, then transfer to a baking sheet lined with parchment paper. Cover with plastic wrap and place in fridge.
  • Make the filling: In a large bowl, toss together pears and lemon juice. Mix in flour, sugar, cinnamon, nutmeg or ginger if using, and toss to combine. Set aside.
  • Make the Caramel Sauce: In a medium skillet over medium-low heat, melt butter. Add granulated sugar, brown sugar and heavy cream, and cook, stirring occasionally, until sugar has melted. Let simmer 2-3 more minutes to thicken slightly more. Remove from heat and mix in vanilla and salt. Allow to cool to room temperature.
  • Meanwhile, preheat oven to 400°F/200°C. Line a baking sheet with parchment paper and place in the lower third of the oven.
