The Best Peach Cobbler image

In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
  • Let cool to room temperature before serving.

1 tablespoon all-purpose flour
1 cup water
½ cup milk
1 teaspoon garlic base (such as Better Than Bouillon® Roasted Garlic Base)
2 ½ cups cubed cooked turkey
½ cup chopped carrots
½ cup chopped celery
¼ cup chopped onion
¼ teaspoon dried oregano
¼ teaspoon ground thyme
¼ teaspoon dried parsley
salt and ground black pepper to taste
nonstick cooking spray
1 cup all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
3 tablespoons butter
½ cup milk
1 pinch Italian seasoning
1 pinch garlic granules

Steps:

  • Melt 1 tablespoon butter in a saucepan over medium heat. Whisk in 1 tablespoon flour to create a paste. Slowly add in water, stirring to incorporate. Stir in 1/2 cup milk and garlic base until mixture begins to bubble. Add turkey, carrots, celery, and onion and heat until warm, about 5 minutes. Mix in oregano, thyme, parsley, salt, and pepper. Remove from the heat and set aside.
  • Preheat the oven to 375 degrees F (190 degrees C). Spray an 8x6-inch casserole dish with cooking spray.
  • Whisk together 1 cup flour, baking powder, and salt for cobbler topping in a bowl. Cut in 3 tablespoons butter until the mixture resembles coarse meal. Gradually stir in 1/2 cup milk until dough pulls away from the side of the bowl.
  • Pour turkey filling into the prepared casserole dish. Drop cobbler topping on top and sprinkle with Italian seasoning and garlic granules.
  • Bake in the preheated oven until cobbler topping is golden brown, about 25 minutes.

The holiday treats are cute, sweet and made from all kinds of goodies youngsters love to nibble on. "The kids and I had a ball making these tasty turkeys for Thanksgiving one year," shares Sue Gronholz of Beaver Dam, Wisconsin. "They loved forming the turkey bodies from the gooey cereal mixture and twisting the sandwich cookies apart. "But using chocolate frosting to "glue" on the candy corn was their favorite part." This recipe makes a big batch of tempting turkeys, so there are plenty for snacking and sharing. These festive fall treats also would make fun favors at each place setting on your Thanksgiving table-if your family doesn't gobble them up first!

1/4 cup butter, cubed
4 cups miniature marshmallows
6 cups crisp rice cereal
28 chocolate sandwich cookies
1-1/2 cups chocolate frosting
1 package (11 ounces) candy corn
28 malted milk balls
White candy coating, optional

Steps:

  • In a large saucepan, melt butter. Add marshmallows; stir over low heat until melted. Stir in cereal. Cool for 10 minutes. With buttered hands, form cereal mixture into 1-1/2-in. balls. Twist apart sandwich cookies. If desired, remove filling and save for another use. Spread frosting over each cookie half., Place 28 cookie halves under cereal balls to form the base for each turkey. Place 5 pieces of candy corn in a fan pattern on remaining cookie halves; press each half onto a cereal ball to form the tail. Attach remaining candy corn with frosting to form turkey wings. For head, attach malted milk ball with frosting; cut white tip off additional candy and attach to head with frosting to form beak. If desired, place melted white candy coating in a piping bag fitted with a #1 round tip; pipe onto head to form eyes. Allow to stand until frosting has set. Store, tightly covered at room temperature.

1 1/4 lbs lean ground turkey
1 1/2 tablespoons olive oil
1 small yellow onion, chopped
1/2 cup dried sweetened cranberries
1 teaspoon chicken bouillon
1 teaspoon rosemary
1/2 teaspoon ground sage
1 teaspoon thyme
2 teaspoons parsley
5 medium russet potatoes, peeled and coarsely chopped (approximately 2 lb.)
3/4 cup 2% low-fat milk
2 ounces cream cheese

Steps:

  • Place potatoes in saucepan with enough water to cover. Bring to a boil, and cook for twenty minutes.
  • Preheat oven to 375°F.
  • Heat olive oil in large skillet over medium heat.
  • Add onions and turkey to skillet, breaking up turkey with spoon.
  • As turkey begins to release juices, add cranberries and bullion. Break up bullion with spoon if necessary.
  • Cook turkey until browned and cooked through.
  • Add parsley, sage, rosemary, and thyme to skillet, stir, and remove from heat.
  • Drain potatoes.
  • Add milk and cream cheese to pan, mashing and mixing thoroughly.
  • Divide turkey mixture evenly between two pie pans, or place all in large casserole dish.
  • Divide potatoes evenly over pans or place over dish, using a fork to distribute evenly over pans/dish.
  • Bake for fifteen minutes and serve hot.

1 medium onion, diced
1 yellow bell pepper, diced
1 green bell pepper, diced
1 package fresh sliced mushrooms
1 tablespoon oil
1 can French style green beans, drained
3 cups cooked turkey, chopped
1 cup mayonnaise
2 cups grated Cheddar
1 small can sliced water chestnuts, drained
1 teaspoon poultry seasoning
1 cup sour cream
1 package preformed pie crust
1 egg, beaten

Steps:

  • Preheat oven to 350 degrees F.
  • Prepare the rice according to package instructions and set aside. Saute onions, peppers, and mushrooms in oil and set aside.
  • Combine all ingredients except 1 cup of cheese and pie crust, into large bowl and mix well. Pour into greased 9-inch glass pie plate. Top with remaining 1 cup cheese and set aside.
  • Roll out pie crust, cut into 1/2-inch wide strips and cover dish in lattice design, then brush dough lightly with egg.
  • Place in 350 degree F oven for 30 minutes, when top is golden brown, remove, let cool, and enjoy.
  • This dish is an excellent way to use holiday turkey leftovers, plus it freezes well.

Steps:

  • Cut the Crisco into the flour and salt. Don't overwork. This should be very rough consistency.
  • Beat the egg; add vinegar and water.
  • Sprinkle the water mixture over the flour.
  • Toss with a fork until coarsley mixed.
  • Divide dough in half for two pie crusts. Shape into balls and chill 15 minutes.
  • Roll on floured surface.
  • Balls of dough may be combined for a large cobbler crust.
