Easy gluten-free cornbread. Savory, not sweet. Includes dairy-free option.

Number Of Ingredients 9

1 1/2 cups coarse/medium ground gluten-free cornmeal (see note) ((8 ounces; 226 grams))
1/2 cup gluten-free flour, see note ((2 1/2 ounces; 70 grams))
2 tablespoons granulated sugar ((1 ounce; 28 grams))
1 tablespoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup milk, see note for dairy-free option ((6 ounces; 170 grams))
2 large eggs ((about 4 ounces out of shell; 114 grams))
1/3 cup vegetable oil ((2 1/3 ounces; 66 grams))

Steps:

  • Heat oven. Preheat oven to 425 degrees F. (If using an 8-inch cast iron skillet, place into oven before preheating. Heat skillet for at least 10 minutes.)
  • Prepare the batter. Whisk together gluten-free cornmeal, flour, sugar, baking powder, salt, and baking soda in a large bowl. Add the milk, eggs, and oil. Whisk until combined. Batter should look almost smooth. A few lumps remaining is normal.
  • Bake. If using a skillet, remove skillet from oven and place on a heatproof surface. Grease with nonstick cooking spray or brush generously with vegetable oil.If using an 8-inch round cake pan, grease the pan lightly with nonstick cooking spray. Pour batter into pan. Bake until set, about 15 minutes. The cornbread should spring back when touched.
  • Cool and serve. Allow cornbread to cool for about five minutes before cutting into pieces.
  • Store. Wrap cornbread and store on the counter overnight. Or cool thoroughly, wrap tightly, and freeze for up to two months. Allow cornbread to thaw on the counter.

½ cup white sugar
¼ cup gluten-free all-purpose flour
1 tablespoon gluten-free baking powder
1 cup milk
¼ cup butter, melted
1 egg
1 (14.75 ounce) can cream-style corn

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease an 8-inch square pan.
  • Mix cornmeal, sugar, flour, and baking powder together in a bowl.
  • Whisk milk, butter, and egg together in another bowl. Stir into cornmeal mixture just until combined and some lumps remain. Fold in corn. Pour batter into the pan and smooth out the top.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

This is fluffy cornbread, full of corn taste with a tiny bite because of the cornmeal. And gluten-free? With these flours, it's indistinguishable from a gluten-based cornbread. It's just good.

1/4 cup shortening (use a non-hydrogenated shortening), plus more for greasing the pan
140 grams All-Purpose Gluten-Free Flour Mix, recipe follows
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon psyllium husk
3/4 teaspoon salt
2 large eggs
1 cup milk (you can use non-dairy milk, if you want)
1 cup yellow cornmeal
400 grams millet flour
300 grams sweet rice flour
300 grams potato starch

Steps:

  • Prepare to cook. Preheat the oven to 425 degrees F. Grease a 9-by-9-by-2-inch pan.
  • Mix the dry ingredients. Sift the flour into a large bowl. Add the sugar, baking powder, psyllium husk and salt and stir.
  • Cut in the shortening. Cut the shortening into the flour mixture the way you would when making pie dough. You should end up with walnut-size pieces in a sandy flour.
  • Add the wet ingredients. Combine the eggs and milk in a small bowl. Make a well in the center of the flour mixture and pour in the liquid. Stir with a rubber spatula until everything is combined.
  • Finish the batter. Stir in the cornmeal, whisking fast, until it is just combined. Do not overstir.
  • Bake the cornbread. Pour the batter into the prepared pan. Bake until the sides of the cornbread are slightly shrinking from the pan and a toothpick comes out clean, 20 to 25 minutes.
  • Pour all the flours into a large container. (Restaurant supply stores sell large plastic containers that fit this purpose well. You could also use a large glass jar.) Shake and shake and shake harder until all the flours have become one color.

Sometimes warm, freshly baked bread is all you want for breakfast-ideally made from dough that doesn't involve activating yeast or kneading. This gluten- and dairy-free skillet cornbread fits the bill. It isn't cakey, like muffins or banana bread, but is mildly sweet and goes perfectly with a cup of tea. It's perfect for lazy mornings if you have leftover squash to stir into the batter. The scallions in the batter may make you consider serving this with dinner, and they can certainly be left out if you want to serve it with jam.

1/4 cup nut milk
1 tablespoon chia seeds, ground
1 cup corn grits
1/2 cup gluten-free oat flour
1/4 cup millet flour
2 tablespoons brown rice flour
1 tablespoon arrowroot powder
2 teaspoons aluminum-free baking powder
1 cup mashed winter squash
1/4 cup extra-virgin olive oil, plus more to oil skillet
1/2 teaspoon sea salt
1/4 cup maple syrup
2 scallions, thinly sliced

Steps:

  • Preheat the oven to 350 degrees F. Generously oil a 9-inch skillet; set aside. Whisk together the nut milk and chia seeds in a medium bowl to combine; set aside.
  • Grind the corn grits in an electric spice grinder until they're the texture of cornmeal, and add them to another medium bowl. Sift in the oat flour, millet flour, brown rice flour, arrowroot and baking powder, and stir well.
  • Add the squash, oil, salt, maple syrup, 1/4 cup water and scallions to the chia mixture, and whisk to combine. Add the chia mixture to the flour mixture, and stir until just combined. Scrape the dough into the prepared skillet, and gently flatten to fill the pan.
  • Bake the cornbread until a toothpick comes out clean, 28 to 30 minutes. Let cool for 15 minutes. Run a knife around the edge; place a plate over the skillet, and invert. Slide the cornbread back into the pan with the bottom facing up (to show off the beautiful crust). Serve warm.

1/2 pound gluten-free rye bread, such as Canyon Bakehouse, cubed
1/2 pound store-bought or homemade gluten-free cornbread, cubed
1 pound sweet Italian sausage meat, casings discarded
1/2 cup (1 stick) unsalted butter, plus additional for greasing
1 large onion, chopped
2 stalks celery, chopped
8 ounces fresh mushrooms, sliced
Salt and pepper
1/2 cup chicken broth
1/2 cup heavy cream
2 large eggs, at room temperature
1/2 cup golden raisins
1/4 cup fresh parsley, chopped
1 1/2 teaspoons caraway seeds

Steps:

  • Preheat the oven to 325 degrees F and spread the rye and cornbread cubes out on 2 rimmed baking sheets. Bake until golden and toasted, 20 to 25 minutes. Let cool. Lower the oven to 375 degrees F.
  • Cook the sausage meat in a skillet over medium-high heat, breaking up with a spoon, until browned, 5 minutes. Set aside.
  • Grease a 9- by 13-inch baking dish with butter or gluten-free cooking spray. In a large skillet, melt the butter over medium heat. Add the onion, celery and mushrooms; season with salt and pepper, and cook until softened and the liquid has evaporated, about 10 minutes. Transfer to a large bowl. Add the toasted rye cubes, toasted cornbread cubes, cooked sausage and about 3/4 teaspoon salt and 1/4 teaspoon pepper.
  • In a medium bowl, whisk together the broth, cream, eggs, raisins, parsley and caraway seeds; pour over the bread mixture and toss to evenly coat. Transfer to the prepared baking dish and bake, uncovered, until golden, about 30 minutes. Serve immediately.

CORNBREAD STICKS

We like spicy so I added some Louisiana hot sauce to the mixture or you can add in a finely chopped jalapeno pepper in place of the bell peppers or use both, or about 1/4 teaspoon cayenne pepper, or to taste. Next time you make chili, serve these on the side, they are so good! If you don't have any cornbread molds, you can just drop in some batter (about 3-4 tablespoons) into a regular size muffin tins, the cornbread will come out in a round shape... adjust the baking time. Yield is only estimated depending on size of the molds. These are best served warm.

Steps:

  • Set oven to 400°F.
  • Coat cast-iron stick molds liberally with oil.
  • In a bowl, mix together cornmeal, flour, dark sugar, baking powder, salt and baking soda.
  • In another bowl whisk together buttermilk, melted butter and egg; add into the dry ingredients.
  • Add in the chopped bell pepper and shredded cheddar cheese; mix to combine (add in more buttermilk if needed to create a pourable consistency).
  • Place the oiled cast-iron molds in the oven for about 5 minutes (make certain to have the cornmeal batter ready to pour into the hot molds after 5 minutes).
  • Carefully remove the hot molds from oven and evenly divide/fill the batter between each mold.
  • Bake for about 20 minutes, or until the corn sticks test done (it might take more or less time depending on the size of molds).
  • Using a sharp knife, gently lift out the sticks from the molds.

1/4 cup sorghum flour
1/4 cup rice flour
1/2 cup tapioca flour
1 cup cornmeal
3 1/2 teaspoons baking powder
3/4 teaspoon salt
3 tablespoons sugar
1 teaspoon xanthan gum
1/4 cup butter
2 large eggs
1 cup buttermilk
3 tablespoons butter (for skillet)

Steps:

  • Preheat oven to 425. Add cast iron skillet to oven while it heats up and you mix the ingredients.
  • Mix dry ingredients together in a bowl.
  • Add butter in pats and blend with dry ingredients as if you were making pie crust. (I use my hands to cut it in.).
  • Add the eggs and buttermilk.
  • Mix with fork just until blended.
  • Take skillet out of the hot oven and add 3 TBSP of butter and let it melt.
  • Pour batter over the hot butter.
  • Return to oven and bake for 20 minutes.
  • Once done, flip onto a plate for serving (upside down).
  • (Note: the top won't brown very well but you will never know this once you flip it.).
