GLUTEN-FREE BANANA OATMEAL MUFFINS
These gluten-free banana oatmeal muffins are delicious from the oven or the freezer!

- Preheat the oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with parchment baking cups.
- Combine flour, oats, sugar, baking powder, baking soda, and salt in a bowl.
- Beat egg lightly in a large bowl. Stir in milk, applesauce, and vanilla extract. Add mashed banana and combine thoroughly. Stir flour mixture into the banana mixture until just combined. Divide batter evenly between the prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 18 to 20 minutes.

- Preheat oven to 350℉. Line a muffin tins with cupcake liners, or spray well with cooking spray.
- In a small bowl, combine hot water and oatmeal. Set aside.
- In the bowl of a stand mixer with the paddle attachment on, mix the coconut oil, mashed banana, brown sugar, white sugar, egg, and vanilla extract, beating for 2 minutes.
- In a separate bowl, combine the gluten-free flour blend, cinnamon, baking powder, baking soda, salt, and flax meal.
- Add the dry ingredients to the wet ingredients, mixing just until combined.
- Add the soaked oatmeal and chocolate chunks to the batter, mixing well and scraping down the bowl as necessary.
- Scoop the dough into the muffin tins, filling ¾ of the way full.
- Bake for 25-28 minutes, until golden brown and a toothpick inserted comes out clean.

Steps:
- Combine brown rice flour, tapioca starch, potato starch, cocoa, baking powder, baking soda, guar gum and salt in a large bowl.
- Grind oats, quinoa, and flax and chia in a coffee grinder until very fine. Add to dry ingredients and mix well.
- In another bowl beat banana's until smooth, add brown sugar, egg and melted butter and beat well.
- Add banana mixture to dry ingredients. Mix well. Stir in extra's (chocolate chip, nuts etc).
- Let dough sit for 30 minutes.
- Fill greased muffin cups almost full.
- Bake at 375 for 20 to 25 minutes, or until top springs bake when lightly touched or toothpick inserted in centre comes out clean. Let sit in pan for five minutes then remove to rack to finish cooling.

GLUTEN-FREE BANANA OAT BREAD
My son has celiac disease. I have slowly experimented with his favorite recipes to create gluten-free versions that are also yummy enough for the non-celiacs to enjoy. This banana bread is extremely close to the original. Everyone gobbles it up, despite the pecans, which I add for a little extra nutrition.

Steps:
- Preheat oven to 350 degrees.
- Spray or prep 1-2 loaf pans. (My family prefers thin bread, so I make this into 2 loaves).
- In small bowl, combine oats & applesauce, set aside.
- In large bowl, mix butter & sugar together. Add eggs, bananas, vanilla, cinnamon & nutmeg.
- In small bowl, mix dry ingredients (flour, baking powder, xanthan gum).
- Add oats & applesauce to wet ingredients, combine well.
- Add dry ingredients to wet ingredients, stir just until combined.
- Fold in pecans, if using.
- Pour batter into prepared pan(s).
- Bake 35-45 minutes (less for 2 small loaves, more for one large loaf).
